ORANGE CRANBERRY BREAD



Orange Cranberry Bread image

These moist loaves are packed with the zesty taste of cranberries and orange peel. I suggest serving slices toasted with butter or cream cheese. -Ron Gardner, Grand Haven, Michigan

Number Of Ingredients 14

2-3/4 cups all-purpose flour
2/3 cup sugar
2/3 cup packed brown sugar
3-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, room temperature
1 cup 2% milk
1/2 cup orange juice
3 tablespoons canola oil
2 to 3 teaspoons grated orange zest
2 cups coarsely chopped fresh or frozen cranberries
1 large apple, peeled and chopped

Steps:

  • In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon and nutmeg. Whisk the egg, milk, orange juice, oil and orange zest; stir into dry ingredients just until blended. Fold in the cranberries and apple., Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap cooled loaves in foil and freeze. To use, thaw at room temperature.

This a easy bread machine loaf full of fruit and nuts.It's very good served with whipped honey butter or toasted and spread with cream cheese.Don't let the sweet potatoes keep you from trying this recipe.

1/2 cup sweet potato, cooked & well mashed
1/4 cup buttermilk
3/4 cup water, warmed (90-110 degrees)
2 tablespoons oil
1/2 teaspoon cinnamon
1 teaspoon salt
2 tablespoons honey
1 teaspoon fresh sage, minced
1/4 cup buckwheat flour
3/4 cup whole wheat flour
2 cups bread flour
1 packet yeast
3 tablespoons rolled oats
1/4 cup golden raisin
1/4 cup raisins
1/4 cup cashews, chopped
2 tablespoons sunflower seeds, shelled

Steps:

  • In bowl, mix together all flours, cinnamon, salt, yeast,oats, and sage.
  • Add liquid& dry ingredients to bread machine per your machines instuctions,.
  • Set machine on light whole wheat cycle.
  • At first beep, add both kinds of raisens and nuts.
  • Wait-- enjoy!

1 cup water
2 tablespoons honey
1 teaspoon salt
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons brown sugar
2 cups bread flour
1 cup whole wheat flour
1 1/2 teaspoons orange zest
2 teaspoons active dry yeast

Steps:

  • Place all in bread pan according to directions.
  • Select Light setting and press Start.
  • (Optional bake cycles: sweet bread and delayed timer).

Michigan Blueberries are the juiciest. Add some lemon zest,top with lemon sauce and you have Michigan sunshine with your morning coffee. Recipe passed from friend to friend.

Number Of Ingredients 10

1 1/2 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
6 tablespoon(s) butter, unsalted, softened
1 1/3 cup(s) sugar
2 - eggs
2 teaspoon(s) lemon zest, grated
1/2 cup(s) milk
1 1/2 cup(s) fresh blueberries
3 tablespoon(s) lemon juice, fresh

Steps:

  • Preheat oven to 325. Line with parchment or grease a 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Combine first 3 ingredients in small bowl. Cream butter with 1 Cup sugar in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add lemon zest. Alternately mix in dry ingredients and milk. Fold in blueberries. Spoon batter into prepared loaf pan. Bake until golden brown and toothpick inserted into center comes out clean, about 1 hour 10 minutes.
  • Meanwhile, bring remaining 1/3 cup sugar and lemon juice to boil in small saucepan, stirring until sugar dissolves.
  • Pierce top of hot loaf several times with toothpick. Pour or brush hot lemon sauce over loaf in pan. Cool 30 minutes in pan on rack. Then turn bread out of pan and cool completely on rack.
