BAKED FETA DIP

Steps:
- Preheat oven to 400°F.
- In an oven safe dish, place the cherry tomatoes, red peppers, red onions, olives, garlic and oregano. Pour the olive oil on top, and toss until well combined.
- Place the feta block in the middle of the baking dish surrounded by all the vegetables. Add the crushed red pepper on top of the feta cheese.
- Bake in the preheated oven for 30 minutes, until the cherry tomatoes burst, and the feta cheese melts.
- Add fresh basil leaves and serve with pita chips or crackers.

MELISSA'S BAKED FETA CHEESE DIP
This is a staple in my apartment. I wash and reuse the dish I make it with more than any other dish in my apartment, I think. I picked up a liking for feta while in Greece during the summer of 2006. Don't be too heavy-handed with the onion powder, though. I like onion, but not so that it overpowers the feta. Great with a hearty bread and makes a good sandwich spread as well.

- Preheat oven to 400 degrees Fahrenheit.
- Finely chop cherry tomatoes (I keep the juices so the dish isn't dry).
- Add all ingredients into small baking dish and mix together.
- Bake 15-20 minutes until olive oil is bubbling.
- Serve in baking dish with dipping bread.

- Preheat oven to 400°. In a 13x9-in. baking dish, combine tomatoes, garlic and 1/4 cup olive oil. Place the block of feta in the center, moving tomatoes so cheese is sitting on the pan bottom. Drizzle feta with remaining oil and sprinkle with salt and pepper. Bake until tomatoes skins start to split and the garlic has softened, 30-40 minutes. , Meanwhile, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. , Stir feta mixture, lightly pressing tomatoes, until combined. Add pasta and toss to combine. Stir in enough reserved pasta water to achieve desired consistency. Sprinkle with basil.

- Preheat the oven to 400 degrees F.
- Place the tomatoes, roasted red peppers, olives and garlic in a 7-by-11-inch baking dish. Drizzle with the oil and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir to coat.
