- For Pico: Combine all vegetables. Add lime juice, olive oil, salt, pepper, and cayenne, and stir. For best taste, allow to chill for an hour.
- For burgers: Mix all ingredients together except for salt and pepper, and form into six medium patties. Sprinkle freshly ground pepper and salt on both sides, to taste. Grill on medium high for about ten minutes, flipping once. Juice should run clear. For a fresh new take, serve burger bun-less with the pico. Or, serve on bun with monteray jack cheese and pico. Great with grilled pineapple and rice.
- NOTE: make sure the jalepenos are completely seeded, and that the white inner ribs have been removed.
MEXICAN TURKEY BURGERS
Mexican Turkey Burgers are a flavorful alternative to ground beef burgers.

- In a bowl combine ground turkey, taco seasoning, salt, pepper, and cumin. Mix until well blended.
- Heat a large skillet on medium heat. Add enough olive oil to coat the pan.
- Form 4 patties with the seasoned meat.
- Place burgers in the heated pan. They will take 5 to 6 minutes on each side. If you would like to add cheese, add the cheese a minute or two before the burger is fully cooked.
- In a small bowl combine the chipotle sauce and mayonnaise. Mix until well blended. Let rest five minutes before using.
- If you are using hamburger buns toast them by placing under a broiler and browning the buns.
- Place some Chipotle mayonnaise onto the bun, add the turkey burger, top with pico de gallo.
- Serve with steamed veggies or even re-fried beans.

- In a large bowl, combine 1/4 cup salsa, cheese, paprika, oregano, cumin, sugar, garlic powder, thyme, salt and cayenne. Crumble turkey over mixture and mix well. Shape into four burgers., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., In a small bowl, combine sour cream and remaining salsa. Place burgers on buns; top with endive, tomato and sour cream mixture.
