Crispy Poblano Chiles Stuffed with Black Bean, Pork, Cheese Yellow Rice, and

1 tablespoon fermented black beans, rinsed and minced
1 tablespoon garlic, minced
2 chopped jalapenos
2 chopped serranos
1 pound ground pork
1/4 cup cilantro, washed, dried, picked, and chopped
1 cup grated Mexican cheese, such as Manchego or Monterey Jack
4 large poblanos, blackened, peeled, seeds removed, slit up one side, and ready to stuff
Salt and black pepper
Corn oil, to cook
2 cups cooked long grain rice with a pinch of turmeric
Corn Tempura batter, recipe follows
Bandera Sauce Red, recipe follows
Bandera Sauce Green, recipe follows
Cilantro Crema, recipe follows
Cilantro sprigs, for garnish
1/2 corn meal
1 cup rice flour
1 bottle ice cold sparkling water
4 plum tomatoes, blackened on dry skillet and peeled
2 cloves garlic, toasted in dry skillet
2 chipotle peppers, toasted whole in dry skillet

Black pepper
1 small onion, sliced
3 cloves garlic
3 green jalapenos, roasted, de-seeded, de-stemmed
1 cup chicken stock
Corn oil, to cook
Salt and black pepper
1 cup sour cream
1/4 cup chopped cilantro
1 lime, juiced
Salt
Pepper
Cilantro, for garnish

Steps:

  • Preheat a fryer to 375 degrees F.
  • In a small saute pan coated lightly with oil, saute the black beans and garlic until soft, add the jalapenos, serranos, and saute 2 minutes, add the pork and cook about 8 to 10 minutes on low heat or until cooked through. Set aside and let cool.
  • Add the chopped cilantro and cheese. Stuff each chile full. Dip each one in the tempura batter and fry until golden brown, about 4 to 5 minutes. Season lightly with salt and pepper.
  • Plating: On a large plate, ladle each half with the red and green sauces, yin-yang-like, if possible. Place a small mound of rice in the middle of the plate. Top with a poblano chile, drizzle with cilantro crema, and garnish with a cilantro sprig.
  • In a large bowl, mix the cornmeal, and rice, and whisk in the soda until a pancake batter consistency is achieved.
  • Transfer all ingredients to a blender and puree until smooth. Season with salt and pepper.
  • In a saucepan, coated lightly with oil, add the onions and garlic and sweat until soft. Add the jalapenos, bell pepper, cinnamon, season, and stock. Reduce by 50 percent then transfer to a blender. Puree until smooth and check for seasoning.
  • Mix all ingredients together and refrigerate until needed.

Mexican Ground Beef and Cheese Baked Rice image

Don't leave out the green olives it's what makes this dish, the more olives the better it will be LOL! I have even added in a can of drained black beans to this. Make certain to sprinkle LOTS of cheese on top! This rice dish is DELICIOUS! You will need a very large skillet for this. I use my own taco seasoning mix (#76616) to make this recipe.

1/4 cup olive oil
1 large onion, chopped
2 tablespoons chopped fresh garlic
1 small green bell pepper, chopped
1/2 lb lean ground beef
1/4-1/3 cup grated parmesan cheese (or to taste)
1 (1 1/4 ounce) package taco seasoning mix (or use my Kittencal's Taco Seasoning Mix)
1/2 teaspoon dried chili pepper flakes (can use more)
seasoning salt
black pepper (or cayenne pepper)
1 (10 ounce) can sliced mushrooms, drained
1/2 cup large pimento-stuffed green olives, sliced (or to taste)
2 cups uncooked converted white rice (I use Uncle Ben's converted white rice for this)
4 cups chicken broth (use about 1/4 cup less for firmer rice)
3 -4 cups grated monterey jack cheese or 3 -4 cups cheddar cheese

Steps:

  • Set oven to 350 degrees.
  • Heat oil in a very large oven-proof skillet with tight fitting lid or a Dutch oven with lid over medium heat.
  • Add in onions and green peppers with dryed chili pepper flakes; saute for about 3 minutes.
  • Add in garlic; cook 2 minutes.
  • Add in ground beef with taco seasoning mix; cook, stirring with a wooden spoon until browned.
  • Season beef mixture with seasoning salt and black pepper (or cayenne pepper) then add in Parmesan cheese; mix to combine.
  • Add in rice, sliced olives and mushrooms; cook 2 minutes, stirring.
  • Add in broth; bring to a simmer and cook for 2-3 minutes.
  • Transfer the mixture to a baking dish (large enough to hold the mixture).
  • Cover with a tight-fitting lid and bake for about 30-35 minutes or until rice is desired tenderness.
  • Uncover and sprinkle with grated cheddar cheese cover and return to oven to bake for about 5-10 minutes until cheese is melted.

A casserole that's fairly mild, but sneaks up on you. I modified a recipe here that had too much fat/salt for us. A personal bias, I hate throwing out the end of packages of food and the directions for this dish reflect that. Also, I like lots of salt, DH lots of pepper, so I don't cook with them. Preparation time includes cooking the rice. If you have 2-3C of cooked rice, the time will be cut in half!

1/4 cup brown rice
3/4 cup broken jasmine rice (white rice would work)
1 1/2 cups water
1/2 onion, chopped (I used a sweet onion)
1/4 teaspoon olive oil
1 (4 ounce) can chopped chilies
1/4 teaspoon taco seasoning or 1/4 teaspoon chili powder
2 cups fat-free cottage cheese
1/4 teaspoon dry buttermilk or 1/4 teaspoon lemon juice
4 slices monterey jack pepper cheese
1 -2 cup breadcrumbs
cooking spray

Steps:

  • Cook rices in 1 1/4C water. When done, turn off heat and fluff with a fork. Yield will be about 2 3/4C cooked rice.
  • Heat 1/4C water in a fry pan. Cook the onions in this until they are transluscent. Drain extra water (if any) into a small bowl. Stir olive oil into rice.
  • Open chilis, but not quite all the way. Push down on the lid to squeeze the liquid from the can into the small bowl with the water above. Set aside.
  • In another bowl, beat 1C of the cottage cheese until the consistency of sour cream. Stir in the buttermilk powder or lemon juice. If you had a lot of liquid, you may need to add more cottage cheese to get the correct consistency. Add up to 1/4C more cheese, if necessary.
  • Mix the rice, unbeaten cottage cheese, onions, taco seasoning, and drained chilis together.
  • Spray a 9 x 9 pan with cooking spray. Put about 1/2 the rice mixture on the bottom in an even layer. Add a layer of the beaten cheese. Take 2 slices of the pepper cheese, cut them in 1/2 and place them in the four quadrants of the pan (The idea is to get the cheese into the middle of the food.). Repeat this process, starting with the rice mixture, ending with the pepper jack, forming a 2nd layer.
  • Put the bread crumbs in the cottage cheese container to pick up whatever food remains, then scoop it out and add them to the liquids in the bowl. Mix throughly. This should be crumbly, not wet. Sprinkle the moistened bread crumbs on top of the 2nd layer of pepper jack cheese until the top of the casserole is completely covered.
  • Bake 375 for 25 minutes. Turn on broiler and brown on top for the last 5 minutes, or less, as required by your oven.
