Merguez, a North African lamb sausage, is a powerhouse of spicy and earthy flavor, making it one of the tastiest sausages around.

Number Of Ingredients 12

2 teaspoons whole cumin seed
2 teaspoons whole coriander seed
2 teaspoons whole fennel seed
2 tablespoons paprika
2 tablespoons Kosher salt
1 teaspoon cayenne pepper
3 pounds lamb shoulder, cut into 3/4-inch cubes and removed of gristle
1 pound lamb, beef, or pork fat, cut into 3/4-inch cubes
2 tablespoons freshly minced garlic (about 6 medium cloves)
1/3 cup harissa
1/3 cup ice water
Lamb casings, soaked in warm water for 30 minutes prior to use

Steps:

  • Place cumin, coriander, and fennel seeds in a cast iron skillet over medium heat and toast until fragrant, about 2 minutes. Transfer to a spice grinder and grind into a fine powder. Transfer spice mixture to a small bowl and mix in paprika, salt, and cayenne.
  • Place lamb and fat in a large bowl. Add in spice mixture, garlic, and harissa. Toss to thoroughly coat meat and fat in spices. Refrigerate until chilled, about 20 minutes.
  • Grind mixture through a meat grinder, fitted with small die, into a medium bowl set into a large bowl filled with ice.
  • In the bowl of a stand mixer fitted with a paddle attachment, mix ground meat on low speed for 1 minute. Add in water and mix until liquid is incorporated and sausage is uniform and sticky, about 1 minute more.
  • Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings if necessary.
  • Stuff sausage into lamb casings and twist into 6-inch links. Refrigerate until ready to cook.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate . Grill over medium-high direct heat until sausage registers 155°F when an instant read thermometer is inserted in middle of link. Remove from grill, let rest for 5 minutes, and serve.

2 1/2 pounds shoulder of lamb, not too lean
1 teaspoon finely minced garlic
5 tablespoons Harissa (see recipe)
1/2 cup cold water
Salt to taste, if desired
freshly ground pepper to taste
16 feet lamb casings (see note)
2 tablespoons corn, peanut or vegetable oil

Steps:

  • Have the meat ground or outfit a meat grinder with the fine blade. Put the meat through the grinder.
  • Put the meat into a mixing bowl, and add the garlic, harissa, water, salt and pepper. Blend thoroughly.
  • Outfit a sausage machine or a hand grinder with a sausage funnel. Slip the casings onto the funnel. Fill the casings with the ground meat mixture, following the manufacturer's instructions.
  • Twist the casings at five- or six-inch intervals to indicate individual sausages. If the casings are not used, individual ''sausages'' can be made by dividing the meat into about 25 portions and shaping each one into a sausagelike shape.
  • When ready to cook, heat the oil in a skillet and add the sausages. Cook until lightly browned on one side and turn. Continue cooking, turning as necessary, until cooked through and nicely browned, about six minutes or longer.

Delicious beef sausages cooked in a tomato sauce. Adapted from "Tunisia: Mediterranean Cuisine" published by Konemann. This recipe has five separate parts. Please read all the directions before you start cooking. Try to time everything so that they're done at the same time. We got pretty close. Also, traditional cuisine would use preserved lemons, but we tried to make our own preserved lemons and they fermented on us. So fresh works too.

4 eggs
2 zucchini
2 cups basmati rice
1 tablespoon cinnamon
1/2 tablespoon cumin seed (whole is best)
1 teaspoon coriander seed (whole or ground)
1 teaspoon garlic powder
3 tablespoons olive oil
1/2 lb potato
olive oil
salt and pepper
1 lb ground beef
1 onion
6 garlic cloves
3 tablespoons chopped parsley
1/2 teaspoon coriander powder
1 teaspoon caraway seed
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
olive oil
6 ounces tomato paste
2 cups water
4 green bell peppers, cut into thin strips
1 lemon, cut into thin semi-circles

Steps:

  • PART 1: Hard-boil the eggs for 10 minutes, slice into 1/4 inch strips, serve as a garnish.
  • PART 2: Slice the zucchini into 1/4 inch strips, grill over low heat for 5-10 minutes. They should not be burnt, but should have beautiful char marks from the grill, and should be soft throughout.
  • PART 3: Place 3 tbsp olive oil in large saucepan and heat. Place cinnamon, cumin seeds, coriander seeds, and garlic powder into the oil and lightly fry for about 10 minutes so that flavors permeate the oil. Keep heat low enough that oil does not smoke.
  • Add rice and stir to coat with oil and then immediately add 4 cups water.
  • Cover with lid and heat to the boil, then reduce heat and simmer 20 minutes, or until water has absorbed and rice is soft and fluffy.
  • PART 4: Cut potatoes lengthwise into wedges (8 wedges per potato). Toss in olive oil with salt and pepper. Place in a single layer on a baking sheet and bake at 375 for 40 minutes.
  • PART 5: Chop onion and garlic in food processor until pieces are very small (less than 1/4 inch). Combine with beef, parsley, coriander seed, caraway seeds, garlic powder, paprika, cayenne, salt and pepper into a mixing bowl.
  • Mix with your hands, then form SMALL sausages by squeezing a small amount of mixture in your hands. Sausages should be about the size of a large thumb.
  • Heat olive oil in a skillet until very hot, then brown sausages on all sides. Sausages should be almost completely cooked during this step. Remove and set aside.
  • Turn off heat from under skillet, then add tomato paste and water. Heat to a simmer, stirring to mix. Simmer about 5 minutes.
  • Return sausages to skillet and continue simmering for 30 minutes.
  • Serve as follows: rice on bottom, then sausage and sauce, then alternate zucchini, bell pepper, egg, and lemon on top. Potatoes go on the side, with a little sauce on them as well.
