I copied this delightful recipe when I was in Italy visiting my Aunt Elsa. The refreshing sandwich filling is nicely flavored with oregano and mint. I like it tucked into chewy pita bread. -Marcia Fuller, Sheridan, Montana

1-1/4 pounds boneless skinless chicken breasts, cut into 1-inch strips
2 medium tomatoes, seeded and chopped
1/2 cup sliced quartered seeded cucumber
1/2 cup sliced sweet onion
2 tablespoons cider vinegar
1 tablespoon olive oil
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1 to 2 teaspoons minced fresh mint or 1/2 teaspoon dried mint
1/4 teaspoon salt
6 whole wheat pita pocket halves, warmed
6 lettuce leaves

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken for 5 minutes or until no longer pink. Remove from the skillet; cool slightly., In a large bowl, combine the chicken, tomatoes, cucumber and onion. In a small bowl, whisk the vinegar, oil, oregano, mint and salt. Pour over chicken mixture; toss gently., Cover and refrigerate for at least 1 hour. Line pita halves with lettuce; fill with chicken mixture, using a slotted spoon.

I am not claiming this to be authentic Mediterranean but I got that 'vibe' when I was picking out what veggies I wanted to go in it. I think this would actually work really well even if you left the chicken out and went for a fully veggie option.

1 tortilla
2 tablespoons hummus, reduced fat version is possible
4 slices deli chicken
1/3 cup Baby Spinach
1/3 cup marinated artichoke hearts, drained well and chopped up
2 tablespoons roasted sweet red peppers, diced, from a jar

Steps:

  • Spread hummus over the tortilla.
  • Place the slices of chicken down the middle of the tortilla so that the ends of each slice overlap.
  • Arrange the spinach leaves over the chicken.
  • Top with the artichokes and red peppers.
  • Fold over the sides of the tortilla and roll up as you would any other wrap.
  • Cut in half and serve.

1/2 teaspoon dried oregano leaves
1/4 teaspoon dry ground mustard
1/4 teaspoon dried basil leaves
1 small clove garlic, minced
8 slices multigrain bread
1 cup fresh spinach leaves
1 package (6 oz) sliced cooked chicken breast
1/2 medium cucumber, cut into 20 thin slices
4 thin slices red onion

Steps:

  • In small bowl, mix dressing ingredients until well blended. Spread about 1 teaspoon dressing on each slice of bread.
  • Top 4 slices of bread evenly with spinach, chicken, cucumber and onion. Cover each with second slice of bread, dressing side down. Wrap each sandwich securely with foil or plastic wrap; take with you for an on-the-go dinner.

1 eggplant, sliced into strips
2 red bell peppers
2 tablespoons olive oil, divided
2 portobello mushrooms, sliced
3 cloves garlic, crushed
4 tablespoons mayonnaise
1 (1 pound) loaf focaccia bread

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Brush eggplant and red bell peppers with 1 tablespoon olive oil; use more if necessary, depending on sizes of vegetables. Place on a baking sheet and roast in preheated oven. Roast eggplant until tender, about 25 minutes; roast peppers until blackened. Remove from oven and set aside to cool.
  • Meanwhile, heat 1 tablespoon olive oil and cook and stir mushrooms until tender. Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.
  • Peel cooled peppers, core, and slice. Arrange eggplant, peppers and mushrooms on focaccia. Wrap sandwich in plastic wrap; place a cutting board on top of it and weight it down with some canned foods. Allow sandwich to sit for 2 hours before slicing and serving.

1/2 cup balsamic vinegar
1/3 cup olive oil
1 tablespoon sugar
1 clove garlic, pressed
1/2 teaspoon salt
1/4 teaspoon pepper
6 boneless skinless chicken breasts
1 large green bell pepper, quartered
1 large red bell pepper, quartered
1 large purple onion, cut into 3/4 inch thick slices
2 large avocados, peeled and sliced
8 (10 inch) flour tortillas
2 small avocados
1/2 cup mayonnaise
1 clove garlic, pressed
1 tablespoon lemon juice
2 tablespoons chopped fresh basil

Steps:

  • Peel avocados, and mash in a small bowl; stir in mayonnaise and remaining ingredients.
  • Cover and chill.
  • Whisk together first 6 ingredients.
  • Place chicken breasts in a heavy-duty zip-top plastic bag; pour half of vinegar mixture over chicken.
  • Place bell pepper, onion, and avocado in a heavy-duty zip-top plastic bag; pour remaining vinegar mixture over vegetables.
  • Seal bags, and chill at least 1 hour, tossing occasionally.
  • Remove chicken and vegetables from marinades, discarding marinades.
  • Grill chicken and vegetables, covered with grill lid, over medium-high heat (350* to 400*F/ 175* to 205*C) 20 minutes or until chicken is done, turning once.
  • Remove vegetables from grill when done.
  • Cool; cut chicken and vegetables into strips.
  • Spread tortillas with Avocado Mayonnaise.
  • Place chicken and vegetables on tortillas; roll up.
  • Cut in half diagonally.

1/2 cup lemon juice
3 tablespoons olive oil
2 teaspoons dried rosemary leaves
1/2 teaspoon salt
1/4 teaspoon pepper
8 cloves garlic, chopped
6 chicken thighs (about 2.25 lb)
2 large red potatoes, cut into 1/2-inch pieces
2 small zucchini, cut into 1-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces, pieces separated

Steps:

  • In small bowl or measuring cup, mix marinade ingredients.
  • In large resealable food-storage plastic bag, place chicken thighs. In another large resealable food-storage plastic bag, place potatoes, zucchini, bell pepper and onion. Pour half of the marinade over contents in each bag. Seal bags; turn to coat contents with marinade. Refrigerate at least 30 minutes but no longer than 6 hours, turning bags occasionally.
  • Heat oven to 400°F. Line 15x10x1-inch pan with foil. Place chicken thighs, skin side up, on one side of pan and vegetables on other side of pan. Pour any remaining marinade over chicken and vegetables.
  • Bake 35 to 45 minutes or until vegetables are tender and juice of chicken is clear when thickest part is cut to bone (180°F), spooning juice in pan over chicken and vegetables halfway through bake time. Sprinkle with shredded Parmesan cheese if desired.
