2 cups all-purpose flour
¾ cup white sugar
½ teaspoon baking soda
½ cup butter
½ cup dried currants
¼ cup buttermilk
1 egg
¼ teaspoon salt
1 teaspoon caraway seed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine dry ingredients in a mixing bowl. With a pastry blender, cut in butter until mixture resembles coarse meal. Stir in currants.
  • Mix in beaten egg. Pour in milk and mix with a fork to make a soft dough (may need a little more milk).
  • On a floured surface, shape dough into a ball and knead lightly 5 or 6 times. Roll out dough to 1/4 inch thick and cut into squares and triangles with a knife (approximately 2 inches in diameter).
  • Bake for 12 to 14 minutes or until slightly browned.

I found this delicious simple recipe about a year ago....it's very addicting and excellent with Corned Beef and Cabbage. Cut the bread into wedges and serve warm with butter.

3 ½ cups all-purpose flour
½ cup white sugar
2 tablespoons caraway seeds
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
2 eggs
1 (16 ounce) container sour cream
¾ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  • In a large bowl, mix together the flour, sugar, caraway seeds, baking powder, salt, and baking soda until the mixture is well combined. In another bowl, whisk the eggs with the sour cream. Gently stir the sour cream mixture into the flour mixture until the dough just comes together; mix in raisins. Spoon the dough into the prepared springform pan.
  • Bake until the bread has risen and the top is golden brown, 40 to 45 minutes. A toothpick inserted into the center of the bread should come out clean. Cool the bread in the pan for 10 minutes before attempting to loosen the sides of the pan for removal. Cut into wedges and serve warm.

This is the easiest cookie recipe ever and the result is a melt-in-your mouth dessert that is great with a cup of tea, coffee, cider, hot chocolate, whatever. If made properly they taste more like little cakes. This is a traditional Irish recipe I have tweaked over the years to make my own. I usually double this recipe since they tend to go very quickly!

2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon baking soda
1/2 cup butter, softened
1/4 cup buttermilk
1 egg, beaten
1/4 teaspoon salt (optional)
6 tablespoons fruit preserves (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine dry ingredients in a large bowl. Add butter. Knead with hands until the mixture becomes consistent in texture (it will be a bit coarse).
  • Add the egg and buttermilk. Knead with hands just until the mixture is smooth and doughy.
  • Line cookie sheets with wax paper. Drop dough by the tablespoonful onto cookie sheets (no more than twelve per sheet).
  • If desired, use the back of a spoon to gently press a well into each cookie and fill with 1/3 teaspoon of jam/preserves. I find raspberry jam goes perfectly with the flavor of these cookies.
  • Bake for 12-14 minutes, or until cookies are "domed" and slightly golden.

TRADITIONAL IRISH SODA BREAD



Traditional Irish Soda Bread image

While soda bread with add-ins like currants and caraway can be delicious, it's not at all authentic. In Ireland, soda bread tends to be plainer and more restrained. Here is a classic recipe adapted from Darina Allen, an Irish television personality and the owner of the Ballymaloe Cookery School in Shanagarry. This soda bread is is best eaten still steaming from the oven, slathered with good salted Irish butter that melts on contact with your slice. It's a fine accompaniment to corned beef and cabbage, should you be making that dish this St. Paddy's Day. Or make this recipe all year long. That's how they do it in Ireland.

450 grams all-purpose flour (about 3 1/2 cups)
3 grams fine sea salt (about 1/2 teaspoon)
4 grams baking soda (about 3/4 teaspoon)
1 1/2 cups buttermilk, more as needed

Steps:

  • Heat oven to 450 degrees. In a large bowl, sift together the flour, salt and baking soda. Make a well in the center and pour in the milk. Using your hand, mix in the flour from the sides of the bowl. The dough should be soft but not wet and sticky.
  • Turn the dough out onto a well-floured work surface. Wash and dry your hands. Knead the dough lightly for a few seconds, then pat the dough into a round about 1 1/2 inches thick. Place it on a buttered baking sheet and using a sharp knife, cut a deep cross in the center of the dough reaching out all the way to the sides.
  • Bake for 15 minutes, then reduce the oven temperature to 400 degrees, and continue to bake until the top is golden brown and the bottom of the bread sounds hollow when tapped, about 30 minutes longer. Serve warm.
