8 ounces dry orzo
1 cup grape tomatoes (quartered)
2 persian cucumbers (quartered)
½ cup crumbled feta cheese
½ cup kalamata olives (sliced)
¼ cup diced red onions
¼ cup chopped fresh dill
1 small shallot (minced)
3 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon dried oregano
4 tablespoons olive oil
Kosher salt to taste
freshly cracked black pepper to taste

Steps:

  • Bring a large pot of heavily salted water to a boil. Cook orzo until al dente. Drain and run cool water over it until it's cooled.
  • Make the dressing. In the bottom of a large bowl, mix shallot, lemon juice, Dijon mustard and oregano. Slowly stream in olive oil, whisking constantly. Season to taste with salt and pepper and set aside.
  • Add the cooled orzo, tomatoes, cucumbers, feta, olives, red onions, and dill to the large bowl with the shallot dressing. Season to taste with salt and pepper. Toss to coat and serve immediately.

1/3 cup extra-virgin olive oil
1 lemon, juiced
1 clove garlic, minced
Kosher salt and freshly ground black pepper
12 ounces orzo pasta
One 15-ounce can chickpeas, drained.
1 1/2 cups red grape or cherry tomatoes
1 1/2 cups yellow grape or cherry tomatoes
1 1/2 cups kalamata olives, halved
1 1/2 cups crumbled feta cheese, plus more for topping
3 tablespoons minced fresh parsley, plus more for topping
1 red onion, diced
Kosher salt and freshly ground black pepper

Steps:

  • For the dressing: In a jar or bowl, mix together the olive oil, lemon juice, garlic and some salt and pepper until totally combined.
  • For the salad: Bring a pot of water to a boil and cook the orzo according to the package directions. Drain and let cool.
  • Place the orzo, chickpeas, red and yellow tomatoes, olives, feta, parsley and onions in a large mixing bowl and pour the dressing over the top. Stir to combine and taste; add salt and pepper if needed. Refrigerate at least 1 hour before serving.
  • Top with more feta and parsley and serve as a main dish salad or with grilled chicken, fish or burgers!

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

I got this recipe from a friend who got it from Cooking Light. It is delicious and healthy for get-togethers, potlucks, or as a side dish at dinner or lunch. Enjoy! Original recipe calls for 1/4 tsp pf salt, but I found that to be too bland.

2 cups Baby Spinach, chopped
1/2 cup sun-dried tomato, oil-packed, drained
3 tablespoons red onions, chopped
3 tablespoons kalamata olives, chopped and pitted
1/2 teaspoon salt
1/2 teaspoon black pepper
1 (6 ounce) jar artichoke hearts, marinated, undrained
3 ounces feta cheese, crumbled

Steps:

  • Cook the pasta according to instructions on package. Drain and rinse under cool water.
  • Add orzo to spinach, sun-dried tomatoes, red onion, kalamata olives, salt, and pepper in a large bowl.
  • Drain the artichoke hearts, but keep the marinade for later.
  • Coarsely chop artichoke hearts and add to orzo.
  • Add marinade and feta cheese.
  • Mix well.
  • Add more salt if needed.

1 cup uncooked orzo pasta (rice-shaped pasta, about 8 ounces)
2 cups Baby Spinach, chopped
1/2 cup sun-dried tomato packed in oil, chopped and drained
3 tablespoons red onions, chopped
3 tablespoons kalamata olives, pitted and chopped
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 (6 ounce) jar marinated artichoke hearts, undrained
3/4 cup feta cheese, crumbled and divided

Steps:

  • Cook the orzo according to package directions. Drain; rinse with cold water.
  • Combine orzo, spinach, and next 5 ingredients (through salt) in a large bowl.
  • Drain artichokes, reserving marinade.
  • Coarsely chop artichokes, and add them along with the reserved marinade and 1/2 cup of feta cheese to orzo mixture, tossing gently to coat.
  • Sprinkle each serving with remaining feta cheese.
