This Cilantro-Lime Slaw is the perfect example of a simple and enjoyable real food recipe. The simple combination of fresh coleslaw ingredients (cabbage, green onions, carrots, and cilantro) are combined with a dressing that takes less than 60 seconds to make.

1 1/2 cups shredded green cabbage (I use a mandolin to shred the cabbage, or you can use just one type)
1 1/2 cups shredded purple cabbage
1 cup shredded carrots
1/2 cup chopped fresh cilantro
1/2 cup sliced green onions
1/4 cup extra virgin olive oil
1 lime (juiced)
1 TB honey
1 garlic clove (minced)
1/4 tsp red pepper flakes (optional)
1/8 tsp salt (or more to taste)

Steps:

  • In a large bowl, combine the coleslaw ingredients: shredded cabbage, shredded carrots, chopped cilantro, and sliced green onions.
  • In a small bowl or jar, whisk together the dressing ingredients: olive oil, lime juice, honey, minced garlic, red pepper flakes, and salt. Pour as much dressing over the coleslaw as desired. The dressing is also delicious over a salad if you have have leftovers.
  • Toss the coleslaw and dressing together. Serve the coleslaw over tacos, on sandwiches (a barbecue chicken sandwich is divine with this coleslaw), or serve as a side salad. The coleslaw may be prepped in advance and refrigerated, or used immediately after preparation.

Easy and fast Mexican coleslaw, a powerhouse of healthy vegetables! (that also happens to taste delicious!)

4-5 cups very thinly sliced green cabbage OR a bag of pre-shredded mixed cabbage
1 1/2 cups peeled and grated carrots
1/3 cup chopped cilantro
1/3 cup lime juice
1/2 teaspoon ground cumin
1 teaspoon honey
2 cloves garlic minced
sprinkle of salt and pepper
1/2 cup olive oil

Steps:

  • Toss together the salad ingredients in a large bowl; set aside.
  • Combine the dressing ingredients together blend with a handblender. You can also just shake them together, but use 1/2 tsp garlic powder instead of cloves.
  • Toss together all of the ingredients in the large bowl until the salad is completely covered in dressing. Serve and enjoy.
  • This salad is even better when marinated overnight in the fridge before serving.

I took the recipe from Cooking Light and tweaked it a little. The first time I made it by the recipe it was too tart and not spicy enough so the following is what I finally came up with.

1/2 head cabbage, thinly sliced
1 large maui onion, thinly sliced
1/2 bunch cilantro, chopped
1/3 cup lime juice
5 teaspoons light extra virgin olive oil
3/4 teaspoon sea salt
1 tablespoon sugar or 1 tablespoon sugar substitute
4 jalapenos, seeded and thinly sliced

Steps:

  • Combine the cabbage, onion, cilantro and jalapeƱos in a salad bowl and set aside.
  • Combine the lime juice, olive oil, sea salt and sugar and whisk until the sugar and salt are dissolved, then pour over the cabbage mixture and serve immediately.
  • I do not like this dish as a leftover, it loses it's crispness and clean taste.

1 package (14 ounces) coleslaw mix
1 cup chopped peeled jicama
6 radishes, halved and sliced
4 jalapeno peppers, seeded and finely chopped
1 medium onion, chopped
1/3 cup minced fresh cilantro
1/2 cup mayonnaise
1/4 cup cider vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon celery salt
1/4 teaspoon coarsely ground pepper
Lime wedges, optional

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, whisk mayonnaise, vinegar, sugar and seasonings. Pour over coleslaw mixture; toss to coat., Refrigerate, covered, until serving. If desired, serve with lime wedges.

MEXICAN COLESLAW

This is a simple cabbage salad that goes well with any summer meal. I typically serve this with pollo asado tacos (see my recipe for Pollo Asado), and it goes especially well with fish tacos. Sometimes, I use it ON my fish tacos! You can adjust the cilantro to your taste, I know I have many friends that say they don't eat it, but love this salad when I cut back on the cilantro a little bit. Also, adjust the amount of lime juice to your taste, as limes vary greatly in their acidity. To make this extra colorful, you can add 1/2 cup of shredded carrot or 1/4 cup of finely diced red bell pepper. Buen provecho!

Steps:

  • In a large serving bowl, combine cabbage, cilantro and green onion. If using carrot or bell pepper, add it too.
  • In a small bowl, combine the olive oil, lime juice, garlic, salt and pepper. Adjust seasoning. If preparing in advance, stop here and refrigerate both bowls until serving time.
  • Right before serving, stir the dressing then add it to cabbage mix and toss well to coat. Serve immediately or it will wilt.

SPICY MEXICAN COLESLAW

This is ideal picnic food since it has no mayo in it. You can use more or less hot pepper depending on how hot you like it/can take it.

1 large carrot, shredded
3 medium tomatoes, seeded and diced
1 -2 minced seeded jalapeno

1/4 cup fresh orange juice
2 cloves garlic, minced
2 tablespoons sugar
1/2 teaspoon ground cumin
salt and pepper

Steps:

  • Combine all salad ingredients and mix well.
  • Combine all dressing ingredients and toss well with salad ingredients.
  • Refrigerate until ready to serve.
  • This slaw gets better if it has a chance to sit for a few hours before serving and it's even good the next day.

1 red bell pepper, julienned
1 red onion, thinly sliced
1/2 cup chopped fresh cilantro
Salt and pepper

Steps:

  • For the dressing: Place all ingredients in a blender and blend until smooth.
  • For the slaw: Combine all ingredients in a large bowl, toss with the dressing and season with salt and pepper, to taste.
