I wonder if posting this recipe is completely pointless since everyone in the world who's ever bought a box of matzo meal already knows how to make this but just in case someone in some far corner of the universe doesn't here's a delicious way to make fried fish which is made this way all year round but especially on Passover.

4 flounder fillets, skinned
3 eggs
1 cup white matzo meal (not whole-wheat)
parsley
salt
pepper
garlic powder
paprika
lemon wedge

Steps:

  • Dip fillets in egg and then both sides in matzoh meal which has been mixed with spices and parsley.
  • Fry in pan with hot oil over a medium flame.
  • When good and crispy on both sides remove and serve with lemon.
  • Enjoy!

1 1/2 pieces matzos, broken up (6 inch)
2 tablespoons dill
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons olive oil
4 (4 ounce) salmon fillets, skinless and 1 inch thick
lemon wedge
fresh dill sprig
steamed green beans

Steps:

  • Preheat oven to 450-F. In a blender or food processor, combine matzo, dill, salt and pepper. Process until coarse. Transfer to a sheet of waxed paper or shallow container.
  • Brush baking pan with oil. Brush filets with oil. Roll fish in crumb mixture, place in prepared pan. Drizzle with remining oil.
  • Bake, uncovered, 10-12 minutes or until fish flakes easiy when tested with a fork. Serve with lemon wedges, fresh dill sprigs and steamed green beans.

2 pounds white fish fillets (such as sea bass, orange roughy or red snapper), each about 1 inch thick
Coarse salt
3 large eggs, beaten to blend
1 cup unsalted matzo meal
4 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon coarse salt
1/4 cup (or more) vegetable oil
Lemon wedges
Fresh cilantro sprigs

Steps:

  • Sprinkle fish fillets generously on all sides with coarse salt; let stand 30 minutes. Rinse fish to remove salt and pat dry with paper towels.
  • Place eggs and matzo meal in separate large shallow bowls. Mix chili powder, cumin, black pepper and 1/2 teaspoon coarse salt in small bowl to blend. Sprinkle fish generously with chili powder mixture. Dip fish into eggs, then into matzo meal, coating completely. Transfer fish to waxed paper.
  • Heat 1/4 cup oil in heavy large skillet over medium-high heat. Working in batches, fry fish in single layer until just opaque in center and golden brown, adding more oil if necessary, about 5 minutes per side. Transfer fish to paper towels and drain.
  • Arrange fish on platter. Garnish with lemon wedges and cilantro sprigs.

1 large egg beaten
1 c matzo meal
1 tsp each salt, garlic powder, and paprika
1/2 c fresh cracked black pepper
oil for frying

Steps:

  • 1. Heat the oil to 350 degrees. Place the egg in a dish Place the Matzo meal, and spices in another dish and mix well
  • 2. Dip the bass fillets into the egg mixture and then dredge in the matzo meal.
  • 3. Deep fry 5 to 7 minutes
