MINI MEATLOAF MUFFINS
Easy Mini Meatloaf Muffins made with ground beef or ground turkey and topped with homemade bbq sauce. Easier and healthier than traditional meatloaf.

Steps:
- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- Heat oven to 350° F (177°C).
- Heat oil in a medium-sized skillet over medium heat. Add the chopped onions and cook for 2 minutes.
- Add in the chopped garlic, dried thyme, salt, and pepper. Cook, stirring occasionally for an additional minute. Remove skillet from the heat and set aside.
- Place the ground beef in a medium-sized bowl. Pour the seasoned vegetables over the meat. Add in the Worcestershire sauce, the egg and the breadcrumbs. Using a large spoon, mix the meat and all of the ingredients together until fully combined. Shape into an oval and transfer to a lightly greased small baking dish.
- Bake in the preheated oven for 30 minutes.
- Remove the meatloaf from the oven and whisk together the ketchup and molasses in a small bowl. Spoon over the top of the meatloaf and bake for an additional 15 minutes.
- After removing the meatloaf from the oven, cover with aluminum foil or a plate and let the meatloaf rest for at least 10 minutes before slicing.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
- In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.

- In a large bowl, combine ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture; mix well. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well.
- Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a meat thermometer reads 160°. Serve desired number of meat loaves. Cool remaining loaves; freeze. Transfer to freezer bags; freeze for up to 3 months.

MINI MEATLOAVES WITH BBQ GLAZE
I love meatloaf but don't always have time to wait the hour and change a regular loaf takes to cook. This recipe makes great individual-size meatloaves for the family in about half the time. I like to bake a batch of these, then wrap and freeze them for a perfect make-ahead entrée.

- Preheat the oven to 400 degrees F. Spray a 6-cavity mini loaf pan with nonstick spray.
- Melt the butter in a large skillet over medium-high heat. Add the onions, celery, carrot and garlic and cook, stirring occasionally, until the vegetables are lightly browned, 4 to 5 minutes. Add the thyme and cook for an additional minute. Remove from the heat and allow to cool.
- Beat the eggs until combined in a large bowl. Add the ground chuck, sausage, cream, ketchup, breadcrumbs, Worcestershire, salt and pepper. Pour in the cooked vegetables. Use your hands to massage the meatloaf mix together until well combined (glove up for this if you like!).
- For the glaze: Stir the ketchup, barbecue sauce and mustard together in a small bowl until well mixed. Set aside.
- Divide the meat mixture evenly between the loaf pans, pushing down and flattening the tops of the meatloaves. Top each loaf with about 1/4 cup of the glaze. Bake until cooked through (an instant-read thermometer inserted into the loaves should register 160 degrees F), 25 to 35 minutes.
- Remove the meatloaves from the oven and allow to rest for 5 minutes. Remove the loaves from the pans and serve warm.
MINI MEAT LOAF SHEET-PAN MEAL

- Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. - Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
- Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.

- Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
