TURKEY AND WILD MUSHROOM MEATLOAF PATTIES WITH PAN GRAVY



Turkey and Wild Mushroom Meatloaf Patties with Pan Gravy image

3 tablespoons extra-virgin olive oil, 2 turns of the pan for the mushrooms, 1 turn for the patties
8 cremini mushrooms, (baby portobellos), chopped
8 shiitake mushrooms, chopped
1 shallot, chopped
Salt and pepper
1 1/3 pounds ground turkey, the average weight of 1 package
3 or 4 sprigs fresh sage, leaves chopped, about 2 tablespoons
1 tablespoon Worcestershire sauce, eyeball it
1/2 cup Italian bread crumbs
1 egg, beaten
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock
1 teaspoon poultry seasoning

Steps:

  • Heat a nonstick skillet over medium high heat. Add oil, 2 turns of the pan. Add chopped mushrooms and shallots and season with salt and pepper. Saute mushrooms 5 or 6 minutes until dark and tender. Remove from heat. Transfer mushrooms to a bowl and return pan to stove top to preheat to cook patties.
  • Add turkey to the mushroom mixture. Make a well in the center of the meat. Add sage, Worcestershire sauce, bread crumbs and beaten egg and season with salt and pepper. Mix turkey meat loaf and make a small 1-inch patty. Place meat in the hot pan and cook 1 minute on each side. Taste the mini patty to help you adjust seasonings. Divide meat loaf mixture into 4 equal parts by scoring the meat before you form patties. Form 4 equal oval patties 1 inch thick. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and arrange patties in the skillet. Cook 6 minutes on each side and transfer to a serving plate or individual dinner plates. Return pan to heat and add butter. When butter melts, whisk in flour and cook 1 to 2 minutes. Whisk in stock and season gravy with poultry seasoning, salt and pepper, to taste. Simmer gravy until it reaches desired thickness, and pour over patties, reserving a little to pass at the table.

1 1/3 pounds ground sirloin, 90 percent lean ground beef
1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste*
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce

Steps:

  • Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
  • Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
  • Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
  • Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
  • Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.

1/4 cup ketchup
2 tablespoons sour cream
3/4 cup plain breadcrumbs

1 pound 80/20 ground beef

1 tablespoon Dijon mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Line the glass loaf pan with the bacon, centering the strips lengthwise in the pan, letting the ends hang over the short edge.
  • Lightly beat the eggs in a large bowl. Add the ketchup and sour cream and mix. Add the breadcrumbs, onions and garlic, stirring to incorporate, and sprinkle with salt and pepper. Mix in the sausage, breaking it up to season the egg mixture evenly. Mix in the ground beef, using your hands to mix gently but thoroughly. Press the meatloaf mixture firmly into the loaf pan with the bacon, shaping the meat into a loaf shape. Unmold the meatloaf by turning the pan upside-down, and tapping the bottom to release the meatloaf. Tuck the bacon under the loaf, and place it bacon-side up on a foiled or parchment-lined baking sheet. Bake until the meat registers 160 degrees F, 50 minutes. Let rest 10 minutes before slicing. Serve with Mustard and Sour Cream Gravy.
  • In a saucepan, heat the butter over medium heat, add the onions and saute until the onions are soft, about 6 minutes. Sprinkle the flour on top of the onions and cook for 1 minute, stirring. Turn up the heat to medium-high and whisk in the stock and 1/2 cup water. Cook at a simmer, whisking frequently, until the gravy begins to thicken. Turn off the heat and whisk in the sour cream, and then the mustard and Worcestershire sauce. Taste before adding salt and pepper. Serve on the meatloaf.

2 small ribs celery, finely chopped
3 cloves garlic, finely chopped

3 slices 1-inch-thick, good-quality white bread, crusts trimmed
About 1 cup whole milk
2 pounds ground sirloin
1/4 cup chopped flat-leaf parsley
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
1 large egg plus 1 yolk, lightly beaten
Olive oil cooking spray
2 1/2 to 3 pounds russet potatoes, peeled and chunked*
Salt
1 cup sour cream
1/4 to 1/2 cup half-and-half or heavy cream
3 to 4 tablespoons horseradish, to your taste
Coarse black pepper
1/4 to 1/3 cup chopped chives
4 tablespoons (1/2 stick) unsalted butter
3 tablespoons all-purpose flour
3 tablespoons Worcestershire sauce
Coarse black pepper
3 cups beef stock
1 egg yolk, lightly beaten

Steps:

  • For the meatballs: Preheat the oven to 400 degrees F.
  • Heat a saute pan over medium to medium-high heat; melt the butter. Add the onion, celery and garlic; season with salt, pepper and thyme. Cook to tender, 7 to 8 minutes. Deglaze with the sherry or wine; cool.
  • Soak the bread in milk while the veggies cool.
  • Place the meat in mixing bowl; season with salt and pepper. Squeeze the liquid out of the bread and crumble into the bowl. Add the cooked vegetables, parsley, Worcestershire, mustard and eggs; combine to mix but do not overwork.
  • Place parchment paper on a baking sheet and roll the meat into 24 balls. Spray with cooking spray and roast about 15 to 18 minutes until lightly crispy and golden and cooked through. Cool and store for a make-ahead meal. Reheat, covered, in a preheated 375-degree F oven with a splash of water or they will stick in the bottom of the dish. Once meatballs are hot, uncover and crisp up for 5 minutes.
  • For the mash: Fill a pot halfway with cold water. Peel and add the potatoes as they are chopped or, if you peeled up the potatoes ahead, place in a pot and fill with fresh water. Add enough water to cover the potatoes, then cover the pot and place over high heat to bring to a boil. Once the water boils, remove the lid, salt the water and cook, uncovered, at a low boil until tender to fork. Drain and return to hot pot. Mash the potatoes with the sour cream and cream, a liberal dose of pepper, horseradish and chives; salt to your taste. If you wish to make the potatoes ahead of time and hold them for a couple of hours, place an inch of water in a large pot and bring to boil, then reduce heat to low and place a smaller pot, filled with the potatoes, into simmering water and cover that pot.
  • For the gravy: Melt the butter in saucepan over medium-high heat. Whisk in the flour and bring to a bubble; whisk in the stock and Worcestershire, season with pepper and thicken. Temper the egg yolk by lightly beating a ladle of gravy into it, then whisk into the sauce. Cool and store; reheat over medium heat, adding a little more stock, if necessary, to loosen.
  • Serve in shallow bowls. Spoon in enough potatoes to gently mound up in a bowl, then arrange a few meatballs in the center of the mound. Ladle gravy down over top and garnish with parsley.

MOROCCAN MEATLOAF WITH LEMON HONEY GRAVY AND ZUCCHINI COUSCOUS

1 1/2 pounds ground lamb or chicken
Salt and freshly ground black pepper
1 small onion, peeled
4 cloves garlic, finely chopped
2/3 cup panko bread crumbs
2 tablespoons extra-virgin olive oil
1 large egg, beaten
2 lemons, zested and juiced
1/4 cup pitted, finely chopped green olives
1 tablespoon ground cumin, a scant palmful
1 teaspoon turmeric, 1/3 palmful (for chicken only)
2 pinches ground cinnamon
A handful flat-leaf parsley, finely chopped
2 handfuls fresh mint leaves, finely chopped
4 tablespoons butter
1/2 pound firm zucchini, chopped into small dice
2 1/2 cups chicken stock
1 cup couscous
2 tablespoons all-purpose flour
1 tablespoon Worcestershire sauce
1/4 cup honey

Steps:

  • Preheat the oven to 325 degrees F.
  • In a medium bowl, add the meat, 1 small onion, grated on box grater or with handheld flat grater, directly over mixing bowl. Add 2 cloves finely chopped garlic, panko, about 2 tablespoons of the extra-virgin olive oil, the egg, the zest and juice of 1 lemon. Mix to combine. Add the olives, spices, a handful of parsley and a handful of mint. Combine well. Form the mixture into 4 individual rolls and bake on a parchment lined sheet pan until golden brown, about 35 to 40 minutes. The meat loaves may be made ahead and stored; reheat in pan gravy.
  • Heat a medium shallow pot over medium heat, add 2 tablespoons butter and melt, then add the remaining garlic, and combine. Stir in the zucchini, season with salt and pepper, to taste, and cook for 5 minutes. Add 1 1/2 cups stock to the pan and bring the mixture to a bubble. Add 1 1/2 cups of couscous and remaining handful of chopped mint. Turn off the heat and cover pan. Let stand for 5 minutes, then fluff with a fork.
  • Meanwhile, heat 2 tablespoons butter to a medium skillet over medium to medium-high heat. Whisk the flour into melted butter, then add the Worcestershire sauce and remaining 1 cup of chicken stock, the remaining lemon zest and juice, 1/4 cup honey, and salt and pepper, to taste. Slide the meat loaves into the sauce. (If the meat loaves are cold, tent with foil and gently reheat in low simmering sauce.) Once the meat loaves are warm, transfer them to a serving plate and raise the heat to high. As soon as the sauce becomes syrupy after 1 to 2 minutes, drizzle it over meat and serve with couscous alongside.

1 1/2 pounds ground veal
1 large egg
1/2 cup bread crumbs, a couple of handfuls
1 cup grated Parmigiano-Reggiano
4 to 6 sprigs fresh sage, thinly sliced
Black pepper
3 tablespoons extra-virgin olive oil
10 to 12 cremini (baby portobello mushrooms), quartered
1 clove garlic, crushed
1 cup chicken stock
3 tablespoons butter
2 tablespoons all-purpose flour
3 cups milk
1/4 teaspoon freshly grated nutmeg, eyeball it
1/4 pound prosciutto di Parma, finely chopped (have the deli slice it as thick as bacon, rather than shave it)
1/4 to 1/3 pound Gorgonzola, depending on how cheesy you like it
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 clove garlic, cracked from skin
1 1/4 pounds cleaned kale, 1 large bunch, trimmed and chopped
1 cup dry red wine
Salt and pepper
2 teaspoons lemon zest, eyeball it

Steps:

  • Preheat oven to 400 degrees F.
  • Place potatoes in a pot, cover them with water, then bring water up to a boil; salt it and cook potatoes until fork-tender, 10 to 12 minutes or so.
  • While the potatoes are working, combine veal with egg, bread crumbs, 1/2 cup cheese, sage, salt, and black pepper. Form 4 (1-inch thick) oval shaped meat loaves. Heat a large nonstick skillet over medium-high heat with 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Brown meatloaves 2 to 3 minutes on each side then transfer to a nonstick baking sheet and finish in the oven, 6 to 8 minutes. Return skillet to heat, add another turn of extra-virgin olive oil to the pan and the mushrooms and the garlic. Cook mushrooms until dark and tender, 5 to 6 minutes, then add salt and pepper and 1 cup chicken stock to deglaze the pan.
  • While the mushrooms cook, melt butter over medium heat in a medium saucepot. Add flour and cook 1 to 2 minutes. Whisk in milk and season with nutmeg, salt, and pepper. Reduce the sauce a few minutes to thicken a bit.
  • Drain potatoes and add them back to warm pot. Add half of the milk sauce to potatoes with prosciutto and remaining 1/2 cup cheese, a couple of handfuls. Smash the potatoes to desired consistency and season with salt and pepper to taste.
  • Add the remaining milk sauce to the mushrooms, stir in Gorgonzola cheese to melt, then add the broth and combine. Serve the meatloaves with Gorgonzola-mushroom gravy over top and prosciutto potatoes alongside. Serve with green salad or wine steeped greens, recipe follows.
  • Heat a deep skillet over medium heat. Add extra-virgin olive oil, 2 turns of the pan, and garlic. Cook garlic a couple of minutes while you chop kale then remove the clove. Crank heat up a notch them add greens to wilt them down, 2 to 3 minutes of turning is involved here. Add wine, salt, and pepper and reduce heat to simmer. Steep the greens in wine 10 minutes, stir in zest then serve.

15 ounces Italian bread crumbs
10 eggs
1 chicken bouillon cube, dissolved in 1/2 cup hot water
1/2 cup finely grated Parmesan
Chopped parsley
Salt and pepper
2 tablespoons butter
4 cloves smashed garlic cloves
2 tablespoons flour
2 (14-ounce) cans chicken stock
2 tablespoons tomato paste
1/4 cup red wine vinegar
1 (14-ounce) can whole tomatoes
Salt and pepper
1 tablespoon dried oregano
3 large Spanish onions, peeled, cut in 1/2, and thinly sliced
1 quart milk
1 pound all-purpose flour
2 quarts canola oil

Steps:

  • To make Meatloaf: Preheat oven to 350 degrees.
  • In a large bowl, mix chopped meat, bread crumbs, eggs, bouillon broth, Parmesan, and chopped parsley. Mix well with a wooden spoon until all the ingredients are well incorporated. Form into a loaf shape and place on a sheet pan coated with nonstick vegetable spray.
  • Place in oven and cook for 45 minutes, or until meatloaf has an internal temperature of 160 degrees.
  • To make Tomato Gravy: In a large saucepan, heat butter over medium-high heat. Allow butter to foam and begin to brown. Add smashed garlic and allow garlic to brown slightly. Sprinkle in flour and stir constantly, forming a roux to cook for approximately 10 to 12 minutes until golden brown. Add chicken stock and tomato paste and cook for 3 to 5 minutes.
  • Add 1/4 cup red wine vinegar and all tomatoes. Simmer for 30 minutes and finish with salt, pepper and oregano. Serve atop the meatloaf.
  • To make Fried Onions: Heat a large, deep pot of oil to 350 degrees. Soak onions in milk for a minimum of 10 minutes. When oil is hot, drain onions and dredge in flour, making sure to remove excess flour.
  • Plunge onions a batch at a time (there should be 3 batches) into hot oil and fry until extremely golden brown and crispy. Remove from fryer and place on a paper towel to drain. Serve atop dressed meatloaf.

2 roma tomatoes - peeled, seeded and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Melt butter in a large heavy skillet over medium heat. Saute white onions, green onions, carrots, celery, green and red bell peppers, and garlic until soft, about 10 minutes. Remove from heat.
  • In a large bowl, combine salt, black pepper, cayenne pepper, nutmeg and cumin. Stir in eggs, ketchup and half-and-half. Blend in vegetable mixture from skillet. Add ground turkey, chicken sausage and bread crumbs. Mix well with hands, then shape into a loaf. Place into greased 9x5 inch loaf pan.
  • Bake in preheated oven for 50 to 70 minutes, or until cooked through and nicely browned. Let rest for 10 minutes, then serve with gravy.
  • To make the gravy: Melt 1 tablespoon butter in a heavy skillet over medium heat. Saute shallots with red and yellow peppers until tender, about 10 minutes. Season with thyme, bay leaf and black pepper. Stir in half-and-half, garlic, beef stock and chicken stock. Increase heat to high, and boil uncovered until liquid is reduced by 1/4, about 10 minutes. Stir in tomatoes and ketchup. Simmer uncovered for 20 minutes. Stir in remaining tablespoon butter, and season to taste with salt and pepper. Strain gravy, discarding bay leaf and thyme before serving.

1 1/2 lb ground beef
1 box stove top stuffing any flavor
1 c warm water
1 pkg onion soup mix
2 large eggs
8 potatoes
1/2 stick butter
enough milk to make potatoes smooth
1 jar(s) beef gravy or make your own

Steps:

  • 1. Preheat oven 350 degrees. Coat a bundt pan with cooking spray.
  • 2. Place stuffing mix, onion soup mix and water in bowl let sit until water is absorbed. Add eggs and beef. Pour into bundt pan and bake for 1 hour.
  • 3. Meanwhile make the potatoes by peeling them and boiling them and mashing them with butter and milk.
  • 4. When meatloaf is done turn out onto a serving plate. Fill whole with potatoes and ladle gravy over top

For the Meatballs:
3 tablespoons butter
1 onion, finely chopped
2 small ribs celery, finely chopped
3 cloves garlic, finely chopped
Salt and pepper
2 tablespoons thyme, finely chopped
1/4 cup dry sherry or white wine
3 slices 1-inch thick good quality white bread, crusts removed
About 1 cup whole milk
2 pounds ground sirloin
1/4 cup chopped flat leaf parsley
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
1 large egg plus 1 yolk, lightly beaten
For the Horseradish Mash:
2 1/2 to 3 pounds Russet potatoes, peeled and chunked
Salt
1 cup sour cream
1/4 to 1/2 cup half-n-half or heavy cream
Coarse black pepper
3 to 4 tablespoons horseradish, to your taste
1/4 to 1/3 cup chopped chives
For the Gravy:
4 tablespoons butter
3 tablespoons flour3 cups beef stock
3 tablespoons Worcestershire sauce
Coarse black pepper
1 egg yolk, lightly beaten

Steps:

  • For the meatballs, preheat oven to 400ºF.
  • Heat a sauté pan over medium to medium-high heat; melt butter. Add onions, celery and garlic; season with salt, pepper and thyme. Cook to tender, 7-8 minutes. Deglaze with sherry or wine, let cool
  • Soak bread in milk while veggies cool
  • Place meat in a mixing bowl, season with salt and pepper. Squeeze liquid out of bread and crumble the bread into the bowl. Add cooked vegetables, parsley, Worcestershire, mustard and eggs, combine to mix but do not overwork
  • Place a piece of parchment on a baking sheet and roll meat into 18 balls. Spray them with cooking spray and roast about 15-18 minutes until lightly crispy and golden, and cooked through
  • Cool and store for a make-ahead meal. Reheat covered, in a preheated 375ºF oven with a splash of water in the bottom of the dish. Once meatballs are hot, uncover and let them crisp up for 5 minutes.
  • For the Mash, fill a pot half way with cold water, peel and add potatoes as they are chopped or, if you peeled up the potatoes ahead place in a pot and fill with fresh water. (You can make the potatoes the night you serve or peel up the potatoes ahead of time and store them in fridge covered in water.) Add enough water to cover the potatoes then cover the pot and place over high heat to bring to a boil. Once water boils, remove the lid and salt the water and cook uncovered at low boil until tender to fork. Drain and return to hot pot. Mash the potatoes with sour cream and cream, a liberal dose of pepper, horseradish and chives, and salt to your taste. If you wish to make the potatoes ahead of service time and hold them for a couple of hours, place an inch of water in a large pot and bring to boil. Reduce heat to low and place a smaller pot filled with the potatoes into simmering water and cover that pot.
  • For the gravy, melt butter in saucepan over medium-high heat. Whisk in flour, bring to a bubble, whisk in stock and Worcestershire, season with black pepper and thicken. Temper egg yolk by lightly beating a ladle of gravy into it then whisk into sauce. Cool and store, and reheat over medium heat, adding a little more stock if necessary to loosen
  • In shallow bowls, spoon in enough potatoes to gently mound up then arrange a few meatballs in the center of the mound, ladle gravy down over top and garnish with parsley.

ONION AND BROWN GRAVY MEATLOAF

I hated the traditional "tomato ketchup" meatloaf. I wanted something a little different. I came upon a recipe for a brown gravy meatloaf, but I added another simple ingredient that gave it better flavor.

1 -2 lb ground beef (I use 80% lean)
2 (7/8 ounce) packages brown gravy mix (I use McCormick)
2 (7/8 ounce) packages onion gravy mix (I use McCormick)
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • Place Ground Beef in a bowl and add 1 package of your Brown Gravy Mix and 1 package of your Onion Gravy Mix and Black Pepper. Mix into ground beef. Shape into a loaf about 2 inches high (to insure even cooking). Place in a shallow pan (uncovered ) and cook @ 350 F for about 1 hour 15 minutes.
  • Prepare together the remaining packages of gravy Brown & Onion according to the directions.
  • After meatloaf is cooked all the way through you may drain the fat (slice meatloaf directly in the pan and pour a portion of the gravy mixture over the entire loaf. Place back in the oven for about 5 minutes to set the gravy. The remaining gravy can be used for mashed potatoes, or additional gravy for meatloaf servings.

I've only made this one time...2 days ago when I made it up. After writing it down I didn't remember using so much stuff or it taking so many steps! It's not really as involved as what it looks like written down and it really did turn out good. So far no meatloaf I've made has ever turned out exactly like the one before and I'm hoping to break the cycle by actually writing this one down...I'm sure ya'll can relate:) PS I used a mini food chopper in this but its not strictly necessary.

1 lb ground sirloin
3/4 lb ground pork
1/2 lb ground veal (optional)
3/4 large red onion, diced small
2 large garlic cloves
3 slices good bread (I used honeywheat)
4 tablespoons milk or 4 tablespoons half-and-half cream
1 large egg
1/2 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
1/2-1 teaspoon kosher salt
1/2-1 teaspoon fresh ground pepper
1/2 teaspoon Accent seasoning (optional)
1 1/2 teaspoons McCormick's salt-free all-purpose seasoning
1 (10 3/4 ounce) can cream of mushroom soup, divided
1 (14 1/2 ounce) can chicken broth
1/4 cup sour cream
5 tablespoons butter, divided 2t & 3t
2 -3 tablespoons flour
1/8 teaspoon sugar

Steps:

  • In a mini chopper process torn bread slices into fine crumbs, put in a bowl and cover fold in the milk or 1/2 and 1/2 and set aside.
  • Process garlic with a pinch of salt to a fine mince and set aside.
  • Add 2 tbsp butter to a saute pan and sweat onions and the garlic until soft and translucent. Season with salt & pepper to taste. Remove from heat and let cool.
  • In a large bowl add all meats, egg, wet breadcrumbs, cooled onion and garlic, Worcestershire sauce, salt and pepper (using smallest measurements to begin), thyme, McCormick blend, Accent and 1/2 can cream of mushroom soup. Gently work all ingredients together. If the mixture seems too wet add 2-3 tbsp oats or more processed bread.
  • Make a mini burger using 1-2 tbsp of the meat and saute over med/medhi heat. Cook through and taste to adjust seasoning.
  • Cover a large cookie sheet with foil and form a large evenly sized brick shape.
  • Place in a 350°F oven, center rack for.
  • 1 hour. Check for doneness and cook up to 10-20 minutes more until desired doneness.
  • Gravy: While meatloaf is baking.
  • In a saucepan melt 3 tbsp butter and add in 3 tbsp flour, cook until a light golden brown. Whisk in remaining 1/2 can of soup and sour cream until all blended. Add in 1 can of chicken broth and pinch of sugar. Season with salt and pepper to taste. Bring up to a boil to thicken, whisking, then reduce heat to simmer. If it doesn't seem thick enough for you, sprinkle with a bit of flour and whisk in quickly. When meatloaf is done, remove to a plate and cover with foil. Skim grease from the meatloaf drippings and whisk the degreased dripping to the gravy. Slice and serve with gravy.

1 1/2 lb ground beef or ground turkey
1 large egg
1/2 medium chopped onion
2 tsp salt
1 tsp pepper
3 slice of bread cubes or use 2/3 c. of oatmeal
1/2 c ketchup
1 c milk
MEATLOAF GRAVY
4 Tbsp flour
1 clove beef boulin cube
3/4 c warm water
1/8 tsp pepper
1/2 tsp salt
1 c meatloaf juice from pan

Steps:

  • 1. pre-heat oven to *350 mix all ingredients in a Large bowl, ( i use my hands)
  • 2. pat all the meat into a loaf and place into a 9x13 baking dish, and cover intire loaf with ketchup(makes the meat moist) cover with tinfoil and bake for 2 hours till done.
  • 3. I serve my meat loaf with mashed potatos and meatloaf gravy, and mac and cheese :) Enjoy
  • 4. on the stove top bring meatloaf juice to a boil, (in a small bowl, mix flour and 1/2 c water together with a wisk and add to boiling juice. keep stirring once sauce is thickining, add rest of water,(may have to add more water to your liking, for thickness) salt and pepper, remove from heat and let sit, and you are ready to go. Enjoy :)

6 cups COCOA KRISPIES® cereal (cocoa crispy rice cereal)
2 rolls red fruit leather
2 rolls green fruit leather
1/2 cup dried pineapple
2 tablespoons butter or 2 tablespoons margarine
1 1/2 tablespoons cocoa powder
10 ounces marshmallows
2 cups vanilla ice cream or 2 cups yogurt
1 cup butterscotch topping or 1 cup caramel topping

Steps:

  • Coat a bread pan 5 by 9 inches with cooking spray and set it aside.
  • In a food processor, briefly pulse 6 cups of cocoa-flavored crisp rice cereal.
  • Tear or cut 2 rolls each of red and green fruit leather into small pieces.
  • Chop 1/2 cup of dried pineapple into small chunks.
  • Melt 2 tablespoons of butter in a large saucepan over low heat.
  • Add 1 1/2 tablespoons of unsweetened cocoa powder and stir until mixed.
  • Add a 10-ounce package of regular-size marshmallows and stir until they're completely melted.
  • Add the cereal, fruit leather, and pineapple pieces to the marshmallow mixture.
  • Stir quickly with a rubber spatula coated with cooking spray until well mixed.
  • If the mixture gets too sticky to stir, place it in a large bowl, coat your hands with butter, and mix it with your hands.
  • Press the mixture evenly into the prepared pan.
  • Let the loaf cool (about 30 minutes), then remove it from the pan, slice with a serrated knife, and set a serving of 2 slices on each plate.
  • Next to that scoop about a 1/2 cup of ice cream in a mound to look like mashed potatoes.
  • Top it all with a drizzle of caramel sauce for gravy.
  • Serve immediately.

My husband loves this meatloaf recipe. To be honest I'm not sure if my mother made this up or how it came about. He gets tired of the regular meatloaf so from time to time this is his request. Actually it is more requested than the regular recipe with tomato ketchup or paste on top. Hope you like it!

1 1/2 lb ground chuck/round
1/4 c chopped onion
2-4 saltines crushed
1 large egg
1 1/2 Tbsp flour
2-3 medium potatoes
2-3 small carrots
1 can(s) cream of mushroom soup
salt and pepper

Steps:

  • 1. Combine ground beef, onion, crushed saltines, egg, flour, salt and pepper in a large bowl. Transfer to a baking dish that has been greased and shape in to a meatloaf. Bake on 350 degrees until you don't see any pink juices running out.
  • 2. Cut up potatoes and Carrots and place them around the meatloaf. I let them cook until they are just about done. Take a heaping tables spoon full of flour and spoon around the carrots and potatoes after they have cooked a while. Pour the can of mushroom soup over the top with a can of water and mix around. Salt and pepper and then place back into the oven and let bake covered until gravy is made and vegetables are done. This takes a while to make but it is well worth it. Serve over hot rice. This makes a meal in one.
  • 3. Just a note I always bake this with foil over it from beginning to end. I just keep checking it.

1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
2 tablespoons butter
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce

Steps:

  • Baby Carrots, recipe follows
  • Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl. Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan. Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste. Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat. Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar

1 clove minced garlic
1 packet dry golden onion soup mix
1 can cream of mushroom soup

Steps:

  • Mix beef, garlic and dry soup mix thoroughly.
  • Shape into a loaf and place on sheet of heavy duty aluminum foil that has been sprayed with Pam to prevent sticking.
  • Spread the mushroom soup over the top.
  • Fold foil loosely over the loaf from the sides and then the ends, sealing the openings tightly.
  • Place in a jelly roll pan in case the foil leaks.
  • Bake at 350° for 1 hour and 15 minutes.
  • Be careful opening it since the steam is very hot.

1/2 cup Italian-seasoned dry bread crumbs
1 egg, beaten
1 can (10 3/4 ounces) Campbell's® Condensed Golden Mushroom Soup
1/4 cup water

Steps:

  • 1. Thoroughly mix the beef, bread crumbs and egg in a large bowl. Place the beef mixture into a 13 x 9 x 2-inch baking pan and shape firmly into an 8 x 4-inch loaf. 2. Bake at 350°F. for 30 minutes. Spread 1/2 can soup over the meatloaf. Bake for 30 minutes or until the meatloaf is cooked through. 3. Heat 2 tablespoons pan drippings, remaining soup and water in a 1-quart saucepan over medium heat until the mixture is hot and bubbling. Serve the sauce with the meatloaf. You can prepare and shape the meatloaf earlier in the day, and cover and refrigerate until you're ready to bake. Bring the meatloaf to room temperature before baking.
