- *NOTE: Pure chili powder is just that. Ground up roasted dry chilis blended to a fine powder. It is not the store bought chili powder mix that includes other herbs and spices. The spiciness of this seasoning mix depends on the chilis you select.
- Combine all ingredients in mini-blender, coffee mill or food processor. Process until well blended.
- Store in clean, dry airtight container. Shelf life is about 3 months. Shake well before using. Keep from heat, light and moisture.

ALL PURPOSE MEXICAN CHILI SEASONING MIX
I got the original recipe from budget101 but have tweeked it a bit. I have discovered that this seasoning can take the place of many I would have otherwise bought. It is nice to have one thing that does the job of many. I have included several ideas for using this but would love to hear from anyone who comes up with something...

- 1. Mix all ingredients and blend well. Store in an air tight container.
- 2. For tacos: Brown 1 pound of hamburger and drain. Add 2 T. of seasoning, 2 T. of ketchup, and 1/2 cup water. Simmer stirring occasionally until liquid is reduced. Use for nachos, tacos, taco salad, or on hot dogs for chili dogs with cheese and onions.
- 3. For beans: Sort, rinse, and soak 1 cup of pinto beans. Add to pot with 1 rounded tablespoon of seasoning mix, 3 slices cooked crumbled bacon, and 1 T. of fat or oil. Cover with water. Cook until beans are tender. To make baked beans, add ketchup, brown sugar, and onion to taste. Bake as desired. These beans are so good and the only way I prepare them now!
- 4. For dip: Add 3 T. mix to 1 cup each of sour cream and mayonaise. If desired add 1 or more of the following: 1/2 cup shredded cheddar cheese, 1/4 c. crumbled cooked bacon, 1 chopped green onion. Refrigerate to blend flavors.
- 5. For chili: Make mix as for tacos but increase mix to 1 1/2 tablespoons. After making meat, add 1 can of kidney or pinto beans, drained and about 2 cups of low or no sodium tomatoes (I use a pint of home canned). Simmer for about 20 minutes. Tastes even better for lunch the next day!
- 6. For sloppy joes: Make mix as for tacos but do not cook yet. Add 2-3 T. brown sugar, 2 tsp. mustard, 1 tsp ground horseradish, 2 tsp. worcesterchire sauce and 1/4 cup ketchup. Simmer for about 10 minutes. Serve on buns with pickles, cheese, chopped onions, and mustard. This is good on mashed potatoes too.
- 7. I have used this to season cooked chicken, beef, and pork for tacos and burritos. I have used it like a rub on grilled meat. It is really good!
MEXICAN SEASONING MIX

- For MEXICAN SEASONING MIX:.
- Combine ingredients (add 1/2 teaspoon SALT-SPICE) and store in covered container at room temperature. The spice mixture keeps for one year. Makes 5 1/2 tablespoons.
- For SALT-SPICE:.
- Combine all ingredients, stirring well. Store the Salt-Spice in a pepper grinder and use it to season foods. Makes about 1/2 cup.

SWEET MEXICAN SPICE SEASONING MIX
A multi-purpose sweet spice mix redolent of flavors in Mexican cooking. I use this spice mix for, but not limited to flavoring coffee before brewing, in a mug of warm rice milk, all sorts of desserts such as brownies, cakes, cookies; baked squash, etc. Gives whatever you're cooking a dash of the exotic.

MEXICAN TACO/ENCHILADA SEASONING MIX WITH COCOA OPTION
Spice up your favorite taco meat filling, enchiladas, Mexican layered dips etc with this yummy seasoning mix. The cocoa option uses unsweetened cocoa powder and is excellent in red sauce (vs green sauce) enchilada dishes. Feel free to adjust amounts to your taste. Note: "couple dashes" did not take so I made them 1/8 teaspoon.

MEXICAN ESSENTIALS: SPICY SEASONING MIX
I have several Mexican spice mixes posted, but this one is a bit different. Most taco spices are heavy on things like chili powder, and tomato spices, this one is not. It is designed to enhance the flavors of the beef, not cover them up. Once you make the beef mixture, you can use it in tacos, burritos, or whatever you fancy. The images are of what I call, my Taco Melts (the recipe is at the bottom). So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- You will need a skillet, large enough to hold all of the ingredients.
- Gather your ingredients (mise en place).
- THE SPICE MIX
- Add all of the ingredients to a non-reactive container until ready to use.
- THE BEEF
- Add the ground beef in a skillet over medium heat, sprinkle with 2 tablespoons of the spice mix over the beef and stir to combine. Then, add the beef stock, or water, bring up to a simmer, and allow it to cook down until the sauce thickens, about 12 - 15 minutes.
- PLATE/PRESENT
- You could make Tacos, Burritos, Enchiladas, Gorditas, Quesadillas... go for it. Enjoy.
- I am making what I call Taco Melts: 1 taco shell 1 tablespoon sour cream, spread on the bottom 1 tablespoon salsa, your choice 3 tablespoons meat mixture 2 tablespoons cheddar cheese, freshly grated Place into an oven preheated to 350f (175c) for a minute or so, until the cheese is nice and melty.
