I found a delightful little box in my bottom turnaround. It was labeled recipes. I sifted through and separated all the hand written ones: This one appears to be my aunt's or grandmother's.

5 ounces chopped and drained spinach (if frozen)
1 lb hamburger
2 eggs
3/4 cup breadcrumbs
1/4 cup ketchup
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 lb sliced ham (optional)
1/4 lb sliced mozzarella cheese

Steps:

  • Mix hamburger, eggs, bread crumbs, ketchup, salt, pepper and oregano.
  • Spread flat on a sheet of aluminum foil.
  • Top with spinach; spread flat.
  • Top with layer of ham; roll up mixture (don't roll up with aluminum foil) and seal foil around roll.
  • Cook at 350°F for 45 minutes.
  • Open up pocket, place cheese on and return to oven until cheese is melted.

ROLLED ITALIAN MEATLOAF

Not much harder to make than plain meatloaf, this dressed-up version is nice enough for company.

1 1/4 lb extra-lean (at least 90%) ground beef
3/4 lb bulk Italian sausage
1 egg
1 can (8 oz) pizza sauce
1/4 cup Progresso™ Italian style bread crumbs
1/4 teaspoon pepper
2 cups shredded 6 cheese Italian cheese blend (8 oz)
2 cups loosely packed fresh spinach leaves

Steps:

  • Heat oven to 350°F. In large bowl, mix ground beef, sausage, egg, 1/2 cup of the pizza sauce, the bread crumbs and pepper.
  • On foil, pat mixture to12x8-inch rectangle. Sprinkle evenly with cheese; gently press into meat. Top with spinach. Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Place seam side down in ungreased 12x8-inch (2 quart) glass baking dish.
  • Bake 1 hour. Spread remaining pizza sauce over top. Bake 15 minutes longer or until thermometer inserted in meatloaf reads 160°F. Let stand 5 to 10 minutes before serving.

Adapted from a recipe from Rachael Ray's 30 Minute Meals. Original recipe calls for raisins and pine nuts - not my thing. I have prepared it with ground beef and pork only, no veal. Easy to prepare on a weeknight!!

1 1/2 lbs meatloaf mixture (ground beef, pork, veal)
1/2 cup Italian seasoned breadcrumbs
1 egg
1 garlic clove, minced
1/4 small white onion, grated
3 tablespoons parmigiano, grated
2 tablespoons flat leaf parsley, chopped
1 cup arugula leaves or 1 cup Baby Spinach
6 slices prosciutto
6 slices provolone cheese, deli sliced
salt and pepper
olive oil, for drizzling

Steps:

  • Pre-heat oven to 350°F.
  • Mix meat and remaining meatloaf ingredients.
  • Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.
  • Cover meat with a layer each of arugula (or spinach), prosciutto and cheese.
  • Use the wax paper to help roll up the meat into a large log working across the 6 or 8" side, resulting in a 12" log.
  • Seal ends, place seam side down on a cookie sheet (I line with foil). Drizzle lightly with extra virgin olive oil.
  • Roast meat roll for approximately 40 minutes.

1 teaspoon olive oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped celery
1 (14.5 ounce) can whole peeled tomatoes with juice
1 (8 ounce) can tomato sauce
1 ½ teaspoons Italian seasoning
1 teaspoon white sugar
1 ½ teaspoons dried oregano
¾ teaspoon garlic powder
1 teaspoon Worcestershire sauce
2 cups water
¼ cup chopped fresh parsley
1 ½ pounds ground beef chuck
½ cup Italian seasoned bread crumbs
1 teaspoon garlic powder
1 teaspoon Creole seasoning
1 pinch cayenne pepper
½ teaspoon salt
1 ½ cups shredded mozzarella cheese
¼ cup chopped fresh parsley
2 teaspoons Italian seasoning

Steps:

  • To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together the ground beef, bread crumbs, 1 teaspoon garlic powder, Creole seasoning, cayenne pepper, and salt until the mixture is thoroughly combined; spread into the bottom of the prepared baking dish.
  • Scatter the mozzarella cheese over the meat; spread 1/4 cup of the sauce over the cheese. Sprinkle the sauce with 1/4 cup chopped parsley and 2 teaspoons of Italian seasoning. Pick up one end of the meat layer (short side), and gently roll the meat around the filling. Reposition the meat roll in the center of the dish, and pour the remaining tomato sauce over the roll.
  • Bake in the preheated oven until the roll is no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is an awesome meatloaf recipe that I just made up working with ingredients on hand. It may sound odd, but once everything is baked together it turns out delicious!

1 lb ground beef
1/2 lb hot pork sausage
1/4 cup breadcrumbs
1/2 cup milk
1 egg
2 teaspoons red pepper flakes
2 teaspoons thyme
1 tablespoon basil
1 teaspoon paprika
1 teaspoon garlic powder
salt and pepper
1 small onion
1 cup fresh parsley
3/4 cup golden raisin
3/4 cup ketchup
1/4 cup red wine vinegar
1/4 cup honey

Steps:

  • Heat oven to 375.
  • Mix meats, bread crumbs, milk, egg and seasonings together. Lay out a large piece of waxed paper, lightly sprayed with cooking oil.
  • In a food processor mix onions, parsely and golden raisins. (raisins may stay whole, that's ok!) If you do not have a food processor just chop onion and parsley. Mix sauce ingredients together, set aside.
  • Spread meat onto waxed paper in an 11 by 9 inch rectangle.
  • Spread parsley onion mix evenly on top.
  • Start on one of the 9 inch sides and begin rolling the meat tightly. (Like a jelly roll) Lift into a lightly greased loaf pan.
  • Bake for 1 hour at 375. Add sauce to top of meatloaf 1/2 way through cooking time.

A woman I work with gave me this recipe, and it is really good. This is one of those recipes that if you like or dislike something, put it in, or leave it out. Very versatile.

2 eggs
1 cup fresh breadcrumb
1 (4 ounce) can taco sauce, your desired heat level
1 medium onion, chopped
1 garlic clove, crushed
1 tablespoon chili powder
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 (16 ounce) can refried beans, heated
1 (4 ounce) can diced green chilies, drained
1/4 lb shredded cheddar cheese
1 cup tortilla chips, crushed

Steps:

  • Place ground chuck in a bowl.
  • Place remaining ingredients in blender and mix.
  • Pour and stir into ground chuck.
  • Roll out meat mixture into a rectangle.
  • Spread refried beans on meat, arrange peppers and sprinkle with cheese.
  • Roll up, jelly roll fashion, place seam side down in a 9 x 5 loaf pan.
  • Sprinkle tortilla chips on top.
  • You can add more cheese on top if desired.
  • Bake 60 minutes and let set 15 minutes before slicing.
  • Serve over a bed of shredded lettuce and top with sour cream if desired.

½ cup tomato juice
¾ cup soft bread crumbs
2 tablespoons snipped fresh parsley
½ teaspoon dried oregano, crushed
¼ teaspoon sea salt
¼ teaspoon ground black pepper
1 clove garlic, minced
2 pounds lean ground beef
1 (6 ounce) package thinly sliced ham
1 (6 ounce) package sliced mozzarella cheese

Steps:

  • In a large bowl, combine eggs and tomato juice. Stir in the bread crumbs, parsley, oregano, salt, pepper, garlic and ground beef. Mix thoroughly. Preheat oven to 350 degrees F (175 degrees C).
  • On a piece of foil or waxed paper, pat and shape meat into a 10x8 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Tear up the cheese slices, reserving 1 slice whole, and sprinkle over the ham.
  • Starting from the short end, carefully roll up meat, using the foil or waxed paper to lift. Seal the edges and ends of the meat. Place roll, seam side down, in a 9x13 inch baking dish.

1 cup dry breadcrumbs

1 chopped onion
1 chopped bell pepper
1 cup chopped mushroom
3/4 teaspoon salt
1 teaspoon leaves oregano
1 (15 ounce) can tomato sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 (8 ounce) cans crescent rolls

Steps:

  • In large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 1/2 tomato sauce; set aside.
  • Cut 2 pieces of waxed paper 15 inches long. Unroll crescent roll dough and don't separate. Lay end to end on top of wax paper and place second piece of wax paper on top. Now take rolling pin and roll the dough out till it's half the thickness that it was originally .
  • Place meat mixture in center and spread out over dough. Sprinkle meat with cheese, bell pepper & mushrooms & top with remaining tomato sauce.
  • Roll up meat, jelly-roll fashion, starting at narrow end; use wax paper to help.
  • Place seam side down in non-stick 9-1/4-in. x 5-1/2 inches x 2-3/4-in. bread pan.
  • Bake at 375 degrees F for 30 minutes. Drain off any fat that accumulates & then return to oven for 30 minutes.

1 small onion, chopped
1/2 c cracker crumbs
1 tsp salt
1 dash(es) pepper
1 large egg,beaten
1 can(s) cream of mushroom soup
3/4 can(s) water
1 tsp soy sauce
1/4 c ketchup
1 c your favorite stuffing (prepared)

Steps:

  • 1. Mix together hamburger,onion,cracker crumbs,salt, pepper, beaten egg. Make into 4-6 patties. Add about a spoonful of stuffing. Roll up and tuck in sides.
  • 2. Cover with 1 can of mushroom soup diluted with 3/4 can of water mixed with 1 tsp soy sauce & ketchup. Bake in shallow pan 40 minutes at 350.
  • 3. Serve with mashed potatoes, noodles or rice with a nice side salad. So Yummy!
