This colorful Mediterranean rice salad is a great summertime dish. I used fresh zucchini, carrots, and bell peppers, but you can add any vegetable you like. Replace rice with couscous, farro, or barley, if you prefer.

4 cups water
2 cups uncooked white rice
2 tablespoons extra-virgin olive oil, divided
1 teaspoon herb salt
1 tablespoon chopped capers
1 sprig fresh parsley, chopped
½ lemon, zested
3 zucchini, peeled and grated
2 carrots, peeled and grated
½ yellow bell pepper, cut into cubes
½ red bell pepper, cut into cubes
1 lemon, juiced
salt to taste

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 18 to 20 minutes. Remove from heat and pour enough cold water on top of the cooked rice to cover it. Stir to cool. Drain well; transfer rice into a bowl. Stir in 1 tablespoon olive oil and season with herb salt.
  • Mix capers, parsley, and lemon zest in a small bowl; add to rice. Mix in zucchini, carrots, yellow bell pepper, and red bell pepper. Season with remaining 1 tablespoon olive oil, lemon juice, and salt.

1-1/2 cups uncooked long grain brown rice
3-1/2 cups water
2 tablespoons white vinegar
2 tablespoons balsamic vinegar
1 garlic clove, minced
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 cup olive oil
1/4 cup chopped fresh basil
6 ounces fresh baby spinach (about 8 cups), coarsely chopped
16 ounces cherry tomatoes, halved
6 green onions, thinly sliced
2 cups (8 ounces) crumbled feta cheese

Steps:

  • In a saucepan, combine rice and water; bring to a boil. Reduce heat; simmer, covered, until rice is tender and liquid is absorbed, 35-40 minutes., Meanwhile, place vinegars, garlic, pepper and salt in bowl and whisk together. While whisking, gradually add oil in a steady stream. Stir in basil., Place spinach in a large bowl; add cooked rice. Stir in tomatoes, green onions and dressing; toss until spinach is wilted. Gently stir in feta. Loosely cover and refrigerate 2 hours or until cold.

1 ½ cups uncooked brown rice
3 cups water
1 red bell pepper, thinly sliced
1 cup frozen green peas, thawed
½ cup raisins
¼ sweet onion (such as Vidalia®), chopped
¼ cup chopped Kalamata olives
½ cup vegetable oil
¼ cup balsamic vinegar
1 ¼ teaspoons Dijon mustard
salt and ground black pepper to taste
¼ cup feta cheese

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low; cover and simmer until rice is tender and the liquid is absorbed, 45 to 50 minutes.
  • Combine red bell pepper, peas, raisins, onion, and olives in a bowl.
  • Whisk vegetable oil, vinegar, and mustard together in a separate bowl for the balsamic dressing.
  • Stir brown rice and balsamic dressing into vegetable mixture. Season with salt and black pepper.
  • Top brown rice and vegetables with feta cheese before serving.

1 1/4 cups arborio rice or 1 1/4 cups long-grain white rice
1/4 cup fresh lemon juice
3/4 lb shrimp, shelled and deveined
4 -5 tablespoons extra virgin olive oil
4 ripe tomatoes, seeded and diced
1 large fennel bulb, halved,cored and cut into ¼ inch dice
4 scallions, thinly sliced
1/4 cup chopped fresh dill
1 clove garlic, minced
crushed red pepper flakes (optional)

Steps:

  • In a large saucepan, bring 10 cups of water to a boil.
  • Stir in 1 tblsp salt.
  • Add the rice and cook uncovered over medium heat until al dente, about 15 minutes.
  • Drain in a colander, rinse with cold water and drain again.
  • Place the rice in a large serving bowl.
  • Bring a saucepan of salted water to a boil and stir in 1 tblsp of the lemon juice.
  • Add the shrimp and cook until opaque, about 1 ½ minutes.
  • Drain the shrimp.
  • Transfer to a work surface and chop into small pieces.
  • Toss the rice with ¼ cup of th e oil and the remaining 3 tblsps lemon juice.
  • Add the shrimp, tomatoes, fennel, scallions, dill and garlic; toss.
  • Add up to 1 tblsp more of oil.
  • Season with salt and crushed red pepper.
  • Let stand for at least 20 minutes before serving.

1 1/2 cups long-grain rice
1/4 cup fresh lemon juice
1/3 cup extra virgin olive oil
1 garlic clove, minced
1 teaspoon fresh oregano, minced
1/4 teaspoon fresh ground black pepper
1/8-1/4 teaspoon red pepper flakes
2 cups chopped spinach leaves
1 red bell pepper, finely chopped
1 small cucumber, peeled, seeded, and finely chopped
1/2 cup chopped green onion
1/2 cup chopped kalamata olive
1 cup crumbled feta cheese

Steps:

  • In a medium saucepan, bring 2 1/2 cups water to a boil. Add 1/2 teaspoons salt and the rice. Turn heat to low, cover and simmer 15 minutes. Remove from heat and let sit 5 minutes. Uncover and fluff with a fork.
  • In a large bowl, whisk lemon juice, olive oil, garlic, oregano, pepper, pepper flakes, and remaining tsp salt.

4 stalks hearts of palm, halved lengthwise and chopped
10 sundried tomatoes, marinated in oil, drained and chopped
20 pitted kalamata olives, chopped
2 plum tomatoes, diced
2 scallions, sliced
1 cup diced cooked chicken (opt.) (use part of breast from roast chicken above)
2 Tbsp. olive oil
2 Tbsp. red wine vinegar

Steps:

  • Prepare rice pilaf according to package directions, using spice pack and omitting oil or butter. While rice is cooking, combine hearts of palm, sundried tomatoes, olives, plum tomatoes and scallions in a large bowl. When rice pilaf is finished cooking, uncover, remove from heat, and let cool, for several minutes. Add to vegetables in the bowl. Add chicken (opt.), oil and vinegar and toss. Serve warm or at room temperature.

1/2 roasted red pepper, chopped
2 medium roma tomatoes, chopped
2 small cucumbers, chopped
6-8 fresh basil leaves, torn
1 lb 1 lb. cooked shrimp, *i grilled mine*
VINAIGRETTE
1/3 c extra virgin olive oil
1 1/2 Tbsp mediterranean spice blend
juice & zest of 1 lemon
1 Tbsp white wine vinegar
salt & pepper to taste

Steps:

  • 1. Whisk dressing ingredients in a small mixing bowl. Combine ingredients 1-5 in a large mixing bowl. Mix vinaigrette with rice and salad. On a large salad platter, plate up salad and top with shrimp.

1 cup drained canned French style green beans
1 cup pitted black olives
1 roasted red pepper, drained and diced

1 dill pickle spear, diced
2 roma (plum) tomatoes, diced
3 cloves garlic, finely chopped

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat. Stir in rice, and cook until lightly browned. Pour in the water. Bring to a boil, reduce heat to low, and simmer until all liquid has been absorbed.

1 cup pearl barley
1 cup basmati rice
3 cups cherry tomatoes
1/2 red onion, large
1 red pepper
1 cucumber, english
4 cups Baby Spinach, coarsely chopped
1 (200 g) package feta cheese, crumbled
1/2 cup extra virgin olive oil
1/2 cup lemon juice
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In saucepan of boiling salted water, cook barley until tender, about 20 minutes. Drain and rinse under cold water; drain well. Let stand for 10 minutes to dry. Transfer to large bowl.
  • Meanwhile, in a separate saucepan, bring 1 1/2 cups salted water to boil. Add rice; cover, reduce heat, and simmer until tender and no liquid remains, about 15 minutes. Let stand for 5 minutes. Add to barley mixture; let cool.
  • Cut tomatoes in half; add to barley mixture. Cut onion, red pepper, and cucumber into 1 inch chunks, add to barley, tossing to combine.
  • Dressing: In a large bowl, whisk together oil, lemon juice, oregano, salt, and pepper, pour over salad and toss to coat. Refrigerate for 30 minutes up to 24 hours.
  • To serve, stir in spinach and feta cheese.

2 cups white rice, w/4 packets Geo Washinngton Seasoning, 2 chicken bouillon cubes & parsley added to water
1 small bottle Caesar Salad Dressing
1 large bottle Italian dressing
1 pkg frozen peas-partially cooked-microwave 3 min
1 cup green onions sliced, including stems
1 small jar chopped pimentos, drained
1 can (medium-sized) black ripe olives, sliced
1 can water chestnuts, chopped
small flowerets of broccoli
1 head cauliflower-cut into small serving pieces
green pepper, if desired

Steps:

  • Cook rice approz. 10-12 min.-remove from heat, covered & let stand. Transfer rice & remaining liquid to large mixing bowl-let stand until all liquid is absorbed. Combine salad dressings with 1 1/2-2 tsps. crushed Basil Leaves Stir into cooked rice Cover & chill overnight Fold in broccoli, cauliflower,peas, onions, olives & pimento just before serving. P.S. You can add or subtract any of the vegetables & add your own favorites. Don't like Caesar dressing? Omit it and just use a spicy Italian or Greek salad dressing

1/2 teaspoon black pepper
1/2 cup sun-dried tomato, julienned
1 (2 1/4 ounce) can sliced olives, drained (1/4 cup)
1 tablespoon basil, minced
pine nuts (to garnish)
1 red bell pepper, seeded and finely chopped
1 green bell pepper, seeded and finely chopped
1/2 cup carrot, diced
1 medium tomatoes, seeded and finely chopped
1 (6 1/2 ounce) jar pickled artichoke hearts, chopped
2 tablespoons capers

Steps:

  • Place hot rice in large bowl.
  • Combine oil, lemon juice, vinegar, garlic, salt, rosemary, and pepper in small jar or blender.
  • Shake or blend well and pour over rice. Toss lighlty.
