1 pound ground turkey
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
1 medium onion, chopped
1 ½ cups water
1 (8 ounce) jar taco sauce
1 (1 ounce) package taco seasoning mix
1 (15 ounce) can corn, drained
1 (15 ounce) can baby lima beans, drained

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Add peppers and onion; cook and stir until soft, about 5 minutes. Pour in water, taco sauce, and taco seasoning. Stir together. Reduce heat to a simmer and cook about 10 minutes.
  • Add corn and lima beans to pan and stir. Let simmer until lima beans are tender and heated through, about 5 minutes more.

1 lb ground beef
1/2 cup onion, chopped
2 teaspoons chili powder
1/4 teaspoon garlic powder
1 dash ground red pepper (may substitute black pepper if desired)
14 ounces Mexican-style corn, drained
16 ounces tomato sauce
2 cups corn chips, crushed
1 cup cheddar cheese, grated

Steps:

  • Brown ground beef with onion and drain. Stir in remaining ingredients
  • except chips and cheese and pour into greased casserole dish.
  • Bake at 350 for 20 minutes then top with chips and cheese.
  • Bake 5 - 10 minutes longer.

1 tablespoon vegetable oil
1 cup corn (fresh or frozen)
4 zucchini
1 large tomatoes
1 teaspoon oregano
1/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder

Steps:

  • In large fry pan heat oil.
  • Add corn and cook until it browns a little. The carmelizing of the corn makes a difference in the taste.
  • Quarter zucchini lengthwise and chop into small pieces.
  • Chop tomato in small pieces.
  • Once corn is nicely browned, add zucchini, tomato and spices.
  • Cover with lid, reduce heat, and cook just until zucchini begins to become tender.
