Time 1h10m

Number Of Ingredients 12

¼ cup freshly squeezed lemon juice (1 lemon)
¼ cup extra virgin olive oil
1 1/4 cup vegetable broth
6-8 garlic cloves, peeled and sliced
1 tsp sea salt
½ tsp freshly cracked black pepper
1 tsp dried oregano
1 tsp dried parsley
½ tsp dried rosemary
1 tsp paprika powder
1 kg young potatoes, cut into wedges (5-6 medium potatoes or 4 large yellow potatoes)
For garnish: roughly chopped fresh herbs (chives, parsley, or oregano), lemon slices

Steps:

  • Preheat your oven to 400°F (200°C). Prepare a large deep baking dish.
  • In a medium bowl or a jar, mix together the freshly squeezed lemon juice, extra virgin olive oil, vegetable broth, sliced garlic, sea salt, black pepper, dried oregano, dried parsley, dried rosemary, and paprika powder. Stir until well combined. Set aside.
  • Lay your potato wedges into the prepared baking dish the skin side down. Try not to overlap them too much.
  • Pour the liquid over the potatoes, making sure to distribute the garlic evenly if you can.
  • Cover with foil or a lid and cook covered for 40 mins.
  • Raise the temperature to 425°F (220°C) and uncover the potatoes. There should still be a lot of liquid there, that's good, it's going to cook down into a thick sauce. Cook for another 30-40 minutes. Toss gently 2-3 times throughout so they crisp up on all sides and don't dry out.
  • Toss again and serve immediately drizzled with the sauce that's left in the baking dish. Garnish with fresh herbs and lemon slices if desired.

Categories     Entree

Time 1h25m

Number Of Ingredients 18

2 tbsp Private Reserve Greek extra virgin olive oil
1 cup chopped yellow onion
3 garlic cloves, minced
1 lb lean organic ground beef (or ground Turkey, if you prefer)
1 1/2 tsp ground allspice
1 1/2 tsp coriander
1/2 tsp sweet Spanish paprika
Salt and pepper
1 28-oz can peeled tomato
1/2 cup water
1 1/2 lb gold potatoes, peeled and cut into wedges
3 large carrots, peeled, halved length-wise, then cut into 2-inch pieces
1 green bell pepper, cored and sliced into wide strips
Salt and pepper
3/4 tsp allspice
3/4 tsp coriander
Water
1/2 cup chopped fresh parsley

Steps:

  • Heat oven to 375 degrees F.
  • To make the meat sauce, in a large non-stick skillet, heat 2 tbsp extra virgin olive oil. Add chopped onions and cook, tossing regularly, till translucent. Add garlic and cook for another 30 seconds or so.
  • Add the ground meat (lean beef or turkey), break it up using a wooden spoon. Season with spices, salt and pepper. Cook, stirring regularly, until fully browned. Now add the peeled tomatoes and water. Using your wooden spoon, smash or break up the tomatoes a bit. Bring to a boil, then lower heat, cover and let the meat sauce simmer for 10 minutes. Check to see if you might like to add a little more water. Taste and adjust salt and pepper.
  • In a 9" x 13" baking pan like this one, arrange the potato wedges, carrots, and bell peppers. Season with salt and pepper. Sprinkle allspice and coriander. Toss to combine. Add about 3/4 cup water, then top with the meat sauce.
  • Cover the baking pan with foil and bake in heated oven for 30 minutes or so. Uncover and bake for another 10 to 15 minutes or until potatoes are tender. Remove from oven and top with fresh chopped parsley.
  • To serve, add a side of Lebanese rice, if you like. A fresh salad such as this Mediterranean salad, Greek Salad, or Fattoush is a good start to this hearty meal.

BRIAM (GREEK BAKED ZUCCHINI AND POTATOES)

Briam (Greek Baked Zucchini and Potatoes) image

Briam is a traditional Greek roasted vegetable dish with potatoes, zucchini, tomatoes, and red onions with lots of olive oil. It is a typical example of Greek cuisine where a few simple ingredients are turned into an utterly delicious dish with little effort. It can be served as a main course. With olive oil as the only source of fat it is a quintessential example of the Mediterranean diet, and it is vegan to boot. If preferred, serve with a hearty chunk of feta on the side.
