This delicious slow cooker meal of chicken and vegetables pairs up nicely with couscous and pita bread.

1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon ground coriander
1 teaspoon salt
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
8 bone-in chicken thighs, skin removed
1 (15 ounce) can chickpeas, drained
1 (14.5 ounce) can diced tomatoes, undrained
12 marinated artichoke hearts, drained
4 large carrots, chopped
4 large garlic cloves, halved
1 (3 inch) piece cinnamon stick
1 tablespoon olive oil, or more as needed
1 large sweet onion, halved and thinly sliced
½ pound green beans, trimmed and halved
1 red bell pepper, seeded and cut into 1-inch pieces
¼ cup coarsely chopped cilantro
3 cups water
2 cups couscous

Steps:

  • Combine turmeric, ginger, coriander, salt, cumin, and cayenne pepper in a small cup. Rub mixture over chicken and let sit at least 30 minutes.
  • Combine chickpeas, diced tomatoes, artichoke hearts, carrots, garlic, and cinnamon stick in the bottom of a 6- to 7-quart slow cooker.
  • Heat olive oil in a large nonstick skillet over medium-high heat. Add chicken and brown, about 4 minutes per side. Transfer chicken to the slow cooker, bone-side-up. Add onion to the same skillet. Saute over medium-high heat until onions have taken on a yellow color from turmeric and are starting to brown on the edges, about 5 minutes. Transfer to the slow cooker.
  • Cover the slow cooker and cook on Low for approximately 2 hours.
  • Place green beans and bell pepper over chicken. Cover and cook approximately 3 hours more.
  • Meanwhile, boil 3 cups of water in a saucepan. Add couscous and stir. Cover the pot and turn off the heat. Let sit until water is absorbed and couscous is tender, 5 to 10 minutes.
  • Place hot couscous on each plate and top with chicken and vegetables. Spoon juices from the slow cooker over each serving.

1/2 cup lemon juice
3 tablespoons olive oil
2 teaspoons dried rosemary leaves
1/2 teaspoon salt
1/4 teaspoon pepper
8 cloves garlic, chopped
6 chicken thighs (about 2.25 lb)
2 large red potatoes, cut into 1/2-inch pieces
2 small zucchini, cut into 1-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces, pieces separated

Steps:

  • In small bowl or measuring cup, mix marinade ingredients.
  • In large resealable food-storage plastic bag, place chicken thighs. In another large resealable food-storage plastic bag, place potatoes, zucchini, bell pepper and onion. Pour half of the marinade over contents in each bag. Seal bags; turn to coat contents with marinade. Refrigerate at least 30 minutes but no longer than 6 hours, turning bags occasionally.
  • Heat oven to 400°F. Line 15x10x1-inch pan with foil. Place chicken thighs, skin side up, on one side of pan and vegetables on other side of pan. Pour any remaining marinade over chicken and vegetables.
  • Bake 35 to 45 minutes or until vegetables are tender and juice of chicken is clear when thickest part is cut to bone (180°F), spooning juice in pan over chicken and vegetables halfway through bake time. Sprinkle with shredded Parmesan cheese if desired.

½ pound baby red potatoes, cut in half
1 zucchini, halved lengthwise and cut into 1 inch slices
1 red onion, cut into 1/2-inch thick wedges
2 red bell peppers, cut into 1 inch pieces
12 cherry tomatoes
2 tablespoons minced garlic
½ teaspoon dried thyme leaves
¼ teaspoon crushed red pepper flakes
Salt and freshly ground pepper to taste
2 tablespoons olive oil
2 (5 ounce) skinless, boneless chicken breast halves
4 (1/2 ounce) slices thinly sliced prosciutto di Parma

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • MIx potatoes, zucchini, onion, bell peppers, and tomatoes into a large bowl; add garlic, thyme, and red pepper flakes. Toss vegetable mixture and season with salt and pepper. Pour olive oil over the vegetables and toss to coat; pour into a glass baking dish. and bake in preheated oven for 15 minutes.
  • Roast vegetables in preheated oven until tender, about 15 minutes.
  • Season chicken with salt and pepper. Wrap each breast with two slices of prosciutto and secure prosciutto in place with toothpicks; place atop he vegetables and continue baking until the chicken has firmed and is no longer pink in the center, about 30 minutes.
  • Remove chicken from the baking dish to cool for 5 minutes. Divide the roasted vegetables among two dinner plates. Remove toothpicks from chicken; cut each piece of chicken into five diagonal slices. Fan the chicken out on top of the vegetables.

French Roast Chicken and Mediterranean Vegetables in Wine image

A very tasty & colourful recipe and an easy but impressive way of cooking Roast Chicken with MOST of the Vegetables & some of the Wine!! I have been known to cook this in my crockpot too; the vegetables need to be pre-cooked & the chicken browned if possible for the Crockpot recipe, but it works very well. All that you need to complete this meal, is maybe some Jacket Potatoes or even some of my Recipe #193370 and good company, and it's done! The Roast Vegetables stated in the ingredients, are my French Roast Vegetables with Hot Balsamic & Olive Oil Dressing, Recipe #195130.

4 lbs chicken pieces or 6 chicken breasts, skin on and bone in
1 tablespoon olive oil
4 fluid ounces dry white wine
salt and black pepper
fresh thyme or fresh rosemary
roasted vegetables

Steps:

  • Make a batch of French Roast Vegetables with Hot Balsamic & Olive Oil Dressing, (Recipe #195130) up beforehand - OR use your own roasted vegetable or Ratatouille recipe if you wish!
  • Preheat oven to 180C or 360°F.
  • Grease a sturdy roasing tin or tray with a little of the olive oil.
  • Brush the rest of the olive oil over the chicken or chicken breasts/pieces & season liberally with salt & freshly ground black pepper.
  • Place the fresh thyme or rosemary over the top of the chicken and roast in the oven for about 45 minutes to 1 hour, dependant on the size of your chicken and/or chicken pieces. Remove from the oven and drain any excess fat away.
  • Add the roasted vegetables & wine to the chicken, gently mix through or scatter around the sides of the whole chicken and turn up the oven to 220C or 450°F.
  • Put the chicken and vegetables back into the oven to roast for a further 15 to 25 minutes; the chicken should be just falling off the bone, golden brown and crispy and the vegetables should be heated through & charred slightly!
  • Serve with jacket potatoes or peppered potato wedges, Recipe #193370.
  • N.B.
  • I have cooked the vegetables alongside the chicken before, but I find that it takes up too much of the chicken fat & juices - great if you are wanting to cook a Chicken & Vegetable casserole, but in this dish I wanted the flavours to be independant of each other!

1 lb tiny new potatoes, thinly sliced
2 zucchini, diagonally sliced
2 red onions, cut into wedges
2 yellow peppers, seeded and cut into chunks
8 roma tomatoes, halved
salt and pepper
20 black olives, pitted
4 boneless skinless chicken breasts
5 tablespoons olive oil
2 1/2 tablespoons pesto sauce

Steps:

  • Preheat the oven to 400°F
  • Spread the potatoes, zucchini, onion, pepper and tomatoes in a shallow roasting tin and scatter over the olives. Season with salt and coarsely ground black pepper.
  • Slash the flesh of each chicken breast 3-4 times using a sharp knife, then lay the chicken on top of the vegetables.
  • Mix the olive oil and pesto together until well blended and spoon evenly over the chicken.
  • Cover the tin with foil and cook for 40 minutes.
  • Remove the foil from the tin.
  • Return to the oven and cook for a further 10 minutes until the vegetables are juicy and look tempting to eat and the chicken is cooked through (the juices should run clear when pierced with a skewer).

1/3 cup HEINZ Apple Cider Vinegar

  • Mix all ingredients in cruet or medium bowl. Remove 1/4 cup of the dressing mixture; place in small bowl. Refrigerate for later use.

1 large courgette, diagonally sliced
1 red onion, cut into wedges
1 yellow pepper, seeded and cut into chunks
6 firm plum tomatoes, halved
12 black olives, pitted
2 skinless boneless chicken breast fillets, about 150g/5oz each
3 tbsp olive oil
1 rounded tbsp green pesto

Steps:

  • Preheat the oven to 200C/ Gas 6/fan oven 180C. Spread the potatoes, courgette, onion, pepper and tomatoes in a shallow roasting tin and scatter over the olives. Season with salt and coarsely ground black pepper.
  • Slash the flesh of each chicken breast 3-4 times using a sharp knife, then lay the chicken on top of the vegetables.

1 green bell pepper, cored and seeded, cut into about 6 wedges
1 red bell pepper, cored and seeded, cut into about 6 wedges

Fresh ground black pepper
6 tablespoons EVO, divided
1/2 teaspoon cumin
1/4 teaspoon dreid oregano
1 1/2 pound boneless, skinless chicken breasts, cut into 2 inch pieces
10 ounce (or larger) tub prepared hummus
4 to 8 rounds of flatbread or individuela-size pita bread pockets

Steps:

  • Preheat broiler Baking sheet; line with foil, spray with cooking spray Large bowl; combine vegetables, drizzle with 2 tablespoons EVO, toss to coat evenly. Transfer to one half of the baking sheet. Season with salt & pepper. Set aside Large bowl; stir together remaining oil, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, cumin & oregano. Add chicken, toss to coat well. Arrange chicken in single layer on the other half of the baking sheet. Place baking sheet about 6 inches from the broiler. Cook until done, about 8 minutes. Arrange on large round serving plate with hummus in a small bowl in the middle, with the chicken, vegetables & flatbread all around. Serve immediately

2 tablespoons olive oil
1 onion, cut into wedges
1 garlic clove, crushed
500 g chicken breast fillets, cut into pieces and lightly dusted with plain flour
400 g chopped tomatoes
500 g frozen broccoli carrots cauliflower mix
10 kalamata olives, pitted
1 tablespoon fresh parsley, chopped

Steps:

  • Heat oil in a large frying pan and fry onion and garlic for 1 minute, move to side of pan.
  • Add chicken pieces and fry until golden brown. Stir in tomatoes and vegetables.
  • Cover and simmer for 15-20 minutes stirring occasionally. Stir in olives, and garnish with parsley. Serve with couscous, pasta, or rice.
