They're easy to make, easy to customize, and easy to convince your family you actually went to McDonalds to get them!

1/2 pound pork sausage mild
1 tsp. Olive Oil
1/2 cup yellow onion diced
1/4 cup fresh tomatoes diced
1 tbsp. green chilies
4 six-inch tortillas
4 eggs
8 American Cheese slices
1/2 cup salsa

Steps:

  • Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces. Remove from heat drain excess grease.
  • Add a bit of olive oil to a pan and add onion, green chilies, and tomatoes, cook until veggies are soft (about 5 minutes) and add the sausages again.
  • Beat the eggs and add them to the pan with the sausage mixture. Add salt and pepper and cook, stirring frequently until they are well cooked.
  • To assemble, place the wrap in a heated skillet and top with the salsa and cheese, let it heat until the cheese melts. Add the mixture and roll the tortillas (you can use paper wraps to make it easier to grab).

Years (and years) ago, while in high school, I worked at McDonald's when they first came out with these wonderful creations. After all this time, I still love to make and eat them. I think they have changed it over the years for the dollar menu but this is the ORIGINAL recipe. Sometimes when I don't have fresh tomatoes I substitute a little salsa or some drained Rotel tomatoes taste the best. If you go with the Rotel option, you can omit the diced green chilies that are called for in the recipe.

1/2 lb bulk sausage, cooked and crumbled
10 eggs, scrambled
1 medium tomatoes, diced
1 small onion, diced
3 tablespoons canned diced green chiles
salt and pepper
10 slices American cheese, halved
10 flour tortillas, warmed
salsa
sour cream

Steps:

  • Mix together cooked and crumbled sausage, eggs, tomatoes, onions, chillies, salt and pepper.
  • In a large, buttered non-stick skillet, over medium-high heat, gently stir until eggs have reached desired doneness.
  • Fill a tortilla with 1/10 egg mixture and top with 2 slices of cheese laid end to end.
  • Garnish with salsa and sour cream.
  • Roll up and enjoy.

1 lb ground pork sausage (mild)
1/2 cup yellow onion (diced)
1/4 cup fresh tomato (diced)
1 tablespoon green chili pepper (diced those in a can)
8 (8 inch) flour tortillas or 8 (9 inch) flour tortillas
9 eggs or 2 cups eggs
10 -12 slices American cheese
favorite taco sauce or picante sauce

Steps:

  • Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces. Remove from heat drain and rinse with hot water, drain water from sausage. Place drained sausage in fry pan add onion, green chili's and tomatoes, heat on medium temperature just until sausage and vegetables are heated through, stir frequently.
  • Measure 2 cups of eggs and beat. Add the eggs to the pan with the sausage mixture. When cooked remove from heat. Cover and store the sausage mixture that is not used and refrigerate. It will keep for several days for your next breakfast. In the middle of one flour tortilla shell place one slice of cheese in the middle. Spoon one - two tablespoons of the egg mixture and roll up the shell. Place on platter and cover with plastic and pop in microwave just long enough to heat and melt cheese. Serve with your favorite taco or Picante sauce. You will find these are milder and relay great for breakfast. I like to place sour cream and little avocado in mine.
