Middle Eastern Rice with Black Beans and Chickpeas image

I got this recipe from a friend who is from Bethlehem. The flavors are just delicious. The possibilities of add-ins are endless.

1 tablespoon olive oil
1 clove garlic, minced
1 cup uncooked basmati rice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cayenne pepper
1 quart chicken stock
1 ½ pounds ground turkey
2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1 bunch chopped fresh cilantro
1 bunch chopped fresh parsley
¼ cup pine nuts
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in garlic, and cook 1 minute. Stir in rice, cumin, coriander, turmeric, and cayenne pepper. Cook and stir 5 minutes, then pour in chicken stock. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Place the turkey in a skillet over medium heat, and cook until evenly brown.
  • Gently mix cooked turkey, garbanzo beans, black beans, cilantro, parsley, and pine nuts into the cooked rice. Season with salt and pepper.

Number Of Ingredients 12

you will need Great Northern White Beans in the basic recipe, as well as:
Basic ingredients for rice and beans
1 cup dry brown rice--L acid
1 can drained and rinsed beans, or 2 cups cooked--L acid
1 onion, chopped--H alk
1 clove garlic, minced--M alk
1 tbsp vegetable oil-- sub avocado oil--L alk
2 stalks chopped celery--H alk
1 small can (2.25 oz) black olives--sub green--M alk
juice of 1 lemon--M alk
1/3 cup fresh chopped parsley
2 tsp dry dill weed

Steps:

  • Cook the brown rice in a rice steamer or follow the directions here. Heat up the oil in a large pan over medium-high heat and fry the onion for 5 minutes. Add the garlic and fry for an additional 5 minutes. Stir in the beans and heat through. Add salt and pepper to taste. Serve with rice. Add the celery and olives to the bean and onion mixture and fry for a few minutes to soften. Stir in the lemon juice and parsley and heat through. Stir the dill into the rice. Add salt and pepper to taste.

1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered
6 ounces fresh baby spinach (about 8 cups)
Additional olive oil, optional

Steps:

  • In a 12-in. skillet, heat oil over medium-high heat; saute onion until tender, 3-5 minutes. Add garlic; cook and stir 1 minute. Stir in tomatoes, Worcestershire sauce and seasonings; bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost evaporated, 6-8 minutes., Add beans, artichoke hearts and spinach; cook and stir until spinach is wilted, 3-5 minutes. If desired, drizzle with additional oil.

2 ¼ cups water
1 cup uncooked white rice
1 tablespoon olive oil
1 sweet onion, chopped
1 (1.41 ounce) package sazon seasoning
1 ½ teaspoons adobo seasoning
½ teaspoon minced garlic
½ teaspoon ground black pepper
1 (15 ounce) can red beans, drained
1 (2.25 ounce) can pitted green olives

Steps:

  • Bring water, rice, and olive oil to a boil in a saucepan over high heat. Mix in onion, sazon seasoning, adobo seasoning, garlic, and black pepper. Reduce heat to medium-low; cover and cook for 10 minutes. Add beans and olives and cook until liquid has been absorbed, about 10 minutes. Mix before serving.
