MEXICAN TATER TOT® CASSEROLE

Made my own creation after reviewing numerous recipes for Tater Tot® casserole. My fiance loves it! Garnish with sour cream and lettuce.

2 teaspoons vegetable oil, or as needed
1 (15.25 ounce) can whole kernel corn, drained
1 (4.5 ounce) can sliced mushrooms, drained
1 cup diced green bell pepper
½ cup mild salsa
½ large tomato, diced
3 tablespoons mild nacho cheese sauce
1 pound ground beef
¼ cup mild taco sauce
1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. Mix ground beef and taco sauce together in a separate bowl; add to the corn mixture in the dish and stir together. Layer potato puffs on top of casserole. Top with shredded Mexican cheese blend.
  • Bake in the preheated oven until beef is no longer pink, about 25 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil casserole until top is golden brown, about 5 minutes.

MEXICAN STREET CORN LOADED TOTS

This is a version of tot-chos (tater tot nachos!) inspired by elote, the Mexican street corn that's covered in mayo, chili powder, Cotija and lime, that hits all the best flavor notes!

One 1 3/4-pound bag frozen tater tots
Kosher salt and freshly ground black pepper
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon chili powder, plus more for garnish
1/2 teaspoon kosher salt, plus more for garnish
Zest of 1 lime
2 ears yellow corn, kernels removed from the cob (or 1 1/2 cups frozen kernels)
8 ounces shredded mozzarella
6 ounces crumbled queso fresco
1/2 cup fresh cilantro, roughly chopped
1/2 bunch green onions, sliced
Pickled Red Onions, recipe follows
Lime wedges, for garnish
1 cup apple cider vinegar
2 tablespoons sugar
1 tablespoon kosher salt
1 large red onion, sliced thinly

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tots on a rimmed baking sheet lined with parchment paper, then sprinkle lightly with salt and pepper. Bake until golden and crispy, 25 to 30 minutes.
  • For the chili lime cream: Meanwhile, in a small bowl, combine the sour cream, mayonnaise, chili powder, salt and lime zest. Set aside.
  • For the loaded tots: Remove the tots from the oven, then add the corn and bake for an additional 6 minutes. Remove again and sprinkle all of the mozzarella and half of the queso fresco to cover. Bake until melty, 3 to 5 minutes.
  • Sprinkle with remaining queso fresco and add big dollops of the cream. Garnish with the cilantro, green onions, Pickled Red Onions, a dash of chili powder and salt. Squeeze fresh lime juice on top and enjoy!
  • Heat the vinegar, sugar, salt and 1 cup water in a small saucepan, stirring until the sugar and salt dissolve. Pour over the onions in a small jar. Let cool completely, then refrigerate.

1 pkg. (32 oz.) ORE-IDA TATER TOTS
4 ears corn on the cob, husks and silk removed
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
1/4 cup KRAFT Real Mayo
1 Tbsp. fresh lime juice
1/4 tsp. ground red pepper (cayenne)
1 Tbsp. fresh cilantro

Steps:

  • Heat grill to medium heat.
  • Place TATER TOTS on large sheet of heavy-duty foil sprayed with cooking spray; fold to make packet.
  • Grill packet and corn 10 to 15 min. or until corn is tender, turning corn occasionally. (Do not turn packet.) Remove corn from grill. Cook packet additional 15 min.
  • Cut kernels off corn cobs; place in medium bowl. Reserve 2 Tbsp. cheese. Add remaining cheese to corn along with the mayo, lime juice and red pepper; mix lightly.
  • Cut slits in foil packet to release steam before carefully opening packet. Spoon corn mixture over TATER TOTS; top with cilantro and reserved cheese.

1 can (11 ounces) Mexicorn, drained

2 teaspoons ground cumin
1/2 teaspoon dried oregano

Steps:

  • In a large skillet, combine the first seven ingredients. Stir in meat mixture. Bring to a boil., Transfer to a greased 13x9-in. baking dish. Top with Tater Tots. Cover and bake at 350° for 30 minutes. Sprinkle with cheese and green onions. Bake, uncovered, 10-15 minutes longer or until bubbly and cheese is melted.

Just what the grandkids ordered. Tater tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted.

1 pound ground beef
1 small onion, diced
1 clove garlic, minced
1 (1 ounce) packet taco seasoning mix
1 (16 ounce) bag frozen Mexican-style corn
1 (12 ounce) can black beans, rinsed and drained
1 (12 ounce) bag shredded Mexican cheese blend
1 (16 ounce) package frozen tater tots
1 (12 fluid ounce) can enchilada sauce

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
  • Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
  • Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the tater tots; stir to combine.
  • Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tot layer.

SEASONED TATER TOTS (MEXI-FRIES)

I've found a few recipes online for Mexi-Fries, but few made them exactly like our local Taco Time restaurant. So I tried this recipe, and it's better than most other recipes I found online. It makes a quick and easy side dish to go with tacos or other simple Mexican dishes, or whenever you want to spruce up plain Tater Tots.

32-oz bag(s) frozen tater tots (any brand of frozen shredded potato puffs, 'tater bites, etc.)
2 Tbsp olive oil
2 tsp garlic powder
2 tsp chili powder (i like mine spicy hot, so i usually double the chile powder)
2 tsp dried oregano
2 tsp ground cumin
2 tsp salt (or to taste)
2 tsp black pepper (or to taste)
nonstick cooking spray

Steps:

  • 1. Preheat oven to 425°F. Lightly coat large baking sheet with nonstick cooking spray; set aside.
  • 2. Empty bag of Tater Tots into large mixing bowl. Drizzle with olive oil.
  • 3. In a small bowl, thoroughly combine garlic powder, chili powder, oregano, cumin, salt and pepper. Pour the spice mix over the Tater Tots, and toss gently to coat with seasonings.
  • 4. Arrange coated Tater Tots on baking sheet in a single layer. Bake 15 to 20 minutes or until lightly browned.

1 lb. 85/15 ground beef
1 onion, diced ( about ¼ cup)
1 packet taco seasoning mix (1 oz.)
1 can green chiles (4 oz.)
1 can black beans ( 15.5 oz.) rinsed and drained
1 bag frozen corn (14.4 oz.)
1 can red enchilada sauce (10 oz.)
3 cups shredded cheddar & Monterey jack cheese (off the block), divided
4 cups frozen tater tots
Cilantro, optional garnish
Sour cream, optional

Steps:

  • Preheat oven to 375 degrees. Spray a 9 by 13 inch baking dish (I used this one) with non-stick cooking spray.
  • Add the ground beef and the onion to a 12-inch skillet, brown meat until thoroughly cooked. Drain off excess fat and return to skillet. Add the seasoning packet, green chiles, black beans, frozen corn and the enchilada sauce to the meat and onion, stir until combined. Over medium heat cook another 8 to 10 minutes. Add 2 cups of shredded cheese to the meat mixture and stir until blended. Pour into the baking dish and spread evenly. Place the tater tots evenly over top. Bake for 35 to 40 minutes.
  • Remove from oven, add the remaining cup of cheese over the top. Bake another 5 minutes or until cheese is melted. Garnish with cilantro and top with sour cream!
