Steps:
- In a bowl, combine the rice, water, soy sauce, sesame oil, and bacon. Stir, then microwave, covered, for about 6-8 minutes until the rice is fully cooked.
- Mix the frozen peas and carrots into the rice.
- In a microwaveable mug, beat the eggs with the salt.
- Microwave the eggs and the rice again for about 1-2 minutes, until the eggs are fully cooked.
- Break up the egg into small bits, then mix it in with the rice.
- Garnish with scallions, then serve!
- Enjoy!

- In a 2-qt. microwave-safe dish, combine the oil, onions, carrot and garlic. Cover and microwave on high for 2-3 minutes or until vegetables are crisp-tender. , Stir in water, rice and bouillon. Cover and cook on high for 9-12 minutes or until rice is tender and liquid is absorbed, stirring once. Stir in peas, soy sauce and ham if desired. Cover and let stand for 5 minutes., Meanwhile, in a small microwave-safe bowl, beat the eggs. Cover and heat on high for 1 to 1-1/2 minutes or until firm. Cut into small pieces; stir into rice mixture. Serve immediately.

MICROWAVE FRIED RICE
FRIED RICE (NOT!) Thats what my kids call this!! I got this recipe from my friend Bev, and it is a quick and easy side dish, that can be padded out with a few more veggies. I would suggest that you dont "muck around" with this too much the first time you make it, as I have tried to be too clever and it hasnt worked out as well!!! having said that, I have to say I usually add garlic and ginger, and I am sure you have a favorite ingredient you would like to add :)
