This tasty milk fudge recipe only uses 5 ingredients. A Mexican tradition, we add a little food coloring to create a rainbow of treats.

2 14-ounce cans condensed milk
1 12-ounce can evaporated goat's milk (or cow's milk)
6 tablespoons butter (unsalted)
2 teaspoons vanilla extract (pure)
2 teaspoons cinnamon
1 pinch of salt
Decoration: Food coloring
Optional: Flavorings

Steps:

  • Gather the ingredients.
  • Lightly butter or grease a 9 by 9-inch square pan. Line the pan with a piece of parchment paper or aluminum foil, leaving about a 1-inch overhang on all sides.
  • Combine the condensed milk, evaporated milk, butter, vanilla, cinnamon and salt in a saucepan.
  • Cook over medium heat, stirring continuously with a wooden spoon or heatproof spatula until the mixture has thickened and starts pulling away from the sides of the pan, 20 to 30 minutes. The candy should easily slide out of the pan.
  • At this time, you can add food coloring to the batch if you like. Pink, red, and green are the most popular colors. Be sure to work fast because the fudge will set up fairly quickly.
  • Pour into the prepared pan and allow to set at room temperature, about 2 hours.

1 cup chopped pecans
3 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
2 tablespoons strong brewed coffee, room temperature
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine the chocolate chips, milk, coffee, cinnamon and salt. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and pecans. Immediately spread into the prepared pan. , Cover and refrigerate until firm, about 2 hours. Remove from pan; cut into 1-in. squares. Cover and store at room temperature (70°-80°).

2 1/2 teaspoons instant espresso powder
1/2 teaspoon ground cinnamon (or more if you like)
1 cup whole milk
3 cups granulated sugar
1/2 cup unsalted butter, cubed
4 ounces unsweetened chocolate, finely chopped

Steps:

  • Butter an 8" square baking dish and set aside.
  • Dissolve the instant espresso powder and cinnamon in 3 teaspoons of hot water. Stir until a paste forms, and set aside.
  • In a saucepan, heat milk, sugar, butter and chocolate over a medium heat until it reaches a boil. Do not stir or scrape down sides.
  • Lower heat, add a candy thermometer and heat (without stirring) until mixture reaches softball stage (238°F).
  • Remove from heat; allow to cool to 110°F, then with a rubber spatula scrape in espresso mixture. In an electric mixer, using paddle attachment, beat mixture until it loses its gloss and thickens.
  • Spread fudge evenly into prepared 8" square pan. Let cool for 20 minutes, then cut into 12 pieces.

COFFEE AND FUDGE SEMIFREDDO



Coffee and Fudge Semifreddo image

2 tablespoons instant coffee (I use decaf)
1 teaspoon coffee extract
1 teaspoon vanilla extract
1 pint plus 1 tablespoon heavy cream
One 14-ounce can sweetened condensed milk
3/4 cup jarred hot fudge
2 tablespoons chopped chocolate-covered espresso beans

Steps:

  • Line a loaf pan (9-by-5-inch works best) with plastic wrap, letting the edges hang over and allowing enough extra plastic to wrap the semifreddo.
  • In a large bowl, combine the instant coffee, coffee extract, vanilla and 1 pint of the heavy cream. Use an electric mixer to whip until medium to firm peaks form. Use a spatula to gently fold in the condensed milk. Transfer half of the mixture to the prepared loaf pan and freeze until just beginning to set, about 20 minutes.
  • Microwave 1/2 cup of the hot fudge with the remaining 1 tablespoon heavy cream in a microwave-safe bowl for 20 to 25 seconds, just to loosen it slightly. Spoon it lengthwise down the center of the pan, from end to end.
  • Transfer the remaining cream mixture to the loaf pan on top of the fudge. Use a butter knife to make swirls going through the mixture. (This will move the fudge throughout the mixture.) Wrap with plastic wrap and place in the freezer for 6 hours.
  • Before serving, let stand at room temperature for 5 minutes.
  • Meanwhile heat the remaining 1/4 cup fudge. Unwrap the plastic, invert onto a serving plate and remove the plastic entirely. Drizzle with the hot fudge and sprinkle with the chopped espresso beans. Slice and serve immediately.

1 stick butter
4 cups sugar
1 (12-ounce) can evaporated milk
2 tablespoons instant espresso powder
1 (12-ounce) package semisweet chocolate chips
30 large marshmallows
3/4 cup toffee bits

Steps:

  • Lightly coat 9 by 13-inch baking pan with butter-flavored cooking spray. In a large saucepan over medium heat, combine butter, sugar, evaporated milk, and espresso powder. Stirring constantly, bring to a rolling boil for 10 minutes.
  • Remove from heat and stir in chocolate chips and marshmallows until blended. Pour into prepared pan. Sprinkle toffee chips evenly over fudge and pat lightly. Cool until set, about 3 to 4 hours. Cut into bite-sized squares.

2 teaspoons instant coffee granules or crystals
1/4 cup hot water
3 cups powdered sugar
1/4 cup unsweetened baking cocoa
1/2 cup butter, softened
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, dissolve 1 teaspoon instant coffee in 2 tablespoons hot water. Add remaining Bar ingredients; stir until soft dough forms. Spread in pan. Bake 15 minutes; cool completely, about 10 minutes.
  • In large bowl, dissolve 2 teaspoons instant coffee in 1/4 cup hot water. Add remaining Frosting ingredients; stir until smooth. Spread over bars. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

My sister brought this recipe home from her middle school Spanish class for the Day of the Dead - fudge with the traditional Mexican twist of added cinnamon. I did not include cooling in the cooking time.

1 cup evaporated milk
3 tablespoons unsalted butter
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup miniature marshmallow
1 1/2 cups milk chocolate chips
1 teaspoon vanilla

Steps:

  • Preheat electric skillet to 280 degrees F.
  • Quickly add first five ingredients.
  • Stir constantly until mixture comes to a full boil. Continue to stir while it boils for five minutes.
  • Unplug the skillet.
  • Add marshmallows, chocolate chips, and vanilla.
  • Stir until blended and pour into a greased pie pan.
  • Cool before cutting.

1/4 cup Kahlua
2 1/2 tablespoons instant coffee granules
1 (12 ounce) package semisweet chocolate morsels
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Line a 8 or 9-inch square baking dish with aluminum foil, overlapping the sides slightly for easy removal; butter the foil on the insides, set aside.
  • In a large, heavy saucepan, combine condensed milk, Kahlua, and coffee granules.
  • Bring to a simmer over medium heat; simmer for 2 minutes, stirring constantly until mixture thickens slightly.
  • Remove from heat. Stir in the chocolate morsels, stirring until melted and smooth. Add the pecans and vanilla, stirring well to combine.
  • Spread evenly into aluminum lined pan.
  • Refrigerate for 2 hours or more.
  • Lift foil onto cutting board, peel fudge from foil and cut into uniform squares to serve.
