MICHIGAN (CHERRY) SALAD

Fresh greens and seasonal fruit, roasted chicken and breaded gorgonzola bites dressed in a homemade raspberry vinaigrette.

1/2 cup fresh raspberries
1/4 cup olive oil
1/4 cup champagne vinegar
1-2 tablespoons honey (to taste)
1 tablespoon Dijon mustard
pinch of salt
3 cups mixed greens or romaine lettuce
1/2 cup toasted pecans
1/2 cup blueberries
1/3 cup dried cherries
1/2 granny smith apple, sliced matchstick
1/2 cup raspberries
2 chicken breasts, cooked and sliced ((rotisserie works well too!))
1 cup grape tomatoes, halved (optional)
1/4 cup gorgonzola cheese

Steps:

  • Use an immersion blender (or regular) and blend vinaigrette ingredients until smooth.
  • Blend salad ingredients, top with dressing, crumbled gorgonzola and combine. OPTIONAL: fried gorgonzola cheese. Cut the gorgonzola into cubes. Dip into a beaten egg, then in bread crumbs (Pankow used), pressing the breading into place. Heat 1-2 tablespoons of olive oil in the bottom of a skillet. When the oil is hot, add the cheese cubes browning on both sides (but do not melt). Top the salad with the warm, fried gorgonzola.

3 ounces spring mix salad greens (about 5 cups)
1 large apple, chopped
1/2 cup coarsely chopped pecans, toasted
1/2 cup dried cherries
1/4 cup crumbled Gorgonzola cheese
1/4 cup fresh raspberries
1/4 cup red wine vinegar
3 tablespoons cider vinegar
3 tablespoons cherry preserves
1 tablespoon sugar
2 tablespoons olive oil

Steps:

  • In a large bowl, combine the first 6 ingredients., Place raspberries, vinegars, preserves and sugar in a blender. While processing, gradually add oil in a steady stream. Drizzle over salad; toss to coat.

4 cups torn red leaf lettuce
1 package (5 ounces) spring mix salad greens
1 cup fresh raspberries
1 cup sliced fresh mushrooms
1/2 cup julienned red onion
1/4 cup crumbled feta cheese
1/4 cup pecan halves, toasted
2 tablespoons 100% raspberry fruit spread, melted
2 tablespoons raspberry vinegar
2 tablespoons canola oil
1/8 teaspoon salt
Dash pepper

Steps:

  • In a large salad bowl, combine the first seven ingredients. In a small bowl, whisk the fruit spread, vinegar, oil, salt and pepper. Pour over salad and toss gently to coat.

Posted per a request. Traverse City Salad (featuring dried cherries)is served by many Michigan restaurants - each with their own variation. This one is my version for one very healthy salad. Note: The Traverse City area, in northern lower Michigan is known as a major cherry growing area.

2 cups mixed greens
1 slice red onion, chopped or separated into rings (or to taste)
3 tablespoons dried cherries (or to taste)
3 tablespoons pecans or 3 tablespoons walnuts, roughly chopped
6 grape tomatoes or 1 small tomatoes, quartered
2 tablespoons blue cheese, crumbled (or to taste)
4 ounces turkey (optional) or 4 ounces chargrilled chicken, cut into strips (optional)
raspberry vinaigrette dressing (bottled)

Steps:

  • Place the mixed greens in a bowl or dish.
  • Sprinkle/place remaining ingredients over the greens.

1 cup dried cranberries
1 cup walnut pieces
One 22-ounce can mandarin oranges, drained and chilled
1 1/2 cups grape tomatoes, halved
1 1/2 cups crumbled feta cheese
1 cup fresh raspberries
1/2 cup apple cider vinegar
1/2 cup aged balsamic vinegar
2 teaspoons sugar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil

Steps:

  • For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  • For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  • Toss the salad with the vinaigrette before serving.

1/2 cupsRaspberry Blush Vinegar
3 TablespoonsFresh Lemon Juice, Strained To Catch Seeds And Pulp
3 teaspoonsHoney, (I use 4)

Fresh Ground Black Pepper To Taste
1 cup Olive Oil

Steps:

  • For the salad: Start by adding the arugula (or the chopped romaine) to a large bowl. Top with sliced apple, chicken, toasted walnuts, dried cherries and blue cheese. Toss, plate and drizzle with desired amount of the vinaigrette. For the vinaigrette: Add all the vinaigrette ingredients to a medium-sized jar that has a tight-fitting lid. Shake, taste, and adjust if needed. Store any remaining dressing in the fridge; just remember to take it out about 20 minutes before using it again to thin out (it solidifies in the refrigerator).
