20-MINUTE MASHED SWEET POTATOES
In this easy mashed sweet potatoes recipe, the naturally sweet flavor of the potatoes is enhanced by just a little sweet butter, maple syrup, and cinnamon.

Steps:
- Pierce the sweet potato with a fork on all sides. Microwave on high until very tender and the flesh is easily pierced with a fork, about 4 minutes per side. Let stand for 5 minutes, until cool enough to handle.
- Meanwhile, in a medium microwave-safe bowl, add the butter, milk, maple syrup, kosher salt, and ground cinnamon. Microwave to heat through, 50-60 seconds. Don't allow the mixture to boil.
- On a cutting board, use your fingers to peel the cooked sweet potato. Roughly mash it with a fork right on the cutting board, then transfer the mash to the bowl with the warm butter mixture.
- Keep mixing and mashing with a fork (or with a hand masher) until the mash is uniform and smooth, about 1 more minute. It won't be perfectly smooth unless you use a hand mixer or an immersion blender. But I like it a bit rustic. When done mixing, I do like to use a rubber spatula to smooth it out, as shown in the video below.

EASY CREAMY MASHED SWEET POTATOES
These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. You can simmer, bake, microwave, or use a pressure cooker to cook the sweet potatoes. Our preferred method is to simmer the potatoes since this takes a similar amount of time when using a pressure cooker and when microwaving them and less time than when using an oven. - Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
- Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
- Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
- For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

- Wash the potato and prick several times with a fork. Place in a microwave-safe dish with 1/4 cup water; cover. Microwave for 2 minutes; turn over with tongs, and continue to microwave for 2 minutes more. Remove potato from the dish and place in a bowl of cold water until cool enough to handle, about 5 minutes. Peel with a paring knife.
- Return potato to the baking dish with 1/4 cup water and microwave until soft, 4 to 5 minutes total, turning halfway through.
- Mash the hot potato with a hand masher or fork. Add orange juice and 1 teaspoon orange zest to the mashed potato; add yogurt and stir well.

MASHED SWEET POTATOES

- Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
- In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.
MICROWAVE MASHED POTATOES

- Rinse peeled and quartered potatoes.
- Arrange potatoes in medium glass bowl.
- Cover with plastic wrap.
- Cook at HIGH for 9 to 10-1/2 minutes; stir once. You can set your kitchen timer for a reminder to stir. Potatoes should be tender.
- Let stand, covered, for 5 minutes.
- During this 5 minute standing time, combine milk, butter, salt and pepper in a large glass bowl or 8-cup glass pyrex measuring cup.
- Cook milk mixture at MEDIUM for 2 to 3 minutes or until hot.
