MICROWAVE APPLE CRISP
I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside, and delicious all around. It's a wonderful dessert that's quick and easy to make. Best served warm with vanilla ice cream or whipped topping.

- Toss apples with 1/4 cup of brown sugar and 2 tablespoons of flour; place in a greased 8-in. microwave-safe deep-dish pie plate. PAMPERED CHEF STYLE APPLE CRISP (FOR MICROWAVE OR OVEN)
This is one of the recipes that was served at the very first Pampered Chef party I attended, back in 1994. It is a very easy recipe (the hardest part is prepping the apple slices) and can be made in either microwave or the oven. I have made it both ways and prefer the oven version, but it is awfully nice that this can also be tossed into the microwave for a last minute dessert on busy nights. The demonstrator had a handy tip for the apples: After she ran them through the apple peeler/slicer gizmo they sell, she dropped them into a bowl filled with a can of lemon-lime soda (like Sprite) - and then drained them and patted them dry before using in this recipe. This way the apples didn't turn all sludgy brown before she was ready to demonstrate the recipe itself. I am allowing a large amount of prep time for those of you who don't own one of the PC apple gizmos - once your apples are ready, it only takes about 5 minutes to prepare the crisp for baking.

- You will need a 12" round stoneware baking pan for this recipe (such as the Pampered Chef deep dish baker).
- Use enough apple slices to fill the stoneware pan 3/4s full (amount will vary depending upon your apples).
- Finely chop the graham cracker squares and mix with oats,brown sugar,flour, and spices.
- Add melted butter and mix well.
- Spoon this mixture over the apple slices.
- MICROWAVE method: Microwave on high 12-15 minutes or until apple are tender, turning dish after 6 minutes.
- OVEN method: Preheat oven to 350°F and bake 30-35 minutes or until apples are tender.
- Serve with a dollop of whipped cream or ice cream, as desired.
- Cool slightly and serve while still warm.

- 1. Peel apples, core them and then cut into slices. In a bowl, toss the apples with the cinnamon and the sugar. Spritz about a tablespoon or two of water over top, and spritz about two tablespoons of lemon juice from a bottle, and then toss the apples again. Spread the apples evenly in an 8 inch square glass baking dish. A deep dish glass pie plate will also work.
- 2. In a medium bowl, mix together the melted butter, brown sugar, oats, flour, cinnamon and allspice. Sprinkle this topping evenly over the apples. It should be crumbly. If it isn't, add a little more oats and a little more flour until it resembles crumbs. Cook on full power in the microwave for 10 to 12 minutes, until apples can easily be pierced with a knife. Do NOT microwave more than 12 or 13 minutes because the topping will burn and won't be good. The apples will be done perfectly in that amount of time. If you are not using it right away, you can always dish it out onto plates and heat up in the microwave for 15 or 30 seconds just to warm up before serving. This is an amazing recipe.

I've been making all kinds of goods with them...Baked Apples, Apple Pie, Apple Brown Betty...Things I don't DARE tell my Doc about! LOL I was in a hurry yesterday and wanted to make a quick dish...It doesn't get any quicker or easier than this!!!

- Peel, core and slice the apples. Put in water w/ a little lemon juice while you make the crisp.
- Cut the softened butter into the Oatmeal Cookie Mix. (You can add some chopped nuts here, if you like)
- Mix the apples with the spice and you can sprinkle a little brown sugar over them, if you like...I did and thought it was a little sweet.
- Load the apples into an un-greased 8x8 Pyrex baking dish and evenly distribute the cookie mix on top.
- Into the microwave for 9min on high (Mine is 1000w) Check the apples with a wooden skewer and if still too firm, give them an additional minute, at a time...
- Let it cool and it does NOT get any easier!!! LOL
- You can substitute frozen peach slices,mango chunks thawed and drained or other fruits such as berries or pears.
