MICROWAVE CHICKEN CACCIATORE

This is one of the few main dishes I cook completely in the microwave. It's easy, delicious and simple to adapt to ingredients on hand. If I don't have spaghetti sauce, I substitute a can of diced tomatoes, a can of tomato sauce, along with some basil, oregano, and a bay leaf. You can also cut the chicken into strips or chunks, depending on your preference.

4 boneless skinless chicken breasts
1/2 medium green pepper, thinly sliced
1/2 medium red pepper, thinly sliced
1/2 medium onion, thinly sliced
2 garlic cloves, minced
8 ounces fresh mushrooms, sliced
2 stalks celery, sliced
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon water
4 ounces of sliced black olives, drained
2 cups prepared spaghetti sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons tomato paste

Steps:

  • Combine celery, peppers, onion, garlic and mushrooms with 1 T water and 1 T butter in a 2 quart microwave-safe dish.
  • Cook uncovered on high for 3-4 minutes, stirring after every minute.
  • Drain.
  • Stir in spaghetti sauce, olives, tomato paste, salt and pepper.
  • Slice chicken breasts in half lengthwise.
  • Slide chicken into casserole dish with other ingredients, turning to coat with sauce.
  • Arrange with meatiest portions out towards the outside of the dish.
  • Cover and cook 10-12 minutes on high, or until chicken is cooked through.
  • Serve over hot pasta or rice.

My Version: Carino's Spicy Romano Chicken image

My favorite restaurant in the world is Johnny Carino's (a.k.a Carino's Italian Grill) and my favorite recipe is their Spicy Romano Chicken. Well I've tried other recipes that I thought were close but I recently tried a recipe by Guy Fieri and after a few changes I think I've come up with a pretty close alternative. I will make one change when I make it again : I will skip slicing the chicken and just put one breast on each plate. I hope this recipe is enjoyed. I must add that I give Guy all the praise for this recipe :-)

4 skinless chicken breasts
1 cup blackening seasoning
2 tablespoons extra virgin olive oil
2 cups mushrooms, chopped
3 tablespoons minced fresh garlic cloves
1 cup roughly chopped marinated sun-dried tomato (or fresh)
1/4 cup white wine or 1/4 cup chicken stock
1 quart heavy cream (or half n half)
3/4 cup parmesan cheese
1/2 cup grated romano cheese
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
12 ounces marinated artichoke hearts
1 lb cooked bow tie pasta
1/2 cup scallion

Steps:

  • Preheat the oven to 350 degrees F.
  • Dredge the chicken breasts in blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until juices run clear. Slice in strips and set aside.
  • In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add mushrooms,garlic and cook until mushrooms have released most of their liquid. Then add the sun-dried tomatoes and the chicken slices. Pour the white wine or chicken stock in the pan and scrape pan. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
  • When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, 1/2 cup romano cheese, salt and pepper. Before serving open your artichoke hearts and slice in half. Drain well and put in pan, let cook til warm. I used the ready to serve artichoke hearts.
  • Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

3 tablespoons salt-free seasoned dried breadcrumbs
3 tablespoons grated pecorino romano cheese
4 thin sliced boneless chicken cutlets
1 tablespoon olive oil, divided
1 (14 1/2 ounce) can Italian-style diced tomatoes, liquid reserved
3 garlic cloves, peeled and crushed
2 tablespoons sliced pitted kalamata olives
1 teaspoon balsamic vinegar
1/8 teaspoon red pepper flakes
3 tablespoons coarsely chopped fresh basil leaves

Steps:

  • Combine breadcrumbs and cheese in shallow dish or pie plate. Dredge the chicken pieces in the crumb mixture to coat on both sides.
  • Heat 1 1/2 tsp oil in 12 inch nonstick skillet over medium heat. Add half of chicken and cook until golden and cooked through, 2-3 minutes on each side. Transfer to plate; cover with foil to keep warm. Repeat.
  • Add drained tomatoes, garlic, olives, red pepper and 1/3 cup of tomato liquid. Cook 2 minutes, stirring occasionally until slightly thickened.
  • Remove from heat and discard garlic. Stir in basil. Spoon sauce over cutlets and serve.

So all my cooking was restricted to an electric frying pan and a microwave oven. After experimenting for a few weeks I came up with this little number which is super easy and full of flavour

2 chicken thighs, with bones (you could use another part of the chicken if you wanted)
1/2 cup long grain rice
400 g diced tomatoes
1/2 large zucchini (diced)
1/2 large carrot (diced)
4 mushrooms (diced)
1/2 diced onion (white, red or spring)
8 olives (with pips)
1 cup water
1 teaspoon instant chicken bouillon granules
1/2 cup basil leaves
salt and pepper

Steps:

  • Put rice, water & tomatoes in a 2 or 3L microwave safe dish and mix.
  • On top of that add the zucchini, carrot, mushrooms, onion, olives and basil leaves.
  • Sit the chicken on top and sprinkle the stock powder on the vegetables and the chicken and season with salt and pepper.
  • Cover the dish with a lid (microwave safe) or cling wrap and cook for 40 minutes on 90% power. I use an 1100watt oven but I wouldn't worry about altering the time if yours is less powerful.

1 whole roasting chicken

30 ml olive oil

Steps:

  • Take whole chicken and make diagonal slits in breast and thighs.
  • Rub chicken with olive oil followed by salt and pepper ensuring slits are also prepared with spice.
  • Place in a glass casserole dish suitable for microwave.
  • I use a 900 Watt combination microwave oven, program grill and microwave for 30 - 40 minutes depending on size of chicken on full power.
  • Turn chicken every 10 minutes to ensure even grilling.

1/2 cup butter, melted

Steps:

  • Heat oven to 375 degrees F.
  • Combine breadcrumbs, cheeses, black pepper, salt, parsley and paprika in shallow bowl; set aside.
  • Combine butter and garlic in a 9-inch pie pan.
  • Dip 1 chicken breast at a time into butter mixture; place into breadcrumb mixture, turning to coat evenly.
  • Place chicken breasts into ungreased 13x9-inch glass baking dish.
  • Drizzle with any remaining butter mixture.
  • Bake for 25-35 minutes or until chicken is lightly browned and juices run clear when pierced with a fork. (I turn mine once during the baking).
