MEATLOAF WITH VODKA SAUCE
When I saw Carol Perricone's recipe for Homemade Vodka Sauce, this idea for an Italian meatloaf popped into my mind. I've used my basic meatloaf recipe, with Italian-inspired ingredients. Your dinner guests will want plenty of sauce, so whatever doesn't fit onto the meatloaf platter you can put in a gravy boat and pass with a...

Steps:
- 1. Prepare the https://www.justapinch.com/recipes/main-course/main-course-pasta/homemade-vodka-sauce.html. Keep warm. Make breadcrumbs by buzzing about 3 slices of Italian bread (or your choice) in a food processor or blender. Set aside.
- 2. Have all ingredients at room temperature. In a large mixing bowl, combine ground meats, parmesan cheese, basil, tomato paste, cream, eggs, and salt & pepper. Gently fold in breadcrumbs. Mix until uniform.
- 3. Turn mixture into a greased tube pan or Bundt pan. Bake at 350°F for 1 hour. Allow to cool in pan 10 minutes, then turn out on a serving platter with a high rim (to catch the vodka sauce). Pour the hot vodka sauce over the meatloaf, filling up the middle of the meatloaf.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
