1 1/2 pounds ground beef
1 cup bread crumbs
1 onion, finely diced
1 egg, lightly beaten
1 1/2 teaspoon salt
1/2 teaspoon pepper
1 (8 ounce) can tomato paste
2 tablespoons brown sugar
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons Worcestershire sauce
12 slices bacon
5 potatoes
1/4 cup Cheddar cheese, shredded
2 tablespoons butter
1/4 cup milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F. MEATLOAF: Line your muffin tin with the bacon so that each tin is circled by one strip. Mix together the beef, bread crumbs, onion, egg, salt, pepper, tomato paste, sugar, mustard, and Worcestershire sauce. Form the meat into 12 equally sized balls and place them into the bacon-lined muffin tins. Fold the top of the bacon over, if needed. Pop them into the oven for 45 minutes to 1 hour, or until the meat is cooked through and the bacon is crisp. POTATOES: While the meatloaf is cooking, prepare your mashed potatoes. Dice up the potatoes and boil them in salted water until they're soft. Drain the potatoes, pop them into a mixing bowl, and mash them with a fork until they're completely smooth. Add your butter, cheese, milk, salt, etc and mix until fully combined. Move your mashed potatoes into a piping bag (or a zip-lock with an edge cut off) and save it until the meatloaf is ready. CUPCAKE: Once the meatloaf is ready, take them out of the oven, and pipe them with the mashed potatoes! After they're all piped, pop them back into the oven, and turn your heat up to 400-500 degrees F. Heat until the tops of the potatoes are golden brown (it should be very quick - no more than 5-6 minutes). Remove them from the oven, let cool for a bit, and enjoy!

2 lb ground beef, lean
2 Tbsp worcestershire sauce
1/2 c diced onions
2 1/2 tsp seasoned salt
2 tsp ground mustard,dry
2 tsp brown sugar
1/4 c ketchup
1 tsp pepper
1/2 c kahlua and cream
1/3 c milk
1 Tbsp italian seasoning
2 tsp minced garlic
1/2 c yellow cornmeal
1/2 pkg seasoned stuffing mix,crushed

Steps:

  • 1. Preheat oven to 375^. Line a cookie sheet with foil -making a flat surface with the edges turned up so the grease will not seep out..spray lightly.Set aside. Place the Stuffing in a plastic bag and roll coarsely; place them out evenly on a sheet of waxed paper.
  • 2. Place the meat in a large bowl and add all the ingredients..except the stuffing crumbs, these make up the crust; mix well- I use plastic gloves or you can use baggies on my hands and mix the heck out of the mixture..
  • 3. Form the mixture into a big fat log-or like a big ham. Place it on the crumbs and then turn over to coat the other side and any spots without crumbs. Place loaf on the sprayed foil trough.
  • 4. Bake in oven at 375^ for 30 minutes then turn oven down to 350^. Continue baking for another 40 minutes or until center of meat reaches 160^. Remove meat to a serving platter , using 2 egg spatulas.Enjoy! Hope you like it....

1 1/2 lbs ground beef
1 cup crushed Ritz cracker
1/3 cup milk
1/4 cup chopped onion
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 egg
1/2 teaspoon salt
1/8 teaspoon pepper
1 (8 1/4 ounce) can crushed pineapple, undrained
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons cornstarch

Steps:

  • Combine meatloaf ingredients.
  • In ungreased 13x9 pan, form mixture into 9x4 loaf.
  • Bake at 350º for 45 minutes.
  • Combine all sauce ingredients in saucepan.
  • Cook over medium heat until boils and thickens,stirring frequently.
  • Spread on top of loaf; bake 15-20 minutes more.
  • Let stand 5 minutes before slicing.

2 tablespoons maple syrup

Steps:

  • Combine apple, ground beef, eggs, breadcrumbs, onion, worcestershire sauce and seasonings.

500 g ground pork
1 onion, chopped fine
1 slice bread, torn up
1 egg, beaten
1/4 teaspoon black pepper, freshly ground
1/4 cup barbecue sauce
3 garlic cloves, pressed (or very finely chopped)
1 onion, cut in half and sliced (so you end up with semi-circles of onion)
1/4 cup barbecue sauce
2 tablespoons brown sugar

Steps:

  • For the meat loaf, combine bread, egg, barbecue sauce, garlic, pepper and chopped onion. Crumble pork and beef over top and mix well with hands or wooden spoon.
  • Place in a loaf pan and bake at 350F, 175C for an hour or until fully cooked. Let rest or sit for 5 minutes and drain off any fat.
  • Meanwhile, cook the sliced onion in a little water on medium heat until lightly golden. Add more water if necessary to prevent sticking.
  • Add barbecue sauce and sugar and mix well. Simmer on low heat until thick.
  • Pour topping over cooked meatloaf or serve along side meatloaf.

1 teaspoon vegetable oil
3 green onions, chopped
2 garlic cloves, minced
1 carrot, diced
1 stalk celery, diced
1 sweet green pepper, diced
1 egg
1/4 cup chili sauce
1/2 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dry mustard
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
4 potatoes (about 2 lb./1 kg)
1/2 cup buttermilk
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In nonstick skillet, heat oil over medium heat; cook onions, garlic, carrot, celery and green pepper until softened, 5 to 8 minutes. Let cool.
  • In bowl, bet egg, chili sauce and 2 tablespoons water. Mix in vegetables, crumbs, salt, basil, thyme, mustard and pepper. Mix in beef. Pat into 9-inch pie plate. Bake in 350°F oven for 50 to 60 minutes or until meat thermometer registers 170°F Drain off fat.
  • TOPPING: Meanwhile, peel and cut potatoes into quarters. In saucepan of boiling salted water, cook potatoes for 15 to 20 minutes or until tender. Drain and return to pot. Mash with potato masher; beat in buttermilk, butter, salt and pepper. Spread over meat loaf. Broil for 1 to 2 minutes or until golden. Makes 6 servings.

Myron's excellent meatloaf recipe is seasoned with ketchup and chopped vegetables, and it's cooked in the slow cooker. This is a basic crockpot meatloaf made with ground beef and seasonings.

2 slices bread, in small cubes
milk, about 1/4 cup
2 pounds of lean ground beef, 85% or leaner
ketchup (about 1/2 cup), divided
1 small onion, finely chopped
1/2 teaspoon salt
1/4 teaspoonfreshly ground black pepper

Steps:

  • In a large bowl beat the eggs - add bread cubes. Add the milk and blend well.Add the ground beef, about 1/4 cup of ketchup, chopped onion, salt, and pepper. Mix well with your hands.See below for how to make foil handles. Place the beef mixture in a slow cooker or Crock Pot. Shape to fit and flattenthe top.Pour ketchup on top (enough to cover completely).C​cover and cook on low for 6 to 9 hours.
  • Myron's Notes: I've also used crushed crackers instead of bread, and salsa instead of the ketchup. With only 1 lb. of meat, you'll probably want to use just one egg.Buon appetito!How to Make Foil "Handles"Take two sheets of foil, about 24 inches in length. Fold them a few times to make long wide strips. Place them in the slow cooker at right angles to each other, letting the ends hang over the edge of the slow cooker.
