Mediterranean Pasta with tomatoes, artichoke, garlic, and lemon. A fast, healthy pasta recipe that's easy to make and filled with bright flavor! Keep the recipe vegetarian or serve with chicken or shrimp. A nutritious all-in-one meal.

1 tablespoon kosher salt (plus 1 teaspoon, divided)
6 ounces whole wheat angel hair pasta (whole wheat spaghetti, or similar whole wheat noodles (I recommend DeLallo whole wheat pasta))
4 cloves garlic
2 cups grape tomatoes (or cherry tomatoes)
1 can quartered artichoke hearts ((14 ounces))
1 can whole pitted black olives ((6 ounces))
3 tablespoons good-quality olive oil
1/2 teaspoon ground black pepper
1/4-1/2 teaspoon crushed red pepper flakes
1/4 cup freshly squeezed lemon juice (about 1 lemon)
1/4 cup freshly grated Parmesan cheese
1/4 cup fresh Italian parsley (chopped)

Steps:

  • Bring a large pot of water to a boil and add 1 tablespoon salt. Cook the pasta until al dente. Reserve 1/2 cup of the pasta water, then drain.
  • While the water boils and pasta cooks, prep your vegetables and remaining ingredients: mince the garlic; halve the cherry tomatoes; drain and roughly chop the artichokes; drain and slice the olives in half. Once the vegetables start cooking, the recipe goes quickly, so you want to be ready.
  • Heat the olive oil in a large skillet over medium high heat. Add the tomatoes, garlic, the remaining 1 teaspoon salt, pepper, and crushed red pepper flakes. Cook, stirring frequently, until the garlic is fragrant and the tomatoes begin to break down and release some juices into the oil, 1 to 2 minutes.
  • Add the pasta to the skillet and toss to coat. Add the artichokes and olives. Drizzle the lemon juice over the pasta. Continue tossing and cook for 1 to 2 minutes, until warmed through. If the pasta seems too dry, add a splash of the reserved pasta water to loosen it. Taste and adjust the salt and pepper as desired. Remove from heat and sprinkle with Parmesan and parsley. Toss once more and enjoy.

2 tablespoons lemon juice
1/4 cup red wine vinegar
2 tablespoons light olive oil
1 teaspoon sugar
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon fresh coarse ground black pepper
2 cups uncooked medium pasta shells
1 small cucumber, scored and sliced (1 cup)
1/2 small red onion, sliced into thin wedges
1 cup grape tomatoes, halved
10 pitted kalamata olives, coarsely chopped
5 cups mixed salad greens
1 (12 ounce) can solid albacore tuna in water, drained and flaked
1/2 cup feta cheese, crumbled

Steps:

  • Whisk dressing ingredients together in a small bowl. Set aside.
  • Cook pasta according to package directions. Drain and rinse under cold running water. Drain again.
  • Place pasta in a large bowl. Add vegetables, olives, salad greens and tuna. Pour on vinaigrette, toss to coat.
  • Sprinkle with feta cheese.

A different take on stuffed shells...this is a recipe I clipped from a magazine about 10 years ago. It's kind of special but I've also done this after work, it's that quick to get together.

24 large pasta shells
1 tablespoon olive oil
1 medium onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (8 ounce) package crumbled feta cheese
1 (8 ounce) container part-skim ricotta cheese
2 tablespoons chopped fresh dill
1/4 teaspoon fresh coarse ground black pepper
2 large eggs
1 (1 7/8 ounce) package cream of spinach soup mix
fresh dill sprig (to garnish)

Steps:

  • Prepare jumbo shells as label directs, but do not use salt in the water.
  • Meanwhile, in a nonstick 12-inch skillet over medium-high heat, in hot olive, oil, cook onion until tender and lightly browned, stirring occasionally; remove skillet from heat; stir in spinach, feta cheese, ricotta cheese, chopped dill, pepper and eggs.
  • Preheat oven to 375°; drain shells, rinse with cold water and drain again; fill each shell with 1 rounded tablespoon of cheese mixture.
  • Prepare soup mix as label directs, but simmer soup over medium-high heat for only 1 minute to thicken sauce slightly; pour sauce into a shallow 2 1/2-qt.

  • Cover and bake shells 25 minutes or until hot and bubbly; garnish with dill for serving.
