This Italian apple cake recipe is from my mom and reminds me of my childhood. It tastes delicious, and I bake it for my family now.

2 tablespoons unseasoned bread crumbs, or as needed
½ cup unsalted butter, melted
½ cup white sugar
1 vanilla bean, split and scraped
2 eggs
1 ⅛ cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
1 tablespoon milk, or as needed
2 pounds Granny Smith apples, peeled, cored and sliced thin
¼ cup unsalted butter, cubed
¼ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a pie plate and dust with bread crumbs
  • Combine melted butter, 1/2 cup sugar, and vanilla bean seeds in a bowl. Add eggs and stir to combine. Mix flour, baking powder, and salt in a bowl and add to butter mixture. Add milk if batter is too thick
  • Pour batter into the prepared pie plate. Distribute apple slices in a thick layer on top of the batter. Dot with cubed butter and sprinkle with 1/4 cup sugar.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

6 ounces amaretti cookies
1/2 cup vin santo or Marsala wine
1/4 cup sugar
1 cup heavy cream
6 apples, cored
1 tablespoon butter

Steps:

  • Soak 4 ounces of amaretti cookies in the wine until very soft.
  • Meanwhile, dissolve sugar in saucepan over moderate heat, stirring.
  • In separate saucepan, heat 1/2 cup heavy cream until it boils. When sugar has dissolved and browned, add boiling cream, mixing well. Scrape down sides and corners of saucepan. Let cool.
  • Preheat oven to 350 degrees.
  • Whip the remaining 1/2 cup cream until firm. Reserve Y of the whipped cream for decorating. Add the rest to the cooled sauce.
  • Fill each apple with the soaked amaretti. Put apples in a greased baking dish and add water to a depth of 1/8 inch. Place in the oven and bake about half an hour, until the apples are tender but still firm.
  • Remove from the oven and let cool. Arrange the apples in a deep serving dish. Pour cream sauce over them and pipe reserved whipped cream around them. Crumble the remaining amaretti cookies and sprinkle over all.

1 1/4 cups flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup sugar
1 teaspoon baking powder
2 teaspoons grated lemons
4 ounces butter
1 egg yolk
2 tablespoons cream
2 green apples, peeled,cored and cut into quarters and cut thinly
2 eggs
1/2 cup sugar
2 tablespoons flour
2 teaspoons grated fresh lemon rind
1/2 cup cream
8 ounces cream cheese
1 tablespoon mixed peel
1/4 cup raisins
1/4 teaspoon salt
1 package cream, extra
1 teaspoon cinnamon

Steps:

  • Sift together the dry pastry ingredients mix well.
  • Cut in the butter until mealy (use pastry cutter or two knives).
  • Beat the egg yolk and cream add to the flour mixture, mix well and form a round ball.
  • Roll out to about 11x7" rectangle.
  • line a pyrex dish with the pastry, bringing the edges up the sides, trim.

  • Beat the eggs and sugar until thick.

  • Serve room temp with cream (not whipped or serve warm with stiff whipped cream or serve without cream).
  • Sprinkle cinnamon on top.

3 tablespoons brown sugar
1/4 cup hot water
4 large Rome Beauty apples, cored
1 tablespoon lemon juice
12 caramels
1/2 cup heavy whipping cream

Steps:

  • Combine brown sugar and water in a 9-in. square baking dish. Peel the top half of each apple; brush with lemon juice. , Place in the baking dish. Fill each with three caramels. Bake at 350° for 60-65 minutes or until apples are tender, basting every 20 minutes. , Carefully lift apples, allowing any caramel in centers to drip into pan, and place in individual dessert dishes. 1 cup low-fat ricotta cheese
2 tablespoons low-fat yogurt
2 tablespoons honey
1 teaspoon vanilla
1/2 teaspoon cinnamon

Steps:

  • In the bowl of a food processor, combine all the ingredients and mix until they are smooth. Put the cream in the refrigerator to chill slightly before serving.
  • Serve over the oven-poached pears or any other warm fruit.
