Easy, tasty meatloaf using the microwave to keep it moist. No hard crust or burnt sauce. It is a staple in our home.

Steps:
- Combine first 8 ingredients in a bowl and mix with hands until well mixed.
- Pat into a 9 x 5 loaf pan.
- Cook in microwave on full power 6 minutes.
- While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces).

- In small bowl, combine tomato sauce, brown sugar, and mustard. Set aside.
- In large mixing bowl, combine eggs, onion, cracker crumbs, ground beef, salt, and pepper.
- Add 1/2 cup of tomato sauce mixture and stir thoroughly.
- Place meat mixture in glass ring mold, or 2-quart microwave-proof round casserole.
- Pour remaining sauce over top of meat. Cooked, uncovered, on high, 12 to 14 minutes.
- Let stand, covered, 5 to 10 minutes before serving.

- 1. Combine soup mix, stuffing, water, and ketchup in a large bowl and allow to sit for 10-15 minutes. Then mix in all remaining ingredients. Shape into a loaf or a ring in a 9" glass pie plate. Cover with waxed paper.
- 2. Cook in microwave for about 20 -24 minutes. If no turntable, turn meatloaf a quarter turn every 5 minutes. (This time is for a 900-1000 watt oven. If yours is a 1200 watt oven, less time is required.)
- 3. Allow to stand about 10-12 minutes before slicing.
MICROWAVE MUSHROOM MEATLOAF
Spending time in an extended-stay hotel with just a microwave and stovetop for cooking, along with minimal cookware, led me to be a bit creative at mealtime. I was craving meatloaf and came up with this recipe from foods I had on hand leftover from earlier meals. I was pleased with how it turned out considering my limited options. And it wasn't a reheated frozen dinner either!

- Mix ground beef, egg, mushrooms, onion, whole-wheat crackers, and salt together in a bowl. Mold into a ring on a microwave-safe dish. Spread ketchup on top. Cover with parchment paper.
- Cook in the microwave until beef is no longer pink in the center, 5 to 8 minutes. Drain off any fat. Cover and let sit for 5 minutes before serving.

SUPER QUICK EASY & DELICIOUS MICROWAVE MEATLOAF
This is super quick and easy to make and it's not dried out, it's undeniably moist and flavorful. My brother came up with this but I've tweaked it a little bit and haven't made meatloaf in the oven since! I hope you enjoy it.

- In large bowl mix the onion, carrot, egg, milk, ¼ cup ketchup, mustard, bread, salt and pepper, then mix in the ground beef.
- Place into large glass dish and shape. (a large pie plate works good).
- Cover with a paper towel and microwave on high for 15 minutes. (Turn four times while microwaving if you don't have a carousel).
- Remove from microwave, throw away the paper towel and remove most of the grease from the dish.
- Spread meatloaf with additional ketchup and a little barbecue sauce as desired. (I use about 2 tablespoons ketchup and 2 teaspoons barbecue sauce).
- Cover with a new paper towel and microwave on high for 5 minutes.
- Remove from dish and place on serving plate.
- Slice and enjoy!

- In a bowl, lightly beat the egg.
- Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt and pepper.
- Crumble beef over mixture and mix well.
- Shape into an oval loaf.
- Place in a shallow 1-qt microwave-safe dish; cover with waxed paper.
- Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half turn once; drain.

MY MICROWAVE TURKEY MEATLOAF
The original recipe came with my first microwave and was made with ground beef. I made it originally because my Mom was working and I was the oldest and still at home. My Dad loved it and I liked it too when I hadn't really liked meatloaf before. When I got married I made it for my husband and he loved it as well. Then we started eating healthier, so I altered it to ground turkey instead. I've tried to increase this recipe, but for the microwave it doesn't really work. Some people like it made in a convection oven. Keep in mind you have to let the meatloaf stand or it won't be fully cooked.

- Mix crushed saltines, egg. In a separate bowl mix mustard, 1 1/2 teaspoon brown sugar and 1/2 can tomato sauce. Add 1/2 (about 10 small spoons full) of the tomato mixture to the saltine mixture and mix well. Add the ground turkey and mix well. Put in a microwave safe bowl with a glass in the center. Top with 1 teaspoon chopped onion, mix all remaining tomato sauce together with the leftover 1/2 teaspoon brown sugar. This is recipe is an adaptation of one I used for conventional meatloaf. When it's still warm it doesn't hold together as well as it does when it's been chilled. It makes awesome sandwiches!

- Saute the mushrooms, pepper, onion and garlic in the canola oil until all are soft. Set aside to cool slightly.
- Combine tomato sauce, honey, brown sugar and mustard. Set aside.
- In a large bowl, combine the eggs and milk. Add the breadcrumbs, the mixture should look like a thick paste.
- To the paste, add the veggie crumbles, rice, sauteed vegetable mixture, salt, pepper, steak seasoning mix, and half the sauce mixture. Combine well.
- Spread the mixture in a greased, 8 inch square glass baking dish. Pour the remaining sauce mixture on top and spread evenly.
- Microwave the meatloaf on high for 14 minutes, checking after about 10 to compensate for different ovens. The edges should be somewhat brown and firm with most of the sauce on top looking thick and a bit dry. Allow to cool for 5-10 minutes. Enjoy!
