1 ½ cups refried beans
1 ¾ cups guacamole
1 ½ cups sour cream
1 (8 ounce) package shredded Cheddar cheese
2 tomatoes, diced

Steps:

  • Heat refried beans in a microwave-safe bowl in a microwave oven until hot, stirring frequently, about 3 minutes. Spread beans onto the bottom of a serving platter; refrigerate until the beans are cooled completely, about 10 minutes.
  • Spread guacamole in a layer atop the beans. Spread sour cream atop the guacamole. Sprinkle cheese over the sour cream; top with tomatoes.
  • Cover platter with plastic wrap and refrigerate until cold, about 30 minutes.

1 pound ground beef
1 medium onion, chopped, divided
1 can (15 ounces) tomato sauce
2 teaspoons sugar
1 teaspoon chili powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 can (16 ounces) refried beans
2 medium tomatoes, seeded and chopped
1 small green pepper, finely chopped
2 cups sour cream
3 cups shredded Mexican cheese blend
Optional: Chopped green onions and chopped tomatoes

Steps:

  • In a large skillet, cook beef and half of the onion over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, sugar, chili powder, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 20 minutes., Spread refried beans into a 13x9-in. dish; top with beef mixture, tomatoes, green pepper and remaining onion. Layer with sour cream and cheese. If desired, top with chopped green onions and chopped tomatoes. Serve with chips.

This is a spectacular layered dip to serve out of a glass trifle dish or casserole. Goes together in minutes, and can be made ahead. It's great served either hot or at room temperature with warm tortilla chips (we like it with Tortilla Scoops) and an ice cold beer or margarita. Optional: Add strips of grilled carne asada or pollo asada and layer in a dish for a killer nachos supreme! Tip: I use recipe #117797 for the seasoning.

1 (15 ounce) can spicy refried beans
1 cup sour cream
2/3 cup mayonnaise
1 (1 ounce) package lawry's taco seasoning mix (or Mexican Seasoning Mix, to taste)
2 (4 ounce) cans diced green chilies (or salsa)
4 somewhat firm avocados, diced small
2 tablespoons fresh lemon or 2 tablespoons lime juice
1 teaspoon salt
1/4 teaspoon garlic powder
2 cups cheddar cheese, shredded
2 cups green onions, chopped
2 cups tomatoes, chopped
6 ounces chopped black olives
3 tablespoons chopped fresh cilantro
tortilla chips, warmed (such as Scoops)

Steps:

  • In a 13 x 9-inch glass serving dish, spread the refried beans.
  • Mix together the sour cream, mayonnaise and seasoning mix. Spread this on top of the beans.
  • Put on a layer of the chopped green chiles (both cans). Note: You may substitute 8 ounces of chunky salsa for the chopped green chiles.
  • Mix together the diced avocados, lemon juice, salt and garlic powder. Spread this on top of the green chiles.
  • Mix together the shredded cheese, green onions, chopped tomatoes and chopped olives. Sprinkle this on top. Garnish with chopped fresh cilantro.

2 teaspoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed
1 tablespoon minced chipotle pepper in adobo
4 tablespoons lime juice
1/4 teaspoon ground cumin
1 tablespoon water
1/2 teaspoon salt
2 cups corn kernels (10-ounce box frozen corn)
1/4 cup chopped cilantro leaves
2 ripe avocados
4 medium tomatoes, seeded and diced (about 2 cups)
1/4 cup thinly sliced scallion
1 tablespoon finely diced jalapeno pepper, optional
3/4 cup shredded extra-sharp Cheddar

Steps:

  • Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
  • Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
  • Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
  • In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
  • Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

While many incarnations exist, I have tailored my recipe to meet my dietary needs (food allergies/migraines). This dip uses lower fat and natural ingredients and is vegetarian-friendly, too. Feel free to modify to suit your tastes. That's what cooking (or in this case layering) is all about!

1 (16 ounce) jar all-natural salsa (I prefer Frog Ranch Chipotle)
32 ounces all-natural sour cream (I like Daisy)
12 ounces all-natural guacamole (I like Calavo)
3 cups lettuce, shredded
2 beefsteak tomatoes, coarsely chopped
2 cups finely shredded cheddar cheese
8 ounces black olives, sliced
6 ounces green pimento stuffed olives, sliced
2 -4 green onions, coarsely chopped

Steps:

  • In large mixing bowl, combine refried beans and salsa. Consistency should be that of cake frosting--spreadable but not thick. Adjust amount of salsa accordingly.
  • Spread bean and salsa mixture onto serving platter. (I use the back of a metal serving spoon.).
  • Layer remaining ingredients.
  • Serve with Baked Tostitos Scoops Tortilla Chips.
  • NOTES: Also great as a meal. Even my green-veggie-phobic children devour this dish! This recipe is moderately spicy. Change the heat of the salsa to adjust. You could also top with jalapenos or other hot peppers to add more heat. I sometimes use different greens (prepackaged salad mixes) instead of iceberg lettuce and use different cheeses (pepperjack kicks it up a few notches!).

8 ounces sour cream (lowfat or fat free is fine)
2 1/2-3 cups salsa (how hot depends on you)
3 cups diced lettuce
2 diced tomatoes
1 1/2 cups grated sharp cheddar cheese (or a reduced fat cheese if you wish, use more if you love cheese)
3/4 cup diced green onion
3/4 cup diced green pepper (small pieces)
8 pitted black olives, sliced thinly
hot banana peppers or jalapeno, slices (if desired)

Steps:

  • Using an electric mixer, beat the sour cream and cream cheese until smooth and creamy.
  • Spread mixture evenly on an oval platter or"medium" pizza pan size plate.
  • Cover evenly with salsa, a good thick layer.
  • The pan size will determine how much you need.
  • Sprinkle lettuce evenly all over.
  • Top evenly with diced tomatoes and then sprinkle with cheese.

1 pkg old el paso taco seasoning
1 c guacamole
1 c sour cream
1 jar(s) tostitos chunky salsa; medium
1 c mexican shredded 4 cheese blend
4 green onions sliced
1 can(s) sliced ripe olives
1/2 head lettuce shredded (optional)

Steps:

  • 1. Place the re-fried beans and taco seasoning into a bowl and stir until combined. Using a 9" x 13" glass baking dish, spread the mixture evenly over the bottom of the dish to create the base.
  • 2. Layer all of the other ingredients evenly one at a time:order does not matter, but do finish off with the cheese, onion and olives on top. Place in the refrigerator over night so the flavors can blend together.
  • 3. Notes: For a cold salad, place everything over a bed of lettuce in a round dish so that it can be scooped. For a warm dip omit the lettuce and place the layered dip onto a 250 degree oven right from the frig for about 10 minutes just enough to warn it...not melt it.
  • 4. Tostitos Scoops work fantastic with this dip.

1 pkg taco seasoning
2 green onions, minced fine

  • 1. First layer: Combine the two cans of bean dip (I use one can regular and one can jalapeno)
  • 2. Second layer: Guacamole dip

2 (8 1/4 ounce) cans refried beans
1 avocado, chopped
1 cup sour cream
1 1/2 cups salsa
8 ounces monterey jack cheese, shredded
1/2 cup mayonnaise
8 ounces cheddar cheese, shredded
1 scallion, chopped, bulb removed (about 4 shoots)
1 (2 1/4 ounce) can black olives, slices and drained

Steps:

  • In a medium pyrex or other oven-proof bowl, layer the ingredients beginning with the beans and ending with the olives.
  • Bake at 350 degrees for 30 minutes.
  • Serve with tortilla chips.

A jazzed-up version of a standard Mexican layer dip. This one includes pablano pepper, jalapeno pepper and chorizo, adding great layers of flavor!

1 Tbsp olive oil
1/2 c chopped sweet onion
1 pablano pepper, seeds and veins removed, chopped
1 jalapeno pepper, seeds and veins removed, chopped
1 clove garlic, minced
8 oz fresh mexican chorizo, casing removed
8 oz cream cheese, softened
1/3 c refried beans
1/4 c picante sauce
1 c four cheese mexican blend cheese, shredded
2 scallions, green portion only, chopped

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Heat olive oil in a large skillet over medium heat. Add onion, pablano pepper, jalapeno pepper and garlic, and cook until they begin to soften, approximately 5 minutes. Add chorizo and continue cooking until chorizo is cooked through, approximately 5 minutes. Drain well, set aside.
  • 3. In a 9-inch pie plate, evenly spread out the cream cheese. Top with the refried beans, spreading out to within 1/4-inch of the edge of the cream cheese layer. Top evenly with the picante sauce, reserved chorizo mixture, and the Mexican cheese blend.
  • 4. Bake in preheated oven for 15 - 20 minutes until heated through and bubbly around the edges. Top with scallions. Serve with tortilla chips and enjoy!
