Mediterranean Chicken Breasts With Tomatoes and Olives image

This is very yummy and makes a good weeknight meal. I serve it with short-grain brown rice with olive oil and grated parmesan cheese and a green vegetable.

1 tablespoon olive oil
1 teaspoon olive oil
4 boneless skinless chicken breasts, cut into 1 inch pieces
1 medium onion, chopped
1 teaspoon minced garlic clove (about 2 cloves)
1 (15 ounce) can diced tomatoes, with their liquid
1/2 cup kalamata olive, pitted and chopped (or use green olives)
1 teaspoon dried oregano (or 1 tbsp. fresh)
1 teaspoon dried basil (or 1 tbsp. fresh)

Steps:

  • In a large cast-iron or nonstick skillet, heat the tablespoon of olive oil over medium heat. Add the chicken and saute until it is browned on all sides and just cooked through (about 7-10 minutes). Remove chicken and place on a plate.
  • Add the teaspoons of olive oil and the onions to the pan, and cook for 2 minutes. Add the garlic and cook for another minute. Add the tomatoes olives, oregano and basil and cook the sauce for 5-8 more minutes.
  • Add the chicken and cook until it is heated through.
  • Put the chicken on plates (over rice if desired), and spoon the sauce equally over the chicken.

1/2 cup pecorino romano cheese, grated
1/4 cup dry breadcrumbs
1 teaspoon dried basil
1/4 teaspoon dried garlic
1/4 teaspoon paprika
1/4 teaspoon sea salt or 1/4 teaspoon salt, to taste
1/4 teaspoon fresh ground black pepper or 1/4 teaspoon fresh ground black pepper, to taste
3 tablespoons olive oil
6 large boneless skinless chicken breast halves (about 2lb/1kg)

Steps:

  • Mix together the first seven ingredients (from the cheese through to the black pepper) on a piece of waxed paper - saves on washing up later! - or if you prefer on a plate; put the oil in a shallow dish.
  • Dip the chicken breast halves in the oil, then coat them evenly with the cheese/breadcrumb mixture.
  • Spray a non-stick skillet with cooking spray and set over a medium heat; add the chicken and cook, turning once, for 15 minutes, or until golden brown and the juices run clear.

1 cup crumbled feta cheese
1/3 cup chopped oil-packed sun-dried tomatoes
4 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons olive oil from sun-dried tomatoes, divided
1 teaspoon Greek seasoning

Steps:

  • Preheat oven to 375°. In a small bowl, mix cheese and tomatoes. Pound chicken breasts with a meat mallet to 1/4-in. thickness. Brush with 1 tablespoon oil; sprinkle with Greek seasoning. Top with cheese mixture. Roll up chicken from a short side; secure with a toothpick., Place in a greased 11x7-in. baking dish, seam side down; brush with remaining oil. Bake, uncovered, 30-35 minutes or until until a thermometer reads 165°. Discard toothpicks before serving.

2 lbs boneless skinless chicken breasts, pounded
1 lemon, juice of
1/4 cup olive oil
1 teaspoon ground cumin
salt, to taste
pepper, to taste
2 heads romaine lettuce, shredded
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red onion, chopped
2 carrots, shredded
2 cups pita chips, plain
1/2 cup extra virgin olive oil
1 lemon, zest of, and reserve
1/4 cup lemon juice
1 tablespoon Dijon mustard
2 tablespoons honey
2 tablespoons fresh dill, chopped
salt, to taste
pepper, to taste

Steps:

  • Combine marinade ingredients in a bag or glass dish and add the chicken to marinate for 30 minutes.
  • Grill about 5-6 minutes per side or broil 6-7 minutes per side; When slightly cooled, slice chicken breasts on the diagonal and set aside.
  • Make the dressing by combining all ingredients except for the oil and then slowly whisk in the oil, taste and adjust seasoning and set aside until ready to eat.
  • In a salad bowl, combine all the greens and vegetables and pita chips with chicken and toss.
  • Whisk the dressing and add to the salad and toss more and serve immedietly.

1 red bell pepper
2 garlic cloves, minced
1/4 cup feta cheese, crumbled (1 ounce)
2 tablespoons kalamata olives, finely chopped
1 1/2 tablespoons fresh basil, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
8 boneless skinless chicken breasts (6 ounces each)
salt and pepper, to taste
dried basil, to taste

Steps:

  • Preheat broiler.
  • Cut bell pepper in half lengthwise and remove seeds and membranes. Place pepper halves on foil-lined baking sheet, skin side up. Broil 15 minutes or until blackened. Place in air-tight container for 15 minutes. After 15 minutes, finely chop the 2 bell pepper halves.
  • Mix together chopped bell pepper, garlic, cheese, olives, basil, salt, and pepper in a bowl.
  • Cut a horizontal slit in thickest portions of each chicken breast to form a pocket (but do not cut all the way through). Spoon the pepper/feta/olive mixture into each pocket. Close the opening with a toothpick. Season chicken on both sides with salt and pepper, and sprinkle the top side with dried basil.
  • Place chicken on broiler rack, and broil 6-8 minutes each side, or until done (it may take additional time, depending on thickness of the chicken breasts). Remove from oven, loosely wrap with foil and let stand 10 minutes before serving.

4 boneless skinless chicken breast halves or 1 -1 1/2 lb boneless skinless chicken breast half
1/4 cup crumbled reduced-fat feta cheese or 1 ounce crumbled reduced-fat feta cheese
1/4 cup finely chopped drained bottled marinated artichoke hearts
2 tablespoons finely chopped drained bottled roasted sweet red peppers
2 tablespoons thinly sliced green onions
2 teaspoons snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
1/8 teaspoon ground black pepper
nonstick cooking spray

Steps:

  • 1. Using a sharp knife, cut a pocket in each chicken breast by cutting horizontally through the thickest portion to, but not through, the opposite side. Set aside.
  • 2. In a small bowl, combine feta, artichoke hearts, roasted peppers, green onion, and oregano. Spoon evenly into pockets in chicken breasts. If necessary, secure openings with wooden toothpicks. Sprinkle chicken with black pepper.
  • 3. Coat an unheated large nonstick skillet with cooking spray. Preheat skillet over medium heat. Add chicken. Cook for 12 to 14 minutes or until no longer pink (170 degrees F), turning once.

2 chicken breasts (skinless or boneless for faster and better taste)

1/4 cup olive oil
2 tablespoons italian seasoning
ziploc bag
frozen vegetables (optional)

Steps:

  • Sprinkle and rub salt and pepper on chicken breast.
  • Sprinkle italian seasoning over chicken breast making sure that it has the seasoning all over.
  • In a ziploc bag pour the olive oil and seal it, then rub the bag to spread the oil in bag.
  • Place seasoned chicken breasts in the bag and rub again thoroughly.
  • Place to marinate in refrigerator for at least two hours.
  • After your marinade is done, place on preheated grill in medium-low and cook both sides for about 15 to 20 minute.
  • In the meantime, you can be steaming your veggies -if you want to accompany it- or just serve as is. Enjoy!

4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons olive oil, divided
1 1/2 teaspoons minced fresh garlic
1 (14 ounce) can Italian-style diced tomatoes, undrained
1/4 cup minced kalamata olive
1/2 cup chicken broth
1/4 cup crumbled feta cheese

Steps:

  • Season the chicken breasts with salt and pepper.
  • Heat one tablespoon of the olive oil in a large, heavy skillet over mediun-high heat.
  • Place chicken breasts in pan and cook for about 5 minutes per side. Remove chicken from pan, set aside, and keep warm.

4 boneless skinless chicken breast halves
1 tablespoon grated lemon peel
5 tablespoons fresh lemon juice, divided
2 tablespoons olive oil, divided
1 teaspoon olive oil, divided
1 garlic clove, finely chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 garlic cloves, roasted and mashed
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1 medium tomatoes, seeded and finely chopped
1/4 cup small green pimento stuffed olive, thinly sliced
3 tablespoons capers, rinsed
2 tablespoons fresh basil leaves, finely sliced
1 large Hass avocado, ripe, finely chopped

Steps:

  • In sealable plastic bag, combine chicken and marinade of lemon peel, 2 tablespoons lemon juice, 2 tablespoons olive oil, garlic, salt and pepper. Seal bag and refrigerate for 30 minutes.
  • In bowl, whisk together remaining 3 tablespoons lemon juice, roasted garlic, remaining 1/2 teaspoons olive oil, sea salt and fresh ground pepper. Mix in tomato, green olives, capers, basil and avocado; set aside.
  • Remove chicken from bag and discard marinade. Grill over medium-hot coals for 4 to 5 minutes per side or to desired degree of doneness.
  • Serve with Avocado Tapenade.
