1 (250 g) package brick light cream cheese spread, softened
1 tablespoon taco seasoning mix
1 cup salsa
1 cup drained canned black beans, rinsed
1/2 cup chopped green onion
1 cup shredded light double 2% cheddar cheese (made with 2% milk)
1 cup shredded lettuce
2 tablespoons sliced ripe olives
baked corn tortilla chips
chopped fresh cilantro

Steps:

  • With your mixer on medium speed, beat the cream cheese spread until creamy.
  • Add the taco seasoning mix to the cream cheese.
  • Beat until well blended.
  • Spread onto bottom of a quiche dish or a 9 inch flat bottomed bowl or pie plate.
  • Add the remaining ingredients in layers over the cream cheese mixture.
  • Cover and refrigerate for a minimum of 1 hour before serving.
  • Serve with tortilla chips.
  • Garnish with chopped fresh cilantro.

2 lbs crumbled ground beef, cooked and drained
1 (16 ounce) jar taco sauce
1 (16 ounce) package sour cream
1 (8 ounce) package taco seasoning mix
1 (16 ounce) package shredded cheddar cheese
1 cup shredded lettuce
1 tomatoes, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • In a skillet, mix the beef and taco sauce.
  • and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix.
  • Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, cheddar cheese and lettuce.
  • Top with tomato, green onions and black olives and server with tortilla chips.

1 cup refried beans
8 ounces cream cheese, softened
1 cup sour cream
2 teaspoons cilantro
1 (1 1/4 ounce) packet taco seasoning, powder
2 1/4 ounces chopped black olives, drained
1 cup salsa
1 cup shredded lettuce
1 cup shredded cheddar cheese
2 teaspoons cilantro

Steps:

  • In an 8" or 9" pie plate, spread refried beans to cover bottom.
  • In a small mixing bowl, beat together cream cheese, sour cream, 2 tsp cilantro, taco seasoning, and chopped black olives. Pour and spread this mixture evenly over refried beans.
  • Next, pour on the salsa. Sprinkle with lettuce, then cheese, then 2tsp cilantro.
  • Serve with tortilla chips.

This is a recipe that I came up with when trying to find a use for all of my taco leftovers from the night before. It is a very versatile recipe, and can be eaten as a dip, or on top of your leftover shredded lettuce. You can omit the spanish rice if making a dip, because it with the chips and the beans it makes for a pretty starchy snack. But on the lettuce, the rice is perfect! Yum!

1 cup refried beans
1 1/2 cups Spanish rice (if handy)
3/4 cup ground beef (can be beef, chicken, etc.)
1 cup salsa
1 1/2 cups grated cheddar cheese
4 cups shredded lettuce or 4 cups tortilla chips
sliced green onion
sour cream
black olives
guacamole

Steps:

  • Spread the bottom of a sprayed 8x8 casserole with the beans.
  • Layer the spanish rice (if using) and taco meat on top of the beans.
  • Pour the salsa over the rice and taco meat.
  • Sprikle the cheddar cheese on top.
  • Bake at 375 for 35 minutes or until heated through.
  • Serve over shredded lettuce as a salad or with tortilla chips as a dip!

This recipe has been a family favorite for several years. This dish is requested for every family get together. Easy to make and so delicious! Hope you enjoy it as much as our family and friends have!

1 pound(s) ground beef
1 can(s) refried beans
1 large jar taco sauce (not salsa)
1 cup(s) sour cream
1 package(s) taco seasoning mix
1 package(s) mexican blend shredded cheese
1 large bag of tortilla scoops

Steps:

  • Cook 1 lb of hamburger. Drain fat off. Take a large mixing bowl and mix drained hamburger, 1 can of refried beans, 1 pkg taco seasoning mix, 1/2 of taco sauce(large jar). Spread mixture in bottom of a 9x13 pan.
  • In a small mixing bowl, mix in remaining taco sauce(1/2 jar) and 1 cup of sour cream. You will spread this mixture over top the meat mixture.
  • You will take the large package (2 cups) of mexican blend shredded cheese and spread over top of sour cream mixture.
  • Place the 9x13 pan into a pre-heated 350 degree oven. Bake for 30 mins. or until cheese is bubbly. Remove from oven and let stand for approx. 10 mins.
  • Serve with your favorite type of tortilla chips. Scoops work the best.
