A delicious, healthy, easy-to-make dip that is wonderful with baked tortilla chips.

1 (15 ounce) can black beans, rinsed and drained
1 ½ tablespoons water, or more if needed
1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced
1 teaspoon ground cumin, or more to taste
1 teaspoon chili powder, or more to taste
1 teaspoon onion powder, or more to taste
½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
  • Chill for at least 1 hour before serving.

Two 16-ounce cans black beans, rinsed and drained
1/4 cup vegetable broth
1/2 red onion, finely chopped
1/2 large tomato, finely chopped
1 jalapeno, stemmed, seeded and minced (or leave the seeds in for more spice, if desired)
1/2 bunch fresh cilantro, leaves picked and finely chopped
Kosher salt and freshly ground black pepper
Fresh tortilla chips, for serving

Steps:

  • Put the beans into a food processor and pulse until coarsely ground. While pulsing, slowly add the vegetable broth until the beans are creamy but still have some small chunks.
  • Transfer the bean mixture to a nonstick skillet over medium-low heat. Cook, stirring, until the beans are warm, about 3 minutes. Stir in the onion, tomato, jalapeno and cilantro, then remove from the heat; season with salt and pepper.
  • Serve warm or at room temperature with tortilla chips for dipping.

2 small onions, chopped (1/2 cup)
2 cloves garlic, finely chopped
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
1 cup plain low-fat yogurt
1 teaspoon ground cumin
1/2 teaspoon salt
Tortilla chips or crackers, if desired

Steps:

  • Place chilies, onions, garlic and beans in blender or food processor. Cover and blend on medium-high speed until almost smooth.
  • Spoon mixture into small bowl. Stir in yogurt, cumin and salt. Cover and refrigerate until chilled, or heat in 1 1/2-quart saucepan over medium heat, stirring frequently, until hot. Serve with tortilla chips.
