2 lbs ground beef (85 - 90 % Lean)
1 cup onion (finely diced)
2 cloves garlic (minced)
3 tablespoons ketchup
2 large eggs
2 tablespoons Worcestershire sauce
1 teaspoon sea salt
1 teaspoon basil (dried or fresh)
1 teaspoon oregano (dried or fresh)
¼ teaspoon black pepper
½ teaspoon paprika (sweet or smoked)
2 tablespoons fresh parsley (finely chopped (dry can be substituted))
1 cup breadcrumbs (plain, panko or seasoned)
⅓ cup milk
¾ cup ketchup
2 teaspoon cider vinegar (white or wine vinegar can be substituted)
2 tablespoon brown sugar (light or dark)
1 teaspoon granulated garlic
1 teaspoon granulated onion
½ teaspoon sea salt
¼ teaspoon ground black pepper

  • Preheat the oven to 350 degrees.

A quick and easy Southern classic. You'll love our meatloaf recipe with it's slightly sweet tomato based sauce topping.

1/2 cup Ketchup
1/4 cup Brown Sugar
1 Tablespoon Yellow Mustard
3 slices White Loaf Bread
8 Saltine Crackers
1/4 cup Milk, possibly a little more.
2 lbs. Ground Beef
1 Egg, beaten
1/4 small Onion, finely chopped.
1 Tablespoon Garlic Powder
1 Tablespoon Worcestershire Sauce
1 teaspoon Dry Ground Mustard
1 teaspoon Black Pepper
1 teaspoon Salt, optional

Steps:

  • Place ketchup in a small mixing bowl.
  • Add brown sugar.
  • Add yellow mustard.
  • Stir well. Set aside.
  • In a large mixing bowl, break the bread into small pieces.
  • Crumble the saltines and add to the bowl.
  • Add the milk.
  • Stir well to moisten the bread and saltines. Use more milk if needed. Set aside for 5 minutes.
  • Chop the onions very fine. Set aside.
  • Crumble the ground beef on top of the moistened bread and saltines.
  • Add the lightly beaten egg.
  • Add the onions.
  • Add the garlic powder.
  • Add the Worcestershire Sauce.
  • Add the ground mustard.
  • Add the black pepper.
  • Gently mix all the ingredients together until fully combined.
  • Place the meat mixture in a baking loaf pan.
  • Press the meat firmly into the pan.
  • Turn the meat mixture out onto a sheet pan that has been lined with aluminum foil.
  • Bake at 350F degrees for 40 minutes.
  • Pour the sauce over the top of the meatloaf, spread with a spoon to cover the top.
  • Continue to bake, 15 to 20 minutes longer until meatloaf is done.
  • Internal temperature should reach 160 degrees.
  • Remove pan from oven, set on wire rack to cool and rest for 10-15 minutes.
  • Slice as needed.
  • Enjoy!

Steps:

  • Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.
  • Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake an additional 15 to 20 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.

2 large eggs
3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.
