Steps:
- In 3- to 4-quart slow cooker, mix all ingredients except tomatoes, olives and cheese.
- Cover; cook on Low heat setting 3 to 4 hours or until lentils are tender.
- Stir in tomatoes and olives. Increase heat setting to High. Cover; cook 15 minutes longer. Top with cheese.

Steps:
- sort and rinse lentils.
- cook in unsalted water, enough to cover plus one inch, over medium heat until tender, about 20-25 minutes.
- drain liquid, reserving 1 cup.
- add back 1/2 cup liquid and spinach leaves, cover pot and cook on medium-low heat, stirring occasionally, until spinach is wilted and mixed into lentils, about 3 minutes.
- add remainder of reserved liquid, lemon juice, olive oil and dried mint.
- continue to cook over medium-low heat, stirring occasionally, until most of the liquid is absorbed, 5-10 minutes.
- add salt and pepper to taste.

- In a small saucepan, saute carrot and onion in oil until tender. Add the lentils, peas, garlic and capers; cook and stir 3 minutes longer., Add the water, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 45-50 minutes or until tender. Stir in lemon juice., Spritz fillets with butter-flavored spray; sprinkle with salt and pepper. Broil 4-6 in. from the heat for 7-9 minutes or until fish flakes easily with a fork. Serve with lentil mixture.
