This is one of my favorite Mexican shrimp meals to make. Everyone gobbles it up. Best served with rice, about 3 to 4 cups cooked. I like to sprinkle mine with Cojita cheese and cilantro also.

2 tablespoons butter
½ red bell pepper, diced
½ green bell pepper, diced
½ sweet onion, chopped
2 cloves garlic, diced, or more to taste
1 cup chicken broth
1 (7 ounce) can chopped green chilies
1 (8 ounce) package cream cheese, softened
3 tablespoons Mexican crema
2 teaspoons ground dried chile de arbol peppers, or to taste
½ teaspoon ground cumin
½ teaspoon dried Mexican oregano
1 ½ pounds uncooked medium shrimp, peeled and deveined

Steps:

  • Melt butter in a skillet over medium-high heat. Place bell peppers, onion, and garlic in the butter and saute until tender and onion is translucent, 5 to 7 minutes. Remove and set aside. Save pan and juices and keep warm.
  • Combine broth and green chiles in a separate pan and bring to a simmer. Turn off heat and add cream cheese, stirring slowly until incorporated. Add Mexican crema, chile de arbol, cumin, and oregano. Stir again. Add peppers, onion, and garlic; stir to incorporate. Remove from heat.
  • Heat reserved pan with juices over medium-high heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 1 to 2 minutes per side. Stir shrimp into cream mixture and serve.

This combination of roasted poblano chiles, cubed boiled potatoes, onions, and crema, cooked into a savory concoction makes a divine vegetarian taco filling.

5 large poblano chiles, stemmed, seeded, and veins removed (or not, depending on how spicy you want this to be)
2 large Yukon gold potatoes or another waxy potato, cut into 1/2-inch / 12mm cubes
1 Tbsp sea salt, plus more as needed
1 Tbsp safflower oil
1 large white onion, thinly sliced
1 cup / 240g Homemade Mexican Crema or crème fraîche

Steps:

  • On an ungreased comal or in a cast-iron skillet over high heat, roast the chiles, turning them over every couple of minutes using tongs or your hands (carefully, so you don't get burned). You're looking for uniform blistering, but you don't want them to become too soggy in the process, especially if you intend to stuff them, since they need to hold their shape. The process will probably take 10 to 15 minutes. Once they are well blistered and before the flesh is completely charred through in any spots, place the peppers in a plastic container with a tight-fitting lid or in a bowl that you can cover with a plate (not a towel or anything porous) and set aside to "sweat" for about 10 minutes, or until they are cool enough to handle.
  • Remove the charred skin from the whole chiles. Once you have removed and discarded the skin and seeds, cut them into rajas, or strips, about the width of fettuccine.
  • In a small saucepan, cover the potatoes with 2 inches / 5cm water and add the salt. Bring to a boil over medium-high heat, then decrease to low and simmer for about 5 minutes. Remove one of the potatoes and taste it. The piece should be soft but not falling apart, still holding its cube shape. Cubed like this, they will cook quite quickly, so be attentive. Once they have the right texture, drain the potatoes and set aside in a medium bowl with a lid or cover the pan with a plate to keep them warm.
  • Using the same comal or skillet in which you toasted your chiles, heat the oil over medium-high heat until it's hot but not smoking. Add the onion and sauté until it's translucent but not browned.
  • In a saucepan, combine the potatoes, chiles, onion, and crema or crème fraîche. Bring to a boil, then turn off the heat and let it sit for 5 to 10 minutes. As the mixture cools, the starches will absorb some of the melted cream and help it firm up. Taste and add more salt if needed. Serve as you wish!
  • Do Ahead: These potatoes can be stored in a sealed container in the refrigerator for up to 2 days.

I visited my best friend (Magga) over the Easter holiday & borrowed a few cookbooks from her. I was immediately drawn to *Taste of Mexico* by Elisabeth L. Ortiz, found this recipe among her collection of "70 fiery & flavourful recipes from south of the border" & learned some new lessons on authentic Mexican cuisine. Her intro to the *Soups* section says "Soups are a must for the midday main meal (comida). There are 2 types: aguada (liquid) & seca (dry). The 1st term is self-explanatory, but what is a dry soup? It describes a separate course (traditionally a tortilla or rice dish) served after the more conventional soup & before the main course." I never knew that & this "dry soup" sounds so good to me. (Times were estimated & 15 min allowed for ingredient prep + assembly) *Enjoy* !

1/2 cup corn oil
1 onion (finely chopped)
2 garlic cloves (chopped)
1 lb tomatoes (peeled, seeded & chopped)
1/2 teaspoon dry oregano

16 corn tortillas (sml size, day-old & cut in 1/2-in strips)
1 cup double cream
1 cup parmesan cheese (freshly grated)
salt (to taste)
black pepper (freshly ground to taste)

Steps:

  • Heat 2 tbsp of oil in a non-stick fry pan. Saute onion + garlic till soft & stir in chopped tomato.
  • Cook tomato till thick, then stir in oregano & sugar. Season to taste & set aside in a bowl.
  • Wipe the pan clean w/paper towels, heat the remaining oil in the pan & fry the tortillas without allowing them to brown. Drain fried tortilla strips on paper towels.
  • Pour a layer of the tomato sauce into a greased flameproof casserole. Add a layer of tortilla strips, a thin layer of cream, another layer of sauce & a layer of grated cheese. Continue till all ingredients have been used, ending w/a layer of cheese.
  • Cover casserole & heat through gently on the stovetop ~ or heat through for about 20 min in an oven preheated to 180C (350F).
  • *Cooks Tip* ~ Be sure to use corn tortillas for this recipe. If only lrg ones are available, use 8.
  • *Personal Note* ~ Altho not a part of the recipe or its authentic intent, I can easily see this dish 1) Converted to a main-course w/the addition of seasoned grd meat or chorizo to the sauce *or* 2) Combined w/a salad to form a meatless main-dish.

The pepito might be one of the lesser known of the Mexican tortas but it is one of my favorites. This northern Mexican sandwich is served on toasted bolillos (small French rolls), smothered with a tangy, spicy and smoky chipotle crema. The steaks are quick-marinated in lime juice, olive oil and garlic for an easy weeknight skillet torta. But if you have more time, let the steaks marinate for a few hours and fire up the grill for a smokier version of this mouthwatering torta.

3 tablespoons fresh lime juice
4 tablespoons extra-virgin olive oil
3 cloves garlic, finely grated
Kosher salt
1 1/2 pounds flank or skirt steak, cut to fit your skillet
1/2 cup Mexican crema, crème fraiche or sour cream
1 to 3 canned chipotles in adobo (depending on your heat preference), smashed, plus 1 tablespoon adobo sauce
4 large scallions, trimmed
4 Mexican bolillos or hoagie rolls, split and toasted
2 ripe avocados, sliced
4 to 8 pickled jalapeños, quartered lengthwise
1 cup packed cilantro leaves and tender stems
2 ripe tomatoes (or one large), sliced

Steps:

  • Stir together the lime juice, 3 tablespoons of the olive oil, 2 of the grated garlic cloves and 1 1/2 teaspoons salt in a medium bowl until completely combined. Add the steak, toss to coat and let sit until ready to cook. (Steaks can be marinated for up to 6 hours in the refrigerator, covered tightly with plastic wrap.)
  • Stir together the crema, chipotle (1 for mild, 2 for medium, 3 for spicy), adobo and remaining 1 grated garlic clove in a small bowl until completely combined. Let sit until ready to assemble.
  • Heat a large skillet, preferably cast-iron, over high heat until very hot, about 2 minutes. Cook the scallions until charred on both sides, 3 to 5 minutes. Transfer to a plate and set aside until ready to serve.
  • Add the remaining 1 tablespoon oil to the hot skillet and cook the steaks (they will soak up all of the marinade so no need to drain), until charred on both sides, 2 to 3 minutes per side for medium rare. Let rest 10 minutes. Slice against the grain into thin strips.
  • Spread a generous amount of the chipotle crema on the split sides of each bolillo and divide the steak among the 4 bottom bolillos. Top with the sliced avocado, jalapeños and cilantro. Top with the tomatoes and season with salt. Close the sandwiches and serve with the charred scallions.

1 teaspoon vegetable oil

4 ounces queso fresco or 4 ounces mild feta, crumbled

Steps:

  • First, you want to roast the poblanos: you can either do this over the flame on a gas stove until skins are blistered and charred, or you can broil them (turning occasionally) until charred on all sides.
  • Place hot poblanos in a bowl and cover with plastic wrap, letting them steam for 10 minutes.
  • Peel or rub off the charred skins and discard stems, seeds, and ribs (do not rinse peppers under water).
  • Cut roasted poblanos into 1/4-inch thick strips; set aside.
  • In a large heavy skillet melt together the butter and oil over medium low heat, then sauté the onion strips and salt, stirring occasionally, until the onion is golden, about 10 to 12 minutes.
  • While the onion is browning, begin cooking the pasta by adding it to a large pot of boiling salted water until tender, about 7 to 10 minutes; reserve 1/4 cup of the pasta cooking water, then drain remaining and set aside.
  • To the sautéed onion add the serrano, garlic, oregano, and cook, stirring, until fragrant, about 2 minutes.

Here is another very old and traditional recipe. Usually on a Sunday morning after church my grandmother would prepare this wonderful side dish. She would char the peppers peel and cut in strips and prepare with a wonderful cream sauce that included onions, fresh corn on the cob and garlic. We call this dish Rajas which means strips in Spanish. She would serve as a side dish or over little boiled new potatoes. Another wonderful memory of my grandmother's delicious Mexican homemade recipes.

10/12 large poblano peppers, charred or broiled, sweated, skin or peel removed, cored & seeded cut in strips
1 0r 2 large fresh weet vidalia onions or texas sweet onion cut in slices
6 clove(s) fresh garlic mashed or put through a garlic press
1/4 cup(s) olive oil
1/2 teaspoon(s) cumin powder
1 teaspoon(s) leval teaspoon of sea salt
1/4 teaspoon(s) frsh ground black pepper
1/2 cup(s) chicken broth
4 tablespoon(s) all purpose flour
2 tablespoon(s) smooth peanut butter (not crunchy)
1/2 teaspoon(s) mexican dried oregano or regular oregano
1/4 cup(s) olive oil or a little less, to make a roux
1 cup(s) mexican sweet table crema or 1 cup heavy cream
2 cup(s) fresh scraped corn off the cob or canned corn
10/12 small red new potatoes, boiled until fork tender, drained and sliced

Steps:

  • Poblanos can be put under the broiler to charr. Watch them closely so they don't over burn them. You just want to blister the skin or peel. You are looking for an even charr all over the poblanos. Then remove and put into a Plastic freezer bag and let them sweat for about 10/15 minutes. If you have a gas stove I just lay my poblanos over the fire until they begin to charr and then keep turning to get an even black blister all over the peppers. If you have a cast iron skillet you can charr in the skillet or a griddle. Do not grease the skillet or griddle. I find the fastest way is to put poblanos under the broiler to get an even charr all over. Once sweated remove one at a time rub off the skin seed and core. Do all of the peppers like this. When done seeding and coring cut into thin strips and set aside. When removing the seeds try using a paper towel once the pepper is open and scraping them away with the paper towel. Do not rinse them under water. You will wash away the wonderful smokey flavor.
  • Next heat your olive oil in a skillet until shimmering add the sliced onions and mashed garlic saute until the onions are limp. Next add the corn and continue to saute corn with onions five minutes then add the poblano strips and the spices ground cumin, oregano, salt and pepper. Stir gently over medium heat for about 2 minutes, turn off heat and Set aside
  • In another skillet heat the other 1/4 cup of oil and add the flour. Begin to brown the flour until a light golden, Now add the chicken broth and with a wire wisk mix real well until you have a thick like gravy. Don't worry if it lumps up add a little more broth and continue to wisk until all is incorporated and you have a smooth like gravy. Next add the peanut butter and continue to mix real well. Now add the heavy cream about 1 cup and mix into the flour real well. You will end up with a nice thick cream sauce.
  • Now add the cream sauce over the onions and rajas or peppers, mix gently making sure all is mixed in real well. Taste to see if the seasonings are to your liking. You can add a little cayanne pepper if you like your rajas with a little more heat. Serve like this as a side dish or over meat or in a tortilla with meat.
  • Variation: To your boiled new potatoes that have been sliced add the rajas in cream sauce over the potates and mix well. Serve as a side dish with any meat. In Mexico rajas are served as a side dish alone or mixed in with potatoes. Either way they are delicious. Enjoy

In a saucepan, combine the potatoes, chiles, onion, and crema or crème fraîche. Bring to a boil, then turn off the heat and let it sit for 5 to 10 minutes. As the mixture cools, the starches will absorb some of the melted cream and help it firm up. Taste and add more salt if needed. Serve as you wish! 2 cups heavy cream
1/4 cup buttermilk

Steps:

  • Whisk the cream and the buttermilk together in a bowl.
  • Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) overnight.
  • Refrigerate for overnight.
  • Crema may be kept in the refrigerator for as long as a week.
