Rich, decadent custard-based alcoholic ice cream that our house guests rave about. This recipe records the best of several variations that I have tried for our family and friends. Warning: watch yourself, this ice cream has a high alcohol content but you will barely taste the alcohol.

1 cup milk
¾ cup white sugar
¼ teaspoon salt
3 egg yolks
1 ounce dark chocolate, broken into pieces
2 cups heavy whipping cream
¼ cup vodka
2 tablespoons coffee-flavored liqueur (such as Kahlua®)
1 teaspoon vanilla extract

Steps:

  • Heat milk, sugar, and salt in a saucepan over medium heat, stirring constantly, until mixture is steaming, about 5 minutes.
  • Beat egg yolks in a measuring cup. Continue beating while gradually adding hot milk mixture, 1 tablespoon at a time, until yolk mixture measures about 1 cup. Pour egg-milk mixture back into the saucepan and add chocolate; stir until chocolate has melted, about 5 minutes.
  • Stir heavy cream, vodka, coffee-flavored liqueur, and vanilla extract into chocolate mixture. Refrigerate until completely cooled.
  • Pour mixture into an ice cream maker and freeze according to the manufacturer's instructions. The alcohol substantially lowers the freezing point so the ice cream maker will only bring the mixture to a cold slush. Allow ice cream to ripen in the freezer for several hours until firm.

Because of the ZWT4 I'm a new owner of an ice cream maker. In a month or less, I tried 4 recipes so far. But some of them, I made half batches. That way, I can try more LOL This one from Rachael Ray looks amazing. You know me, when there's booze, it's even better LOL (A note from Rachael Ray : Think twice before serving this to children, the alcohol doesn't cook off.)

1 cup whole milk
1/2 cup sugar
1 pinch salt
5 large egg yolks, beaten
2 cups heavy cream, chilled
2 tablespoons coffee liqueur, chilled
2 tablespoons vodka, chilled

Steps:

  • In a small saucepan, cook the milk, sugar and salt over medium-high heat, stirring occasionally, until the sugar dissolves, about 4 minutes (do not let the milk boil).
  • Slowly pour one-half of the hot milk mixture into the eggs, whisking. Pour the mixture back into the saucepan and cook over low heat, stirring and scraping with a heatproof spatula, until thick enough to coat the spatula, 8 to 10 minutes.
  • Strain the mixture into a metal bowl. Stir in the heavy cream. Refrigerate until cool, about 2 hours.
  • Stir the coffee liqueur and vodka into the ice cream base. Pour into an ice cream maker and process according to the manufacturer's instructions.

Awesome, easy after-dinner "cocktail"! This is quite rich. However, if you really want to guild the lily, you could drizzle a little chocolate or Bailey's over the top before serving.

1 pkg 1 oz sugar-free jello vanilla pudding mix
2 c 1% or fat-free milk
5 oz vodka
2 oz bailey's irish cream
2 oz kahlua

Steps:

  • 1. Pour pudding mix and milk into a bowl. Whisk briskly for 2 minutes per box instructions until soft set.
  • 2. Add vodka.
  • 3. Add Bailey's Irish cream.
  • 4. Add Kahlua.
  • 5. Mix completely and pour into a freezer-safe container. Freeze until solid. Use a cookie scoop or other small implement to serve in bowls. Enjoy!

2 cups heavy cream
2 cups half-and-half
1/2 vanilla bean, split lengthwise
3/4 teaspoon freshly ground white pepper
9 egg yolks
3/4 cup sugar

Steps:

  • In a saucepan over medium heat, combine the cream, half-and-half, and vanilla bean. Whisk in the white pepper and stir the mixture occasionally to make sure it does not scorch on the bottom. When the mixture reaches a simmer (do not let it boil), turn off the heat. Set aside to infuse for 10 to 15 minutes. In a medium bowl, whisk together the egg yolks and sugar.
  • Whisking constantly, slowly pour the still-hot cream mixture into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees F, it will be thickened and creamy, like eggnog. If you do not have a thermometer, test it by dipping the wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough. When it is ready, quickly remove it from the heat.
  • Half-fill a large bowl with ice water. Strain the mixture into a smaller bowl to smooth it and remove the vanilla bean. Rest the smaller bowl in the ice water and let the mixture cool, stirring often, then continue according to the directions of your ice cream maker.

3/4 cup heavy cream
Dash pure vanilla extract
32 ounces freshly brewed hot strong coffee
8 ounces coffee liqueur, such as Kahlua
4 ounces vodka

Steps:

  • Whisk together the sugar and 1/4 cup cream in a medium bowl. Whisk until the cream forms soft peaks, then whisk in the vanilla and set aside.
  • Put the coffee in a small saucepan over low heat until just simmering. Stir in the remaining 1/2 cup cream and heat through, about 1 minute. Stir in the coffee liqueur and vodka. Pour into 2 big coffee mugs, then top with the whipped cream and serve.

Steps:

  • Fill two lowball glasses with ice cubes.
  • Add 2 ounces vodka and 2 ounces Kahlúa to each glass.
  • Top each drink evenly with lightly whipped heavy cream (see note). If you want to have visual separation between the layers, pour the whipped cream over the ice cubes or a spoon to avoid having it sinking down too quickly.
