4 golden delicious apples
4 granny smith apples
1/2 teaspoon cinnamon (optional)
1 pinch nutmeg (optional or to taste)
1/4 cup water or 1/4 cup apple juice
3 -6 tablespoons sugar (or to taste add in more if you prefer sweeter, can use brown sugar if desired)

Steps:

  • Peel, core and slice the apples.
  • Place apples in a large microwave-safe bowl.
  • Add in 1/4 cup water, cinnamon (start with 1/2 teaspoon) and nutmeg, if using; stir to combine.
  • Cover with heavy microwave-safe plastic wrap (leave a little side opened to allow steam to escape).
  • Microwave on HIGH power for 10 minutes.
  • Remove the bowl and stir the apples, then contine to microwave uncovered until apples are very tender (about 5-6 minutes longer).
  • Using a large fork (I use a potato masher for this) coarsley mash apples to desired texture.
  • Add in sugar to taste while the apples are still hot; mix well to combine.
  • Bring to room temperature and then refrigerate for up to two days, or freeze in plastic freezer containers.

4 Gala apples, peeled and cut into 1-inch pieces
1 cup peeled and chopped fresh apricots
½ cup pitted and sliced cherries
2 tablespoons honey
1 tablespoon lemon juice
1 tablespoon butter
1 tablespoon cooking sherry
⅛ teaspoon ground cinnamon
⅛ teaspoon ground grains of paradise

Steps:

  • Combine apples, apricots, cherries, honey, lemon juice, butter, sherry, cinnamon, and grains of paradise in a large microwave-safe bowl. Cover with plastic wrap, making sure there is at least 1 inch clearance above the mixture and leaving 1 corner open to vent.
  • Microwave on high power for 10 minutes. Rotate the bowl a quarter turn halfway through if your microwave does not have a turn table. Uncover and microwave for 3 to 5 minutes if too much liquid was released by the fruit.
  • Mash fruit with a potato masher until desired chunkiness is reached. Serve immediately or cool and store in the refrigerator.

This is really easy and delicious applesauce. I left out the sugar completely and thought it was sweet enough. The recipe says that if you prefer a sweeter applesauce, choose red apples, such as Fuji or Gala, instead of adding more sugar. This recipe comes from the Everyday Food Magazine.

  • In a 2 quart microwave- safe dish with a lid, combine apples, sugar, lemon juice, cinnamon, and a pinch of salt.
  • Cover, and microwave on high until very tender, 10- 15 minutes, stirring halfway through. Mash apples with the back of a spoon.

8 apples, peeled, cored, and cut into chunks
1/3 cup water
1/4 cup sugar
1 teaspoon grated lemon zest (optional)
1 teaspoon vanilla extract (optional)
1/4 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)

Steps:

  • In 2-quart microwave-safe dish, combine apples and water. Cover with lid or vented plastic wrap; microwave on HIGH (100%) 12-14 minutes or until apples are tender. (If microwave does not have carousel, rotate dish every 4 minutes). Stir in sugar and choice of flavorings.
  • Microwave on HIGH 3 minutes or until sugar dissolves. Stir and set aside to cool before serving. If finer texture is desired, mash or puree apple mixture and put through a strainer.

I was trying to use up some fruit that was getting towards the end of its life. Using a recipe in "500 Fat Free Recipes" as a starting point I made one up. I posted the recipe as a private recipe while it chilled so I wouldn't forget how I made it in case it was good! As it turns out, it was excellent. The only change I made was to decrease the amount of candied ginger called for. I used 3 pieces which was a little too intense. If you want a subtle flavor, use just 1 piece of candied ginger.

2 lbs apples
1/4 cup clementine juice (about 2 clementines)
1 tablespoon lemon juice
1/8 cup Splenda sugar substitute
1 -2 tablespoon candied ginger (1-2 pieces)

Steps:

  • Wash, core, and quarter the apples. (I like a variety of apples.)
  • Juice the clementines and the lemon.
  • Put the apples and both juices into a 2 quart microwave safe dish with a lid. Close it and microwave, on high, for 5 minutes.
  • After 5 minutes stir and put back in the microwave for 9 minutes on high.
  • When it is done let it sit for a few minutes without the top on to cool a bit.
  • Place the apples and all their juice into a food processor and whir until it is nice and creamy.
  • Add the splenda and whir a bit more.
  • Chop up the candied ginger and fold it into the apples with a spoon.
  • Put in a different container and chill.

1 cup all-purpose flour
2/3 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup shortening
1/2 cup applesauce
2 eggs
3 tablespoons milk
1/4 cup chopped nuts or 1/4 cup raisins (optional)
1/2 cup graham cracker crumbs

Steps:

  • Put all ingredients in mixing bowl.
  • Blend at low speed, then turn to medium for 2 minutes.
  • Grease a 8x8 glass square cake pan and coat with graham cracker crumbs.
  • Pour in batter.
  • Microwave at 50% power for 6 minutes, rotating 1/4 every 3 minutes.
  • Increase power to High.
  • Microwave 2 to 5 minutes, or until done.
  • The top of the cake will have alittle batter that will seem not to be cooked.
  • Let stand on countertop 5 to 10 minutes.
