Yield Makes one 14-by-10-inch tart

Number Of Ingredients 8

1/3 cup sugar, plus more for rolling
1 sheet puff pastry, preferably all-butter, thawed if frozen
1 large egg, lightly beaten
1 cup mascarpone cheese
1 teaspoon finely grated lemon zest
1 vanilla bean, seeds scraped
1 cup heavy cream
3 to 4 pints fresh raspberries

Steps:

  • Preheat oven to 400 degrees. On a sugared work surface, roll out pastry to a 16 1/2-by-12 1/2-inch rectangle, about 1/8 inch thick. Using a pizza wheel or a sharp knife, cut 1 1/4-inch strips from each side of dough. Brush a 1-inch border of egg wash around perimeter of dough and top with strips, overlapping corners and trimming ends to fit. Lightly press strips to adhere. Transfer to a parchment-lined unrimmed baking sheet and freeze until firm, about 15 minutes.
  • Using a paring knife, score strips with a pattern of diagonal lines. Using a docking tool or the tines of a fork, prick holes all over center of dough, creating steam vents. Score bottom crust along interior edges of strips. Freeze until firm, about 15 minutes.
  • Invert a wire rack over tart shell and transfer to oven. Bake until puffy and beginning to brown, about 20 minutes. Remove rack and continue baking until deeply golden brown, 15 to 20 minutes more. Transfer to a wire rack and let cool completely.
  • In the bowl of a mixer fitted with the whisk attachment, beat together mascarpone, vanilla seeds, lemon zest, and 1/3 cup sugar on medium speed until combined and slightly thickened, about 2 minutes. Add cream and continue beating until stiff peaks form. Spread filling evenly into tart shell. Top with raspberries and refrigerate at least 30 minutes before serving.

MASCARPONE SEMIFREDDO WITH RASPBERRY SAUCE

RASPBERRY SAUCE
2 pkg frozen raspberries in syrup, 10 oz. each, thawed
1 Tbsp cornstarch
1/4 c water
2 tsp fresh lemon juice
OPT 2 tablespoons chambord raspberry liqueur
SEMIFREDDO
6 large eggs, separated
2/3 c sugar
1 lb mascarpone cheese
1 Tbsp pure vanilla extract
1 tsp grated lemon zest
4 oz grated high quality 60 - 70% cacao chocolate
fresh raspberries for garnish

Steps:

  • 1. In a food processor or blender, puree the thawed raspberries.
  • 2. Working over a saucepan, force the puree through a fine sieve to remove the seeds. Bring the sauce to a simmer.
  • 3. Stir the cornstarch with the water in a small cup and then stir it into the raspberries. Stir in the lemon juice. Simmer the sauce unti it is thickened and smooth.
  • 4. Remove from heat and stir in the Chambord if desired. Cool completely, then cover and refrigerate. This raspberry sauce can be made 2 days in advance if needed.
  • 5. Line a bundt pan with plastic wrap, leaving a few inches of overhang. Put it in the freezer while preparing the semifreddo.
  • 6. In a large mixing bowl, beat together the egg yolks and sugar until the mixture is thick and pale, then beat in the mascarpone, the vanilla, and the lemon zest.
  • 7. Beat the egg whites until they form stiff peaks. Then fold them gently, but thoroughly into the mascarpone/egg mixture.
  • 8. Sprinkle about a tablespoon of the grated chocolate evenly onto the bottom of the chilled bundt pan.
  • 9. Spoon half the mascarpone mixture into the pan, sprinkle evenly with the remaining chocolate. Then spoon in the remaining mascarpone mixture and smooth it carefully
  • 10. Fold the plastic wrap over the mixture and place the pan in the freezer for at least 8 hours or overnight. Unmold the semifreddo onto a serving platter. Garnish with fresh raspberries and drizzling some sauce over the semifreddo.
  • 11. Slice to serve and drizzle with more raspberry sauce.

RASPBERRY MOUSSE



Raspberry Mousse image

Thick, creamy raspberry mousse makes a beautiful dessert piped in glasses or uses the mousse for a cake filling. Since the mousse sets up firmly, you can put a thick layer between cakes. When you make the raspberry sauce, you will end up with 1-1/4 cups to 1-1/3 cups of sauce. You will only use 1 cup of sauce to make the mousse and you can use the remaining sauce to drizzle over the top of the mousse when you serve it.

24 ounces fresh or frozen raspberries
1/4 cup sugar
1 tablespoon lemon juice
2-1/2 teaspoons unflavored powdered gelatin
1/4 cup water
3/4 cup (6 ounces) mascarpone cream, chilled
1/2 cup sugar
1 cup heavy cream, chilled

Steps:

  • Place a mixing bowl and whisk in the fridge to chill while you make the raspberry sauce. You will use the chilled bowl when you whip the mascarpone and cream.
  • Place the raspberries, sugar and lemon juice in a saucepan. Cook over medium heat, breaking it up with a fork or potato masher. Cook, stirring frequently for 10 to 12 minutes.
  • Place a strainer over a bowl and pour the raspberry mixture into the strainer. Push the mixture through the strainer to get as much juice and pulp into the bowl as possible. You should have 1-1/4 cups to 1-1/3 cups of sauce in the bowl. Toss out the seeds.
  • Measure out 1 cup of the raspberry sauce and place it in a bowl. Save the remaining puree to drizzle over the top of your mousse when you serve it.
  • Place 1/4 cup of water in a small microwavable bowl. Sprinkle the gelatin over the top of the water and let it sit for 3 to 5 minutes.
  • Place the bowl in the microwave for 6 to 12 seconds stopping to stir every 3 seconds until it gets liquified. Do not cook the gelatin mixture too much as high heat will destroy the thickening power of the gelatin.
  • Stir the gelatin mixture into the bowl with raspberry puree.
  • Add the mascarpone cream and the sugar to a chilled bowl and beat on low speed just until the sugar gets incorporated, about 30 seconds.
  • Pour in half of the heavy cream, beat for 30 seconds to 1 minute until the mixture looks liquid. Stop the mixer and scrape down the sides of the bowl.
  • Pour in the rest of the cream and beat on medium-low speed until the mixture reaches soft peaks.
  • Pour in the raspberry/gelatin mixture and beat on medium-low speed until stiff peaks form.
  • Divide among six to eight dessert glasses or use as a cake filling. Use any remaining raspberry puree to drizzle on top of the mousse.
  • Keep chilled until time to serve. The mousse will thicken even more after 4 to 6 hours in the fridge.
