1 pound mixed field greens
1 cup dried cranberries
1 cup walnut pieces
One 22-ounce can mandarin oranges, drained and chilled
1 1/2 cups grape tomatoes, halved
1 1/2 cups crumbled feta cheese
1 cup fresh raspberries
1/2 cup apple cider vinegar
1/2 cup aged balsamic vinegar
2 teaspoons sugar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil

Steps:

  • For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  • For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  • Toss the salad with the vinaigrette before serving.

1/4 cup olive oil
1/4 cup white balsamic vinegar
1 tablespoon Raspberry Syrup, recipe follows
1/2 teaspoon kosher salt
Freshly ground black pepper
1 bunch Tuscan kale, center ribs removed and leaves chopped into ribbons
1 small head radicchio, chopped into ribbons
1 pint raspberries
3 ounces ricotta salata, cubed
1/4 cup chopped pecans
1 cup sugar
2 tablespoons fresh lemon juice
2 pints raspberries

Steps:

  • Combine the oil, vinegar, Raspberry Syrup, salt and pepper in a jar. Seal with a lid and shake until emulsified. Place 2 tablespoons of the dressing in a large bowl. Add the kale and gently massage until it is evenly coated with the dressing.
  • Add the radicchio, raspberries, ricotta and pecans and toss with the remaining dressing. Season with salt and pepper and transfer to a serving bowl.
  • Place the sugar and 2 cups water in a medium saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved, 3 to 4 minutes. Add the lemon juice and raspberries and simmer, stirring occasionally, until the raspberries have broken down, about 10 minutes. Pour the mixture through a strainer and return to the pot. Simmer over medium heat until the syrup has thickened, about 10 minutes more. Let cool completely, then pour into an airtight container and store in the refrigerator for up 2 weeks.

1/2 cupsRaspberry Blush Vinegar
3 TablespoonsFresh Lemon Juice, Strained To Catch Seeds And Pulp
3 teaspoonsHoney, (I use 4)
2 teaspoonsKosher Salt
Fresh Ground Black Pepper To Taste
1 cup Olive Oil

Steps:

  • For the salad: Start by adding the arugula (or the chopped romaine) to a large bowl. Top with sliced apple, chicken, toasted walnuts, dried cherries and blue cheese. Toss, plate and drizzle with desired amount of the vinaigrette. For the vinaigrette: Add all the vinaigrette ingredients to a medium-sized jar that has a tight-fitting lid. Shake, taste, and adjust if needed. Store any remaining dressing in the fridge; just remember to take it out about 20 minutes before using it again to thin out (it solidifies in the refrigerator).

We love to tailgate and watch the Bowl games, and are always trying to come up with clever things to do to our biggest rivals up north, the Michigan Wolverines. The cherries and maple in this wonderful salad inspired the name. Enjoy!

½ cup mayonnaise
⅓ cup pure maple syrup
¼ cup white wine vinegar
1 teaspoon white sugar
½ cup vegetable oil
salt and pepper to taste
3 heads butter lettuce - rinsed, and torn
½ cup dried cherries
2 Granny Smith apples, cored and cut into matchsticks
4 ounces goat cheese, crumbled
3 ounces chopped candied pecans

Steps:

  • In the container of a blender, combine the mayonnaise, maple syrup, vinegar, and sugar. Cover and blend on low speed. Gradually pour in the vegetable oil while mixing until fully incorporated. Taste and season accordingly with salt and pepper. Set aside.
  • In a large serving bowl, combine the lettuce, cherries, apples, goat cheese and candied pecans. Toss with just enough of the dressing to coat, then serve with the remaining dressing on the side.
