1 pound lean ground beef
½ medium onion, chopped
3 cloves garlic, chopped
salt and ground black pepper to taste
1 cup corn, black bean, and red pepper salsa (such as Desert Pepper Trading Company®)
1 teaspoon ground cumin
2 medium zucchini, cut into 1/4-inch chunks
2 Roma tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium heat. Add ground beef, onion, garlic, salt, and pepper. Cook and stir until beef is browned and crumbly, about 10 minutes.
  • Add salsa and cumin to the skillet; reduce heat to low. Cover and simmer until flavors blend, about 5 minutes. Add zucchini and tomatoes. Cover and cook until zucchini is tender but not too soft, about 10 minutes more. Top with Cheddar cheese.

2 teaspoons canola oil
1 3/4 cups chopped onions
4 cloves garlic, finely chopped
1 lb ground beef round
2 tablespoons chili powder
1 teaspoon ground cumin
3/4 teaspoon kosher (coarse) salt
1 3/4 cups hot cooked long-grain white rice
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (14.5 oz) petite diced tomatoes with jalapeños, undrained
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
Chopped fresh cilantro, if desired

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Cook onions and garlic in oil 3 minutes, stirring occasionally, until tender. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Drain.
  • Stir in chili powder, cumin and salt. Add cooked rice, beans and tomatoes; cook over medium heat 2 minutes, stirring occasionally, until thoroughly heated.
  • Sprinkle with cheese. Cover; remove from heat. Let stand 1 minute or until cheese is melted. Garnish with cilantro.

When my children were small they always would run up and ask me what I was cooking and generally I would respond with "whatever comes out of the pot", that always made them giggle. This was always their favorite to "come out of the pot" and as teenagers they still ask me for this dish. I hope you enjoy and can make some fun memories with this dish.

1 lb lean ground beef
1 (15 1/4 ounce) can whole kernel corn (drained)
1 (15 ounce) can ranch style beans
1 (10 ounce) can Rotel Tomatoes
1 1/2 cups instant rice (uncooked)
1 cup water
1 cup shredded cheddar cheese
1 (1 1/4 ounce) package taco seasoning mix

Steps:

  • In skillet brown ground beef with taco seasoning and drain fat.
  • Pour instant rice in the skillet and stir to mix with the meat.
  • Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
  • Remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
  • Serve with a green salad.

1 can(s) whole kernel corn
1 can(s) rotel tomatoes
1 1/2 c instant rice (uncooked)
1 c water
1 c cheddar cheese, shredded
1 pkg taco seasoning mix

Steps:

  • 1. In skillet brown ground beef with taco seasoning and drain fat.
  • 2. Pour instant rice in the skillet and stir to mix with the meat.
  • 3. Add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
