1 small zucchini, sliced
1 cup frozen loose-packed cut-leaf spinach
1 cup sliced cremini mushroom
1/4 teaspoon salt
1 cup fat-free ricotta cheese
4 tablespoons grated parmesan cheese
1/4 teaspoon dried oregano
1/8 teaspoon red pepper flakes
1 cup roasted pepper pasta sauce
3 no-boil lasagna noodles, halved crosswise

Steps:

  • Preheat oven to 375°F Spray 2 (5 inch) square baking dishes or 2 (1.5 x 5.75 x 8 inch) foil pans with nonstick spray.
  • Mix zucchini, spinach, and mushrooms on microwavable plate. Cover and microwave on high until vegetables are crisp-tender, 3-4 minutes, stirring once after 2 minutes. Drain; stir in 1/8 tsp of salt.
  • Mix ricotta, 3 tbsp parmesan, oregano, red pepper flakes, and remaining 1/8 tsp salt in bowl. In each baking dish, layer, in order, 2 tbsp sauce, 1 half noodle, half of vegetables, 1 half noodle, half of ricotta mixture, 2 tbsp sauce, 1 half noodle, 1/4 cup sauce, and 1/2 tbsp parmesan. Cover with foil and bake 30 minutes. Uncover and bake until bubbling, 10-15 minutes.

1 1/2 lb lean ground beef
1 (1 oz) pkg taco seasoning mix
1/2 to 1 tsp seasoned salt
1 cup diced tomatoes, fresh or canned
2 (8 oz) cans tomato sauce
1 (4 oz) can diced green chiles
1 cup ricotta cheese
2 eggs, beaten
10 corn tortillas
2 1/2 cups (10 oz) shredded Jack cheese

Steps:

  • 1) Cook ground beef in large skillet over med heat until browned and cooked through, about 8 minutes. Drain off fat. 2) Add taco seasoning mix, seasoned salt, tomatoes, tomato sauce and chiles. 3) Mix well and bring to boil. Reduce heat and simmer, uncovered, 10 minutes. 4) Combine ricotta cheese and eggs in small bowl. 5) Spread 1/2 meat mixture in 13X9 inch baking dish. Place 5 tortillas over meat mixture. 6) spread 1/2 ricotta cheese mixture over tortillas and sprinkle with 1/2 Jack cheese. Repeat layers 7) Bake uncovered at 350 degrees until cheese is melted and lightly browned, 20 to 30 minutes. 8) Let stand 10 minutes before cutting into squares for serving.

2lbs extra lean ground turkey
1 can fat free refried beans
1 can chopped green chilies (4 oz)
1 envelope taco sauce
1 jar salsa (16 oz)
1 can diced tomatoes (14 oz)
8 oz tomato sauce
1 container non fat cottage cheese (16 oz)
2 eggs
1 tsp salt (divided)
1/2 tsp pepper
15 uncooked lasagna noodles
3 cups shredded mexican style lite shredded cheese

Steps:

  • In large skillet brown turkey until no longer pink. Add in refried beans, green chilies, taco seasoning, 1/2 tsp salt, jar of salsa and diced tomatoes. Turn off heat and set aside. Mix 2 eggs into cottage cheese and add 1/2 tsp salt and 1/2 tsp pepper. In a 9x13 baking pan, spray with evoo oil. Add in tomato sauce and coat bottom. Now layer in 5 noodles (4 lengthwise, and almost one whole horizontal , to cover entire bottom. Add on top 1/3 of meat mixture, followed by 1/3 cottage cheese mixture and 1/3 shredded cheese. Do two more layers starting with noodles, cottage cheese, and shredded cheese. Spray tin foil and cover pan to put in fridge overnight. Remove from fridge 1 hr before cooking. Heat oven to 400 and place covered dish in oven for 45 minutes. Remove foil and continue cooking until hot and bubbly (approx 15-20 minutes). Let stand for 10 minutes before cutting
