This Flatbread Mexican Pizza has a thin crust and is topped with refried beans, flavorful taco meat, cheese, tomatoes, onions, cilantro, avocado and creamy salsa for one tasty meal.

1 pound lean ground beef
1 ounce low-sodium taco seasoning
4 flatbread thin crust pizzas
16 ounces refried beans
2 cups shredded cheddar cheese
1 tomato (diced)
6 green onions (diced)
¼ cilantro (diced)
1 avocado (diced)
½ salsa
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F.
  • In a skillet over medium-high heat, use a wood spoon or spatula to break up ground beef and cook for 7-10 minutes, or until browned.
  • Drain excess grease and mix in taco seasoning; set aside.
  • Place pizza crusts on a baking sheet lined with foil and bake for 3 minutes, then remove from the oven.
  • Spread equal amounts refried beans on each pizza crust.
  • Top each pizza with equal parts of cooked ground beef, cheddar cheese, diced tomato, and diced onion.
  • Place back in the oven for 10 minutes, or until the cheese is melted and edges are golden brown.
  • Remove from oven and top each pizza with cilantro and avocado.
  • Whisk together salsa and sour cream and drizzle on top of the cooked pizza.
  • Cut into slices and serve.

1 package (13.8 ounces) refrigerated pizza crust
8 ounces boneless skinless chicken breasts, cut into thin strips
1 teaspoon canola oil, divided
1 medium onion, sliced
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 garlic clove, minced
1/4 cup chunky salsa
2 cups shredded reduced-fat Mexican cheese blend
1 tablespoon minced fresh cilantro
Sour cream and additional salsa, optional

Steps:

  • Unroll dough into a 15x10x1-in. baking pan coated with cooking spray; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until edges are lightly browned., Meanwhile, in a large nonstick skillet coated with cooking spray, cook chicken over medium heat in 1/2 teaspoon oil for 4-6 minutes or until no longer pink; remove and keep warm., In the same pan, saute the onion, peppers, chili powder and cumin in remaining oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in salsa and chicken., Sprinkle half of the cheese over prepared crust; top with chicken mixture and remaining cheese. Bake for 8-10 minutes or until crust is golden brown and cheese is melted. Sprinkle with cilantro. Serve with sour cream and additional salsa if desired.

1/4 cup Old El Paso™ Mild Thick 'n Chunky salsa
1 cup shredded Colby-Monterey Jack cheese blend (4 oz)
1/2 cup sliced ripe olives
1 cup chopped or quartered cherry tomatoes
1/2 cup sliced green onions
1 avocado, pitted, peeled and sliced

Steps:

  • Heat oven to 400°F. Place flatbreads on ungreased cookie sheet. Spread 1 tablespoon salsa over each flatbread. Sprinkle evenly with cheese and olives.
  • Bake 8 to 10 minutes or until cheese is melted and bread is crisp.

1 store bought flatbread dough or make your own
1/2 cup(s) favorite salsa
4 ounce(s) fresh mozzarella
2 clove(s) roasted garlic minced
1/4 cup(s) sliced red onion
2 tablespoon(s) serrano pepper seeded and finely minced
1 cup(s) leftover rotisserie chicken chopped
fresh cilantro

Steps:

  • Place a pizza stone in oven and turn the heat to 450 degrees. On a pizza peel add a little flour if using homemade flatbread. If using store bought flatbread dough it comes on parchment paper can leave it on the paper. Place on the stone in the oven and cook until the bread begins to get brown. Remove from oven with pizza peel.
  • Spoon the salsa on the flatbread. Top with torn Mozzarella cheese, then roasted garlic, red onion, chilies, and then chicken. Place on the pizza stone in the oven.
  • Bake for 10 minutes until cheese has melted. Remove from oven and top with cilantro.

4 cloves garlic, minced
1 tablespoon all-purpose flour
¾ cup milk
¾ cup grated Parmesan cheese
salt and ground black pepper to taste
1 (7 ounce) 6x13-inch flatbread
1 cup shredded mozzarella cheese
1 ½ cups torn fresh spinach leaves
1 cup shredded cooked chicken breast
3 small tomatoes (such as Campari), sliced
½ small onion, thinly sliced
⅛ teaspoon salt
1 drizzle olive oil
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with foil and spray lightly with cooking spray.
  • Melt butter for sauce in a small saucepan over medium heat. Add garlic and saute until fragrant, about 30 seconds. Stir in flour and whisk for 1 to 2 minutes. Pour in milk and whisk until sauce starts to thicken, 3 to 4 minutes. Stir in Parmesan cheese, salt, and pepper; cook until cheese is melted, about 1 minute. Set aside to cool, about 5 minutes.

1 tablespoon canola oil
Two 10-ounce cans diced tomatoes with chiles, such as Rotel
1 cup chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
One 15.5-ounce can black beans, drained and rinsed
One 10-ounce bag frozen corn
5 cups shredded cooked chicken (from about 1 small rotisserie chicken)
12 small corn tortillas, cut into quarters
One 8-ounce block Monterey Jack cheese, shredded (about 2 cups)
1/2 cup sour cream
1/3 cup diced red onion
1/3 cup loosely packed fresh cilantro, chopped

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-by-13-inch casserole dish with the oil.
  • Stir together the diced tomatoes with chiles, chicken broth, chili powder, cumin and salt in a large bowl. Add the black beans, frozen corn, chicken, tortilla wedges and half the cheese and stir to evenly distribute and moisten all of the ingredients. Transfer to the prepared casserole dish and spread into an even layer. Loosely cover with aluminum foil and bake for 25 minutes.
  • Raise the oven temperature to 400 degrees F. Remove the foil and sprinkle the top with the remaining cheese. Continue to bake until the cheese is melted and just starting to brown, about 10 minutes. Top with dollops of sour cream and sprinkle with the red onion and cilantro. Serve hot.
