- Preheat the oven to 350 degrees F (175 degrees C). Grease a 13x9x2-inch baking pan or a large covered casserole dish.
- Combine both types of corn, tomatoes, corn muffin mix, sour cream, Cheddar cheese, onion, egg, and salt in a very large bowl and mix well. Pour into the prepared pan.
- Bake in the preheated oven until firm in the center, about 50 minutes.

Steps:
- Preheat oven to 350°F Grease 2 quart or 8x8 casserole dish.
- Prepare rice as directed to make 2 cups of cooked rice.
- Saute 2 chicken breasts in a shallow pan using olive oil, salt and pepper until done. Chop chicken breasts into bite size pieces.
- Combine all ingredients in a large bowl and mix well. Pour mixture into greased (or sprayed) casserole dish.
- Bake for 40 minutes. Cut into squares and serve.

- Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

- In 12 inch skillet, cook beef, celery and onion until beef is done, drain.
- Stir in taco seasoning, water, beans and green chilis.
- Mix well.

MEREDITH'S SOUTHWEST CASSEROLE
My southwestern twist on enchilada casserole with pork sausage, chipotles, poblanos, avocados and cheese. If you prefer less spice reduce or cut the chipotles. Sometimes my grocery has chipotles fresh; if they don't I buy them in a can with adobe sauce and rinse the sauce and seeds off.

Steps:
- Brown the sausage, drain and set aside.
- Sauté the onions in the butter.
- Add the peppers, spinach, tomatoes, soups, sour cream and garlic salt.
- Briefly simmer until peppers and spinach are limp.
- Add sausage and turn off heat.
- Line two casserole dishes with dampened tortillas.
- Spoon in mixture.
- Cover with avocado and then cheese.
- Continue to layer until dishes are full.
- Cook at 350° for 45 minutes.
