This Creamy Salsa Chicken combines tender chicken breast with rich salsa, tangy sour cream, and two cheeses for a Mexican inspired meal that everyone enjoys! It is all baked in just one casserole dish for easy prep and even easier clean up!

2 lbs chicken breast (boneless, skinless - thinly sliced)
8 oz cream cheese (softened)
1/2 cup sour cream
1 cup salsa
1 cup cheddar cheese (shredded)
cilantro (chopped)

Steps:

  • Preheat the oven to 375˚F.
  • Lay the chicken breast flat in a large baking dish.
  • Mix the cream cheese, sour cream, and salsa together until combined. Then spread over the chicken.
  • Top with cheddar cheese. Then bake for 25-35 minutes or until the chicken is cooked through (165˚F internal temp.)
  • Remove from oven and garnish with cilantro if desired. Enjoy!

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  • Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

2 boneless skinless chicken breast halves (5 ounces each)
1/8 teaspoon salt
1/3 cup salsa
2 tablespoons taco sauce
1/3 cup shredded Mexican cheese blend
Optional: Lime wedges and sliced avocado

Steps:

  • Place chicken in a shallow 2-qt. baking dish coated with cooking spray. Sprinkle with salt. Combine salsa and taco sauce; drizzle over chicken. Sprinkle with cheese. , Cover and bake at 350° for 25-30 minutes or until a thermometer reads 170°. If desired, serve with lime wedges and sliced avocado.

I got this recipe from my sister about 15yrs ago...my sister doesn't really love to cook & doesn't try a lot of new or 'different' dishes, and follows a recipe to the 'T'..unlike myself.....originally it was made in a crock pot and then baked. But I found the 2 step process to be to time consuming as well as creating more dirty dishes (ugh)...I have changed it up a bit to my familys tastes ....I serve with rice and corn and a nice tossed salad. enjoy :)

1 1/2 lbs chicken thighs, with skin (about 8 thighs)
1 medium onion, chopped
1 (4 ounce) can sliced black olives
1 1/2 cups salsa (hot or mild, your choice)
1 cup grated mozzarella cheese

3/4 cup hot water
2 tablespoons margarine
2 cups chicken flavor stuffing mix (I prefer Stove Top in the canister)
3/4 cup mild salsa
4 boneless skinless chicken breast halves
1/2 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 350 degrees (f).
  • Mix water and margarine in 13x9 baking dish until margarine is melted.
  • Stir in the stuffing mix and 1/4 cup of the salsa.
  • Arrange chicken over stuffing mix.
  • Pour remaining salsa over chicken.
  • Bake, covered, for 30 minutes, or until chicken is thoroughly cooked.
  • Sprinkle cheese over top and bake uncovered an additional 5 minutes, or until cheese is melted.
