MEDITERRANEAN POTATOES
These Mediterranean potatoes are soft on the inside, crispy on the outside, and cooked in amazing lemon, garlic, and olive oil sauce.

- Preheat your oven to 400°F (200°C). Prepare a large deep baking dish.
- In a medium bowl or a jar, mix together the freshly squeezed lemon juice, extra virgin olive oil, vegetable broth, sliced garlic, sea salt, black pepper, dried oregano, dried parsley, dried rosemary, and paprika powder. Stir until well combined. Set aside.
- Lay your potato wedges into the prepared baking dish the skin side down. Try not to overlap them too much.
- Pour the liquid over the potatoes, making sure to distribute the garlic evenly if you can.
- Cover with foil or a lid and cook covered for 40 mins.
- Raise the temperature to 425°F (220°C) and uncover the potatoes. There should still be a lot of liquid there, that's good, it's going to cook down into a thick sauce. Cook for another 30-40 minutes. Toss gently 2-3 times throughout so they crisp up on all sides and don't dry out.
- Toss again and serve immediately drizzled with the sauce that's left in the baking dish. Garnish with fresh herbs and lemon slices if desired.

- Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain. Cover with cold water and allow to sit until cool, draining and replacing the cold water as needed. Peel and slice the potatoes thinly.
- Preheat an oven to 350 degrees F (175 degrees C).
- Grease a casserole dish with the olive oil. Line the casserole dish with an even layer of potato slices; top with a layer of sardine fillets. Scatter the diced tomatoes over the sardines. Sprinkle the garlic, basil, and bread crumbs over the tomatoes.

EASY POTATO CASSEROLE RECIPE, EGYPTIAN STYLE
This potato casserole recipe comes with a bit of an Egyptian twist. Potato wedges are combined with carrots and bell peppers, then topped with a spiced meat sauce. We use lean ground beef or ground turkey here.

- Heat oven to 375 degrees F.
- To make the meat sauce, in a large non-stick skillet, heat 2 tbsp extra virgin olive oil. Add chopped onions and cook, tossing regularly, till translucent. Add garlic and cook for another 30 seconds or so.
- Add the ground meat (lean beef or turkey), break it up using a wooden spoon. Season with spices, salt and pepper. Cook, stirring regularly, until fully browned. Now add the peeled tomatoes and water. Using your wooden spoon, smash or break up the tomatoes a bit. Bring to a boil, then lower heat, cover and let the meat sauce simmer for 10 minutes. Check to see if you might like to add a little more water. Taste and adjust salt and pepper.
- In a 9" x 13" baking pan like this one, arrange the potato wedges, carrots, and bell peppers. Season with salt and pepper. Sprinkle allspice and coriander. Toss to combine. Add about 3/4 cup water, then top with the meat sauce.
- Cover the baking pan with foil and bake in heated oven for 30 minutes or so. Uncover and bake for another 10 to 15 minutes or until potatoes are tender. Remove from oven and top with fresh chopped parsley.
- To serve, add a side of Lebanese rice, if you like. A fresh salad such as this Mediterranean salad, Greek Salad, or Fattoush is a good start to this hearty meal.

Steps:
- Steam the potatoes until they are soft but still firm (if that makes any sense).
- You want them to be soft, but not to the point that they will fall apart when lifted.
- Set aside.
- In a small skillet, saute the garlic, onions, and herbs until the onions become translucent.
- Remove them from the heat.
- In a medium-sized bowl, mix the potatoes and the onions.
- Add the tamari and pepper to taste.
- In a casserole, begin layering the ingredients.
- First, place the onions and potatoes on the bottom of the tray.
- Cover this with the tomatoes and olives.
- Finally, cover this with the cheese.
- Continue to layer in this order until there aren't any more ingredients.
- Bake this in an oven at 350 degrees for 30 minutes with a loose tinfoil cover.
- Uncover the mixture and cook for another 20 minutes or until brown on top.
- Garnish with the parsley.
