French Roast Chicken and Mediterranean Vegetables in Wine image

A very tasty & colourful recipe and an easy but impressive way of cooking Roast Chicken with MOST of the Vegetables & some of the Wine!! I have been known to cook this in my crockpot too; the vegetables need to be pre-cooked & the chicken browned if possible for the Crockpot recipe, but it works very well. All that you need to complete this meal, is maybe some Jacket Potatoes or even some of my Recipe #193370 and good company, and it's done! The Roast Vegetables stated in the ingredients, are my French Roast Vegetables with Hot Balsamic & Olive Oil Dressing, Recipe #195130.

Number Of Ingredients 6

4 lbs chicken pieces or 6 chicken breasts, skin on and bone in
1 tablespoon olive oil
4 fluid ounces dry white wine
salt and black pepper
fresh thyme or fresh rosemary
roasted vegetables

Steps:

  • Make a batch of French Roast Vegetables with Hot Balsamic & Olive Oil Dressing, (Recipe #195130) up beforehand - OR use your own roasted vegetable or Ratatouille recipe if you wish!
  • Preheat oven to 180C or 360°F.
  • Grease a sturdy roasing tin or tray with a little of the olive oil.
  • Brush the rest of the olive oil over the chicken or chicken breasts/pieces & season liberally with salt & freshly ground black pepper.
  • Place the fresh thyme or rosemary over the top of the chicken and roast in the oven for about 45 minutes to 1 hour, dependant on the size of your chicken and/or chicken pieces. Remove from the oven and drain any excess fat away.
  • Add the roasted vegetables & wine to the chicken, gently mix through or scatter around the sides of the whole chicken and turn up the oven to 220C or 450°F.
  • Put the chicken and vegetables back into the oven to roast for a further 15 to 25 minutes; the chicken should be just falling off the bone, golden brown and crispy and the vegetables should be heated through & charred slightly!
  • Serve with jacket potatoes or peppered potato wedges, Recipe #193370.
  • N.B.
  • I have cooked the vegetables alongside the chicken before, but I find that it takes up too much of the chicken fat & juices - great if you are wanting to cook a Chicken & Vegetable casserole, but in this dish I wanted the flavours to be independant of each other!

This recipe comes from Greece, where roast chicken and potatoes are a staple dish. You can use lemon or orange juice in this roast chicken recipe; I like both. Lemon is more typical. Also, my aunt never uses garlic, so you can leave it out if desired. Serve with a crisp green salad.

1 large orange, juiced
¼ cup Dijon mustard
¼ cup olive oil
4 teaspoons dried Greek oregano
salt and freshly ground black pepper to taste
12 potatoes, peeled and cubed
5 cloves garlic, minced
1 whole chicken

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk orange juice, Dijon mustard, olive oil, Greek oregano, salt, and pepper together in a large bowl. Add potatoes and coat thoroughly with the mixture. Transfer potatoes to a large baking dish.
  • Stuff garlic cloves into the chicken underneath the skin. Place the chicken into the bowl with the remaining orange juice mixture; coat thoroughly and transfer to the baking dish on top of the potatoes. Pour any remaining orange juice mixture over the chicken and potatoes.
  • Bake uncovered in the preheated oven until no longer pink at the bone and the juices run clear, 60 to 90 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Check every 30 minutes while roasting and add a bit of hot water if the potatoes seem too dry.
  • Remove chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

This is a recipe by the author of the Olive Tree and it is delicious! The rice stuffing is a nice change from bread and has less calories.I love the zing it has. Will take a pic tomorrow after its cooked *My own pic

Number Of Ingredients 14

1 whole chicken
STUFFING
8 oz whole grain/brown rice
chopped fresh chives
8 clove garlic, peeled and whole
1 Tbsp fresh cilantro chopped
2 onions peeled and quartered
chopped parsley
6 -10 olives
2 bay leaves
1 lemon
1 sprig of rosemary
4 Tbsp olive oil

Steps:

  • 1. Preheat oven to 425. Cook rice in salted water and set aside. Cool Mix all the stuffing ingredients with the rice....leaving the bay leaves, lemon and sprig of rosemary. Stuuf the chicken with the rice then press in in the bay leaves and a sprig of rosemary. Squeeze half the lemon over the the outside of the chicken and use the other half to seal the cavity skin side out.. Cover the chicken with a small handful of Herbs de Provence. Pour the olive oil over the chicken. add s/p. Roast for 10 mins and then lower tempertaure to 350. Cook till brown and crisp and liquid runs clear. ...about 1 and half hours. When the chicken starts to brown you can flip it over and turn it back for the last 10 mins of cooking
  • 2. NOTE: If you don't have fresh herbs you can use dried ones except for the cilantro...no substitutes here..
