4 cups water
1-1/2 pounds ground beef
1 medium onion, chopped
1 can (28 ounces) tomato sauce
2 tablespoons brown sugar
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
Hot dogs, heated
Hot dog buns, split

Steps:

  • In a large saucepan, bring water to a boil. Carefully crumble beef into water. Add onion. Boil until meat is no longer pink; drain. Add the tomato sauce, brown sugar, chili powder, salt and pepper. Simmer, uncovered, for 15 minutes or until heated through. Serve over hot dogs in buns.

1 lb ground chuck (80/20)
1 lb ground sirloin
2-3 cups cold water
2 teaspoons chili powder
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons kosher salt
2 teaspoons coarse black pepper
2 teaspoons onion powder
2 teaspoons dried garlic flakes
2 teaspoons dried onion flakes
1/4 to 1/2 teaspoon red pepper flakes
1 teaspoon garlic salt
1 cup ketchup
1 Tablespoon Worcestershire sauce
1 cup brown sugar

Steps:

  • Place ground meats in a large dutch oven. Add enough water to just cover the meat. Bring to a boil, uncovered. Stir frequently to break meat into small pieces. Reduce heat to a simmer.
  • In a small bowl, combine the chili powder, paprika, cumin, salt, black pepper, onion powder, garlic flakes, onion flakes, red pepper (START with lesser amount), and garlic salt. Stir into the meat after it comes to a boil.
  • Cook meat for 1 1/2 hours on a low simmer, uncovered, stirring frequently.
  • Remove from the heat. Remove grease with a large spoon. Leave some on to maintain consistency. More will cook off when it is warmed up. We leave about 1/4 cup.
  • In a medium size bowl, combine the ketchup, Worcestershire sauce, and brown sugar. Stir into the meat, and continue to simmer over a low heat for 30 minutes, stirring frequently. Taste to see if any spices need adjusted, such as adding more salt and the rest of the red pepper. Allow these to simmer the last few minutes.
  • Stir well prior to serving. Makes enough for 24 regular size hot dogs.
  • Freezes well
  • ***Best if made a few hours or a day prior to serving to allow flavors to blend well.

1 pound ground beef chuck
1 onion, finely chopped
3 cloves garlic, minced
½ cup ketchup
¼ cup barbeque sauce
1 tablespoon chili powder
2 tablespoons prepared yellow mustard
½ teaspoon ground black pepper
2 teaspoons salt, or to taste
2 teaspoons ground cumin
1 tablespoon Worcestershire sauce
1 pinch crushed red pepper flakes
1 cup water

Steps:

  • Brown beef and onion in a large skillet over medium-high heat. Drain fat; cool mixture slightly. Place in food processor; pulse until mixture is finely crumbled, about 5 or 6 pulses. Return meat to skillet; stir in garlic. Cook for 3 minutes.
  • Pour the ketchup and barbeque sauce into the skillet. Stir in the chili powder, mustard, pepper, salt, cumin, Worcestershire sauce, red pepper flakes, and water. Cook, uncovered, until most of the liquid has evaporated, about 10 minutes. Season sauce with additional salt, if necessary.

6 tablespoons shortening, bacon fat or margarine
3 medium onions, chopped fine
2 cloves garlic, chopped fine
1 pound lean ground beef
2 tablespoons chili powder
1 bay leaf, finely crushed
1 teaspoon ground cumin
1 can (10 ounce size) beef consomme (not beef broth)
salt, to taste

Steps:

  • Heat the shortening in a large saucepan over medium-high heat. Add the onions and garlic and cook, stirring frequently, until the onions are soft. Add the ground beef to the pan and cook, stirring to break up the meat. Cook until the meat is no longer pink. Add the chili powder, crumbled bay leaf, and cumin and stir well. Stir in the consomme and bring the meat mixture to a simmer. Cook for 30 minutes or until thick, stirring occasionally. Adjust the seasoning with salt if needed then serve over hot dogs in buns.

This regional specialty has a unique sauce which is typically slightly chunkier and thicker than most hot dog sauces. You'll often find this served on top-split buns, but regular hot dog buns will work. There are many versions of this sauce, but this is the way we like ours.

1 pound ground beef
⅔ cup finely chopped onion, divided
1 (15 ounce) can tomato sauce
⅓ cup ketchup
2 tablespoons chili powder
1 tablespoon cider vinegar
1 tablespoon garlic powder
1 teaspoon hot sauce (such as Frank's® RedHot®)
salt and freshly ground black pepper to taste
1 tablespoon water, or as needed
10 hot dog buns
10 all beef hot dogs
5 teaspoons prepared yellow mustard

Steps:

  • Brown ground beef and 1/3 cup onion in a large skillet over medium heat, until the meat is no longer pink, 5 to 7 minutes. Drain, and return the skillet to the stove.
  • Stir tomato sauce and ketchup into the ground beef mixture. Add chili powder, vinegar, garlic powder, hot sauce, salt, and pepper; stir until well combined. Reduce heat to low and simmer uncovered until sauce has thickened, 8 to 10 minutes. If sauce gets too thick, add water to thin it out.
  • Meanwhile steam or simmer hot dogs in hot water until hot.
  • Assemble hot dogs: Place a hot dog in a bun and spoon 2 to 3 tablespoons sauce on top. Sprinkle with remaining onions and drizzle with yellow mustard.

I came up with this recipe from combining many other recipes. I was in search of a thick great tasting hot dog meat sauce with lots of flavor. This hot dog sauce may be a bit spicy so you may want to reduce the spicy spices. This is also a sweet hot dog sauce so you may want to reduce the brown sugar amount. My family loved this and we served our dogs with melted Cheez Whiz drizzled over the hot dog sauce.

3 minced garlic cloves
1 tablespoon minced dried onion
2 1/2 cups tomato sauce
1/4 teaspoon mustard

  • Then stir in the paprika, cumin, chili powder, salt, cayenne pepper, black pepper, garlic powder, and onion powder stirring until combined.
  • Continue cooking on medium heat until thick.

HOT DOG CHILI SAUCE

This recipe makes a wonderful chili sauce for hot dogs. Just place a grilled hot dog in a bun and top with chili, grated Cheddar cheese, and diced onions. Serve immediately. If halving this recipe, cover the pot for half of the two hour simmer.
