ROSEMARY AND LIME ROASTED SEA BASS WITH MEDITERRANEAN SALSA

1 cup tomato, diced and seeded
1 cup fennel, finely diced
1 red bell pepper, finely diced
1/2 cup red onion, finely diced
1/2 cup kalamata olives, sliced
1/4 cup capers, drained, rinsed and squeezed dry
1 teaspoon garlic, minced
1/2 lemon, pulp and rind, seeded and chopped
2 tablespoons fresh parsley leaves, chopped
1/4 cup fresh basil leaves, chopped
3 tablespoons red wine vinegar
1 orange, zest minced, juiced
1/4 cup plus 2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 whole sea bass (about 5 pounds), scaled and cleaned with head and tail intact
Salt and freshly ground pepper
1/2 red onion, sliced into thin rings
1 lime, cut into thin rounds
3 sprigs fresh rosemary
2 cloves garlic, thinly sliced
Dried rosemary branches for roasting (optional)
2 tablespoons olive oil

Steps:

  • Prepare the Mediterranean Salsa: Combine all of the ingredients in a large bowl and toss to mix well. Let sit at room temperature for 30 minutes to allow the flavors to blend before serving or cover and refrigerate for up to 2 days.
  • Preheat oven to 400 degrees F. Rinse the fish well under cold running water (to make sure the cavity is clean of any entrails) and pat it dry. With a sharp knife, make 4 deep diagonal incisions down to the bone on each side of the fish. Sprinkle the cavity with salt and pepper. Lay the onion rings, lime rounds, and rosemary sprigs in the cavity. Close the fish. Insert the garlic slivers into the incisions.
  • Tie the fish together in 3 or 4 places with butcher's twine to close the cavity. Place the fish on a bed of rosemary branches (or a rack) set in a large roasting pan. Rub the fish with the olive oil; sprinkle with salt and pepper. Roast the fish until completely cooked through, about 40 minutes.
  • Transfer the fish to a large platter and remove the twine, top with the Mediterranean Salsa. You can also serve this fish on a bed of spinach or arugula leaves with a side of warm orzo tossed with a little chopped fresh parsley and olive oil.

2 lbs sea bass (filleted)
2 fennel bulbs
1/2 cup extra virgin olive oil
3/4 cup Pernod
1 garlic clove
2 pieces star anise
1/2 cup pitted black olives
2 tablespoons dill
1 dash salt
1 dash pepper

Steps:

  • Season the sea bass filet with salt and pepper and rub it with extra virgin olive oil. Remove the stalks from the bulb of fennel. Rinse and split in half.
  • Slice the fennel bulb thinly and place it in a baking dish. Add the star anise, sea bass filet, the garlic clove with the skin on and the Pernod®. Cover the top of the baking dish with aluminum foil, sealing the edge. Place the baking dish on the stove until the aluminum foil begins to pop from the internal steam. Bake at 450 degrees Farenheit for 7 minutes.
  • Remove the aluminum foil and the olives and sprinkle with the freshly chopped dill. Serve the sea bass filet with the fennel garnish and the cooking liquid.

2 (1 1/4 lb) striped bass, small (cleaned, scaled, and heads removed)
kosher salt, to taste
white pepper, freshly ground, to taste
1 cup basil, tough stems removed
1 1/2 cups extra virgin olive oil (plus more for drizzling)
1 onion, small, finely chopped
3 garlic cloves, thinly sliced
1 red chili pepper (cayenne type, thin small)
1 red bell pepper, cored, seeded and finely chopped
1 cup dry white wine
3 tomatoes, peeled, seeded and coarsely chopped
1 tablespoon capers, drained and rinsed
1/4 cup black olives, pitted (such as kalamata or Taggiasche)
2 tablespoons flat leaf parsley, finely chopped

Steps:

  • 1 Preheat the oven to 425 degrees. Have ready a flameproof baking dish or roasting pan large enough to hold the fish in a single layer. 2 Rinse the fish well and pat dry with paper towels. Season lightly with salt and pepper, inside and out. Stuff each fish with half the basil. Rub 1/4 cup of the olive oil into the skin of the fish, and set aside. 3 Place the baking dish or roasting pan over medium-high heat. Add 3/4 cup of the olive oil, the onion and garlic and cook for about 5 minutes, or until the onion is soft and translucent. Add the chopped chili pepper and bell pepper, and cook for 3 minutes, or until they have softened. Add the wine and cook for about 5 minutes, or until it has reduced by one-third. Reduce the heat to medium-low and add the tomatoes, capers and olives. When the sauce starts to bubble around the edges, remove from direct heat and keep it warm on the stovetop. 4 Heat the remaining 1/2 cup of olive oil in a large skillet over high heat until it shimmers. Sear the fish for 3 minutes on each side, then transfer to the baking dish and baste with the sauce. Cover tightly with a lid or aluminum foil and bake for 8 minutes. Uncover and increase the oven temperature to 450 degrees. Bake for about 10 minutes, basting every 3 to 4 minutes, until the fish is just cooked through. Transfer the fish and sauce to a serving platter. Sprinkle with the parsley, drizzle with olive oil and serve hot.

11/2 tbsp olive oil
4 fillets of sea bass, cod, monkfish or red snapper (about 5 oz each)
salt and freshly ground pepper
1/4 cup all-purpose flour
8 green olives, pitted and chopped
2 cloves garlic, chopped
1 small onion, chopped
2 tbsp capers, rinsed
2 tbsp chopped fresh herbs (rosemary, thyme parsley)
1/4 cup dry white wine
2 tomatoes, peeled, seeded and chopped (can use canned whole tomatoes)
2 bay leaves
4 lemon quarters, for serving
2 cups cooked whote wheat couscous*

Steps:

  • Heat oil in a large non-stick skillet set over med-high heat. Season fish with salt/pepper. Lightly dust with flour, shaking off any excess. Place the fillets into the skillet and cook until lightly browned on one side, 2 to 3 min. Turn the fish, and scatter the olives, garlic, onion, capers and herbs over the fish. Pour in the wine and then add the tomatoes. Place a bay leaf over each fish fillet, cover the pan and cook until the fish is still firm but easily flakes, about 5 min. Serve with a lemon wedge over couscous. Top each fillet with the pan sauce. * Add 1 cup dry to 11/4 cup boiling water or broth. Season to taste, then stir, cover for 5 min, and let sit for 5 min. Fluff with a fork just before serving.

3 tablespoons extra virgin olive oil
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh thyme
2 teaspoons dried lavender
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
4 skinless chilean sea bass fillets (about 6 oz each and 1 in thick)
lemon wedge

Steps:

  • To make the paste; in a small bowl whisk together the paste ingredients - the oil through the pepper. Spread the paste evenly on both sides of the fish fillets.
  • Grill over direct high heat until the flesh is opaque throughout and starting to flake 5-7 minutes, turning once halfway through grilling time. Serve warm and garnish with lemon wedges.
